Salads: Tasty Avocado Chicken Salad Recipe

Hey everyone, it's Natasha of natashaskitchen.com. Today we're making an,avocado chicken salad that has so much flavor. It's creamy but light with the,avocado and so satisfying. We start with the star ingredient, chicken. I'm using,rotisserie chicken which makes this salad so easy. You can cook the chicken,breast yourself or use the well-drained canned chicken and a pinch. So dice or,shred 2 large chicken breasts and place them into a large mixing bowl. Next, we,add two large ripe avocados. Peel and pit each avocado and slice them into,bite-size pieces then add them to the mixing bowl. Add 1 cup of cooked corn and,I do think freshly cooked corn is the best. It adds a really nice sweet pop of,flavor to the salad. Add 1/4 cup of chopped green onion or chives which,makes this salad so fresh and fragrant. I cooked 6 ounces of bacon until browned,and crispy coarsely chop that up and add it to the salad bowl.,Finally, add two Tbsp of fresh dill and now let's make that easy lemon,dressing. squeeze three Tbsp of juice from one large lemon,,combine that with three Tbsp of extra virgin olive oil one tsp of,salt and 1/8 of a tsp of black pepper. Stir that together until combined,and that's all there is to it. This is one of my favorite dressings. It smells,so good! Drizzle it over your salad and toss everything to combine. I am excited,because this is lunch and I'm hungry! What time is it? Almost 5:00, its a late,lunch, but I can't wait. All that's left to do is the taste test so,that's exactly what we're going to do.,And I also like to serve the salad with eggs hard-boiled eggs because it makes,it just so satisfying. These are optional but nice. There we go, all right,,let's get a sample, a generous sample.,Mm-hmm, that's delicious. The lemon really shines in that dressing,and it makes it so fresh and bright. I love those little salty bites of bacon in,there and then so much avocado with healthy alternative to the creamy,chicken salad you see normally but definitely not lacking in flavor. You can,serve it as a salad, you can make sandwiches, put it in pitas, serve it in,lettuce wraps and it also is really good the next day so it's perfect for work or,school lunch. - What do you make when it is too hot to cook?,- Hey guys, I'm Nicki Sizemore.,Welcome to my kitchen, welcome back to my channel.,Today we are making an avocado chicken salad.,So this is a no-mayo chicken salad,,and it is the perfect dinner on a hot and steamy day.,You don't even have to turn on the stove,and it comes together in minutes.,So while I love a classic chicken salad,,this is actually my go-to recipe.,Instead of using mayonnaise, we're going to use mashed avocado.,We're going to flavor it up with some southwestern ingredients,like jalapeno and cilantro and lime.,I'm going to show you how I like to serve,this chicken salad.,If you make it, let me know in the comments below,what you think and don't to forget to like and subscribe,,that way you won't miss out on any of my wholesome,and family friendly and naturally gluten-free recipes.,All right, first let's talk avocados.,All avocados ripen off the tree.,And I like to buy them when they're green and hard,like this for a few reasons.,First of all, they don't bruise up on the way home,from the grocery store.,And second of all, I can just let them ripen,at room temperature and then eat them,when they're perfect.,There's nothing worse than cutting into a brown avocado.,So you'll need one large avocado.,Open it up, yay.,All right we're going to scrape this into a bowl.,And we're going to squeeze in some lime juice.,I could not live without my citrus squeezer.,I use it every day.,This is when I usually call my six-year-old in.,This is her job.,We want it pretty smooth because like I said,,it's taking the place of the Mayo.,I have some granulated garlic and a tablespoon of olive oil.,Now for the chicken.,This is three cups of rotisserie chicken, so easy.,So I got a chopped red bell pepper,,half of a jalapeno pepper that I've diced.,And then we'll add some fresh cilantro and some scallions.,I love scallions because they're so mild,and they're a little sweeter and last but not least,,we have to season it with some salt and pepper.,Right, what is this like five minutes for dinner?,That's pretty good.,I'm telling ya, you're not going to want,to go back to the mayonnaise.,That my friends is done.,I love the crunch from the red bell pepper,and that hint of heat from the jalapeno, right?,Let me clean this up and I'll show you,my favorite way to serve it.,You can eat this chicken salad straight out of the bowl,like I'm known to do.,You can put it over salad greens.,Today I'm going to make a sandwich that's one of,my favorite sandwiches, and we're going to add,a little bit more avocado.,But I'm going to show you how to get those,pretty avocado slices.,Cut in half right along the pit, open that up.,And then if you've cut it into a quarter,instead of scooping out the slices,peel off the avocado's skin.,And now you can get nice, thin, pretty avocado slices.,(upbeat music),My very favorite sandwich.,Look at that.,Give it a try.,So good, you got that crunch from the bell pepper,brightness from the lime, a hint of heat from the jalapeno,and then that creaminess from the avocado.,You guys, this is my favorite sandwich.,Let me know if you give this avocado chicken salad a try,,let me know in the comments below.,Don't forget to like and subscribe.,Thank you so much for tuning in and I'll see you next time.,(light music)

Perfect CHICKEN MANGO and AVOCADO SALAD + Easy Dressing

(yelps),(lettuce thudding),(laughs),- You try catching something flying,at you fast from the side.,Hey everyone, it's Natasha from natashaskitchen.com,,and I am gonna teach you how to make a salad,,but not just any salad.,This is a salad that we created,after going to one of our favorite places,,The Cheesecake Factory.,It is a chicken mango avocado salad,,and wait until you taste the dressing.,We're gonna start on the chicken.,Let's do this.,You'll need one pound or two medium chicken breasts.,Cut those in half lengthwise.,Now season both sides with garlic salt and black pepper.,(optimistic music),Now place a large skillet over medium high heat,with two teaspoons of olive oil.,Once the oil is hot, add the chicken,,and cook about three minutes per side,or just until it's cooked through.,The chicken is done when it reaches 165 degrees Fahrenheit,on an instant-read thermometer,,and I'll link to our favorite thermometer in the notes.,Transfer it to a cutting board and let it cool slightly,while you make the rest of your salad.,For the base of this salad,,we're using one large head of romaine lettuce.,Chop it up into bite-sized pieces and discard the core.,Then rinse and spin dry.,You'll end up with about six cups of chopped lettuce.,And if you love salads,,a salad spinner is a must-have tool in your kitchen.,It saves so much time.,I'll share our favorite salad spinner in the notes.,(upbeat music),Transfer the lettuce to a large salad bowl,,and now we're just going to layer on,the rest of the ingredients.,The chicken is just about at room temperature,,so slice that into bite-sized strips,,and place it over the romaine lettuce.,Now my favorite ingredient in this salad,is a fresh mango and I use this mango slicer,to make it easy to cut it.,If you love mangoes, you should get one of these.,Also, this handy fruit scoop makes it easy,to remove the mango from the skin.,Quickly dice up the mango and place it into the salad bowl.,Now my next favorite ingredient, an avocado.,And watch how we slice it.,This is the safe way to remove the avocado pit.,A ripe avocado is easy to peel and dice,,and you don't need any special tools.,(upbeat music),Transfer those to the salad bowl,,and we'll quickly finish up the rest,of the salad ingredients.,Thinly slice half of a small purple onion,,and this adds great flavor and color to the salad.,Next, slice and add half of an English cucumber,or a large garden cucumber.,(optimistic music),We'll also add half a cup of halved cherry tomatoes.,My favorite herb for this salad is cilantro,because it adds amazing, fresh flavor.,You'll need about a quarter cup of chopped, fresh cilantro.,Now just layer all of the ingredients over the salad.,And an optional but nice touch at the end,is adding some toasted, sliced almonds.,The salad is done and we're gonna make,a quick homemade dressing to go with it.,In a small mason jar combine half a cup,of extra virgin olive oil,,three tablespoons of apple cider vinegar,,two teaspoons of Dijon mustard, two teaspoons of honey,,one minced clove of garlic or about a teaspoon.,Season with a teaspoon of sea salt,and a quarter teaspoon of black pepper.,Cover that up and shake, shake, shake,until it's well-combined.,And if you're not serving it right away,,give it a good shake just before serving.,Whoo!,(laughs),That smells so good and fresh.,All right, all that's left,with this gorgeous, gorgeous salad is to add the dressing,and then just toss it together, so here we go.,And add this to taste.,I don't usually use the full amount which is good,because you want leftovers of this dressing, it's so good.,All right now just toss gently to combine,,and make sure everything is coated in that amazing dressing.,(upbeat music),All right, that looks so good.,(laughing),And onto the best part of the show.,I mean, it is for me.,I don't know about for you,because for you it's probably pure torture.,(laughing manically),Sorry.,The taste test, if you haven't guessed already,,that's what we're doing next, so here we go.,All right, in generous amounts,'cause we do everything in generous portions.,(laughs),A little more, little more.,Okay, that looks about right.,Okay, I'm gonna go in for the taste test, here we go.,Is it just me or is this salad glowing?,(laughs),It's the mango and the dressing.,Seriously, it's really good.,A little bit of everything on my fork,because this salad is just a flavor sensation.,(upbeat music),(humming happily),That chicken is so juicy, perfectly seasoned.,And I love the sweet notes hey guys it's Danny now y'all have been,asking me for some more lunch ideas so,today I have two brand new clean and,delicious chicken salad recipes for you,the first one is the Sonoma chicken,salad it is packed with grapes and,pecans and it's actually whole foods,most popular chicken salad recipe and I,am taking the recipe straight from their,cookbook verbatim and the second recipe,is the avocado chicken salad and this,one is completely free of mayo and all,dairy so it gets its nice rich creamy,texture right from the avocados so give,me a big thumbs up if you're as excited,as I am to have some new lunch recipes,in the mix now you can certainly take a,shortcut and buy some pre-made,rotisserie chicken at the grocery store,chop that up and use it as the base of,these salads but personally I highly,recommend roasting your own bone-in,skin-on chicken breasts for the best,flavor and if you want to learn how to,do that you can check out this video,right over here and I will also leave a,link in the description box so let's get,started with the sonoma salad I've got a,nice big bowl and I'm going to start,with one heaping cup of chopped baked,chicken breast,then I've got 1/3 of a cup of chopped up,Key cam 3/4 of a cup of red seedless,grapes the licen half and one stalk of,celery thinly sliced then to bring this,all together I'm using a half a cup of,plain Greek yogurt you could do a full,fat version or a low-fat version I'm,using the yogurt in place of Mayo so do,know that you could do Mayo instead of,the yogurt or you could go 50/50 half,yogurt has name then two teaspoons of,apple cider vinegar two teaspoons of,honey to round out the flavors one,teaspoon of poppy seeds that's going to,add a really unexpected fun texture then,I'll season it with a little bit of salt,and some black pepper give it a nice big,stir bring all of these flavors together,make sure everything has a,slight coating of the yogurt and this,salad is ready to go now you can,certainly use this salad to build a,sandwich you could put it on top of your,favorite green salad but my personal,favorite way to enjoy it is to make,butter lettuce cups so I just take a,couple leaves of butter lettuce scoop,the salad right into the middle and then,the lettuce serves as the bread this,makes a really light and refreshing,lunch that's ready to go when you are,now for the avocado chicken salad again,I've got a nice big bowl and I'm,starting with one heaping cup of chopped,up fresh baked chicken breasts and then,to that I'm going to add an Alva cuddle,so I'm just going to slice there my,avocado cut it into squares and scoop it,out you want to do that with both halves,and then gently mash the avocado with,the chicken this is going to create the,base for the salad mix add a quarter cup,of finely chopped celery a quarter cup,of chopped up scallions that gives it a,little onion flavor but it's more mild,than onions now they've got half a diced,jalapeno now the jalapeno is completely,optional but if you like a little heat,in your salad I highly recommend it,remember all of the heat in your,jalapeno is in the ribs and the seeds so,if you want just a little kick just,remove the ribs and seeds and then chop,up the flesh two tablespoons of chopped,up cilantro if you don't like cilantro,you can also do parsley 1 clove of,garlic that I'm going to crush the juice,from one small lime a little bit of salt,and a little bit of black pepper again,give this a big old stir make sure all,of those flavors come together and met,the avocado is coating all the chicken,and the veggies and this salad is ready,to go so my salt chicken salads again,this makes a delicious sandwich you,could put it on top of your favorite,green salad but my personal favorite way,to enjoy it is with some corn chips on,the side because the whole avocado and,the cilantro and the lime along with the,corn chip it is like a match made in,heaven so now I want to hear from you,what,these two recipes do you think you will,try first come on down to the comments,below and let me know and remember when,you try them snap a picture and tag me,on instagram and facebook so i can see,all the klingon and deliciousness you,are whipping up in your very own kitchen,and if you haven't already subscribed,like and share this video with anyone,else you know who's trying to keep,things healthy and yummy thanks so much,for watching i'm danny peas I will see,you back here next time with some more,clean and deliciousness Sheriff Julia,check this piece,you

hi guys it's serena frugal chef i hope,you're well,let's make this avocado chicken salad,open face sandwich today,yummy yummy the chicken itself,is very healthy low carb,so if you want to keep it low carb don't,do this,don't eat it on bread i give you other,options inside the video,but i think you're gonna love it before,we do anything if you would sub please,turn on the notification button,let's go do this we are going to chop up,two scallions i trimmed off the tops and,the,ends but we're gonna chop the whole,thing,for our chicken and half of a red bell,pepper,i have four chicken thighs in here which,were boneless and skinless i just boiled,them and shredded them,not very small i'm gonna add the peppers,and the scallions to this,so now we're gonna chop some cilantro,leaves,and add that to the chicken,i'm going to add the juice of half a,lime,salt pepper,and we're gonna spoon a whole avocado in,here,i'm just gonna kind of cut it up okay,with the spoon,we're gonna mash it in there,i'm going to add some mayonnaise to this,let's say a tablespoon,and we're going to mix it all in first,we'll kind of mash that avocado with the,mayo,and then we will mix we're gonna eat,this in an open face sandwich,but you could fill an avocado with this,and have that you know like a stuffed,avocado,delicious you can uh fill an arepa,i'll put the link to how to make arepas,with this and that's called the reina,fantastic or uh,you know bread or even low carb bread,because this,is low carb guys but check out,this yumminess all right for our,sandwich we're going to toast,some chibata you can use any type of,bread you want if you're using bread,i'm going to cut it in half,i'm going to drizzle some olive oil on,top,and again this is super optional you can,just use plain sandwich bread you'll be,fine,i'm gonna put a little salt on it,i'm gonna put these in the oven until,they're nice and toasted and come back,all right our bread is toasted i'm gonna,put some lettuce leaves on it,you could eat this as a lettuce wrap as,well,and we will top it up,with our chicken,this is gonna be a delish sandwich,i'm going to cut it in half,i do have some leftover it's fine i'm,going to put it in a nice close,container in the refrigerator it'll be,fine for dinner time,what check it out,let's taste our sandwich,that chicken guys is fantastic,oh oh with all that avocado and the,and the scallion and the pepper i love,it,the bread is nice and toasty and it goes,wonderful with this salad,one thing about this if you want to make,it ahead of time,don't put the avocado in it just have,your chicken and the vegetables ready in,the refrigerator,and mix it you know relatively before,you're serving it,otherwise it'll turn brown on you this,is fantastic guys i hope you make it and,i hope you love it,thanks for watching the video i'll see,you soon

all right we're going to make some,avocado chicken salad uh first things,first you'll want to put your raw,chicken breast into a crock pot,you can add about um a half tablespoon,of salt just to give some seasoning,and then we're going to pour some water,in here,so don't dry out you want to just barely,cover the chicken with the water,you don't need to fill it up too full,just enough so it covers the chicken,and then we're going to let it cook on,high for four hours,and once it's done it'll be tender,enough to cut up,start putting together a chicken salad,okay after the,chicken's done cooking in the crock pot,just go ahead and take out however many,chicken breasts you want to use,i put one pound of chicken in the crock,pot so three large chicken breasts,i'm actually going to be using only one,chicken breast to make this,round of chicken salad,so once you take your chicken breast go,ahead,and chop it all up don't want to get it,too fine you want to leave it somewhat,chunky but at the same time,you want the chunks to be rather small,so just be careful when you're chopping,it so it's not too,fine,then we'll add our avocado use,two avocados per chicken breast,so if you're making all three chicken,breasts at once,you're going to want to use six avocados,so once you dug out all the avocado out,it's all mashed up dump it in with the,chicken,now we want to add,just a fourth cup meal,one cup of sweet relish,and then we're adding,a half cup,of chopped pecans,so then we just get all that mixed up,the idea is to have more avocado,than mayo,you want that nice strong avocado flavor,if you use,less than if you only use one,avocado per chicken breast it's not,going to have very strong,flavor of avocado,make sure you use two,all right once we get all that mixed,together good put it in some bread and,have some okay once your chicken salad's,all mixed together use whatever kind of,bread,you want to make a sandwich i actually,like using,tortillas for my chicken salad and make,sort of,like little uh wraps basically,but simply um you can also try um,pretty much whatever kind of bridge you,want,something else to really good is on,croissants i always recommend that as,well it's really tasty that way,just go ahead and put however much you,want and just wrap it up,i have a little chicken salad burrito,but uh there you go um,go ahead and uh leave a comment in the,comment section,if you make the avocado chicken salad,let me know how it turned out how you,like it,um if you made any changes to the recipe,just let me know,see how how it does and if you like it,just hit like and subscribe to the video,and then,we'll see you next time

good evening,uh tonight we're going to make chicken,salad,and our mayo is going to be mashed,avocado so it's going to be,avocado chicken salad using all the,traditional ingredients you would,normally use in a chicken salad,uh we're just going to switch it up a,little bit with the avocado,other than that it's very traditional if,you're watching say hi,hit the like or the heart tell me that,you're here i have everything prepped,for you so i'm going to go through the,ingredients first,and i'll bring this closer so that you,can get a good look,so here's what we've done so far i used,leftover chicken,i cooked four huge chicken breasts on,sunday,and then i put them in the refrigerator,actually in the broth,that i had cooked them in so i seared,them in the skillet,and then i covered them and let them,cook in low sodium chicken broth,and then i put that chicken in the,fridge so i,took a four ounce portion of that,chicken that i'd already cooked,and i shredded it and i just shredded it,with my hands it was,very soft and easy to shred this would,be a great way to use poached,chicken take a chicken breast and put it,in boiling water and let it cook in the,boiling water because it can be very,tender and you want tender chicken,but this is also a good way to use your,leftovers so if you have some leftover,chicken this would be a great way,because you're just going to shred it up,so whatever chicken works i'm using,leftover chicken meal prepped chicken,from monday,i have an apple apples are delicious in,chicken salad,i'm using one small apple just so you,know my grocery store didn't have a lot,of variety in apples right now so,this is a pretty large apple so i gave,my son half for dinner and i used,half of a huge apple and that's my apple,chopped up into small pieces,if you like big chunks of apple if you,like big chunks of chicken salad if you,would prefer your chicken style to be in,chunks then cut it in chunks this is,just the way i like it,i have green onion about,an ounce of green onion and celery,together just a little i used one,let's see here one small like half,celery stalk,and just literally one,um stalk of green onion and that weighed,out to be,a little over an ounce on the scale and,then i chopped it very finely,now we're going to use two ounces of,avocado which i have here,and then i have one tablespoon of light,mayo you could use walden farms,mayonnaise,you could use the hellman's light,italian just remember that you want to,keep,one serving under three grams of fat and,three grams of carbs that's your,condiment for the day,here i only have one tablespoon and the,serving was two so i've only used half,i never use more than i need because,there's no reason to add extra calories,that won't make a difference,you could really do this without the,mayo if you're watching and you'll have,any mayo don't worry it's really not,necessary,so what i'm going to do is i'm going to,mash this avocado,and if i had a masher some of you,probably have like potato masher that,would probably be best but this will do,it doesn't matter,um i did squeeze lemon and lemon is for,the recipe i squeezed this already,on the avocado because while i was,waiting for you i didn't want it to,brown,you could make a double batch of this,recipe and store it for one day,and eat it two days in a row i don't,think i would go any further than that,because after about day two,your avocado even with the lemon is,gonna turn brown,and then it won't necessarily be bad but,it'll be very unappealing because we,know that a cup,avocado will quickly turn the lemon,juice will help to keep it from turning,but after about day two you're probably,good to go,so this is going to be our avocado base,and this is what you would normally,think of when you're making chicken,salad,as your mayonnaise face,so we're going to add in our chicken and,our apples,our celery and our onion you can season,this with a little bit of salt and,pepper,garlic powder and onion powder you all,know me and i can't,digest garlic and onions so i don't add,any extra i've got the green onion in,here that's all i can handle,and now we're going to blend this,together,and depending on your ingredients oops,we lost some along the way,depending on your ingredients if it's,really thick you can just add like a,tablespoon of,chicken broth or a tablespoon of water,we're also going to add a squeeze of,mustard in just a minute,and that's going to give us a little bit,more liquid but honestly it's good to go,right now,i like the flavor that the mustard adds,adds a little bit of a tame which is why,i'm going to add it,but as you can see even without the,mustard,this is where we're at already totally,seems like it's got mayo in it,you would never know you know it,obviously has a tiny bit but it does,it is not dry at all so now i'm going to,add and i'll measure for you i'm not,good at,measuring my mustard because i should,call it just a squeeze,but i think it'll probably be about,a teaspoon yeah like,a teaspoon
