homemade guacamole is a classic the key,is to have all the proportions just,right so that all of the textures and,the flavors really pop,that is so good okay so quick story,yesterday was my anniversary my husband,and i have been married for 15 years we,have two beautiful children and it all,began in a mexican restaurant i was over,20 years ago we were both waiting tables,at the same restaurant and needless to,say we take our guacamole very seriously,so i'm going to share all of my best,tips and tricks what i do and why so,that you can rest assured that you're,going to learn how to make the best,guacamole so a very important component,of making sure you have amazingly,delicious guacamole is a perfectly ripe,avocado so what i like to do is use the,press test all you do is you hold your,avocado up and gently press your thumb,into the skin of the avocado what i'm,looking for is just a nice light,indentation so the avocado has a little,bit of give when you press on it if,there's no give at all chances are it's,too hard and it's not ripe enough and if,it's too soft and your thumb mush is,right in then you may have an avocado,that's overripe slice the avocado in,half and then i just gently tap my knife,right into the pit to pull it out now if,that technique makes you a little bit,nervous what you can also do is just,gently squish the sides of the avocado,and if the avocado is nice and ripe the,pit will pop right out just like this,and then i just pull it out with my,fingers i'm going to scoop the avocado,out of the skins and get it into my bowl,and then top that with the juice from,half of a super juicy lime and then,using the back side of my fork i'm just,gonna gently mash the avocado along the,sides of the bowl until it's nice and,creamy now just a side note this recipe,serves anywhere between two and four,people depending on how you're using it,but it can easily be scaled up or down,then i'm going to add in a quarter cup,each of a finely diced onion,and some diced tomato now for my onion i,like to use a white onion because it has,a nice mild flavor and it adds a great,texture without being overpowering if,you wanted something even more mild you,could swap the onions in for some sliced,scallions now for the tomato i recommend,choosing the most beautiful in season,ripe tomato that you can get your hands,on and first what i like to do is remove,the seeds this way we don't get the wet,seeds in the guacamole to water it down,and then chop it up next up we have our,garlic now you could do one to two,cloves of garlic depending on how much,you enjoy garlic but definitely you want,to use a garlic press this gets all the,juices and the flavors from the garlic,and it ensures that nobody eating your,guacamole is going to get a big hunk of,garlic in their mouth then i'm adding in,a couple tablespoons of chopped fresh,cilantro now whenever you're chopping,your cilantro you want to cut off the,big thick stems towards the end but the,thinner ones towards the top are,perfectly fine,and then i've got just a little bit of,chopped up green bell pepper now,traditionally i would do jalapeno pepper,but because i don't want the guacamole,to be spicy because i want to keep it,family friendly aka i want my kids to,eat it i find that swapping in some,green bell pepper works brilliantly this,way we still get the great crunchy,texture with the pepper flavor but we,don't have any of the heat and then i'll,just finish that with a heaping quarter,teaspoon of kosher salt and gently start,to mix this all together now the reason,i really like kosher salt is because it,has larger crystals of salt than table,salt and actually contains fewer salt,crystals by volume which means you're,using less salt overall and getting a,bit of a crunchy texture from the salt,once i've got everything mixed together,i'm just going to transfer this into my,serving bowl and this guacamole is ready,to go now the obvious choice is to serve,the guacamole with some corn chips so,simple so delicious such a classic and,you can bring it along almost anywhere,for any occasion but other things i,really like to enjoy the guacamole with,are tacos and chili some of my favorites,are to serve this guacamole with my,turkey and black bean tacos or with my,shrimp tacos and if i'm doing a chili i,love it on top of a veggie chili or even,a classic chili con carne i hope you all,enjoyed this recipe and this video if,you did please take a moment to give us,a big thumbs up and don't forget to hit,the subscribe button so good thank you,so much for watching i'm danny spees and,i'll see you back here next time with,some more clean and deliciousness cheers,now if you're wondering why i,now if you're wondering why i,now if you're wondering why i usually,opt,now if you're wondering why i usually,use,we're having fun we are

well here is something that is so,ridiculously easy to do it doesn't even,require a recipe we're going to make,guacamole,and this is a little bit of a throwback,to maybe 20 or 30 years ago when people,used a lot of jarred and boxed,ingredients and not all of that was evil,because I'm going to make a quick and,easy guacamole but I can be done eating,by before my wife even has her guacamole,ready to go because she likes to spend,about a half hour dicing and chopping,and peeling and I sort of been a,minimalist when it comes to this sort of,thing I think that basically it should,be avocado and very little else so first,thing we do is we've got a couple of,very nice ripe avocados here you can,tell they're ripe because if you gently,touch them they give a little bit of,give to them just a little bit of,softness to them you don't want to,squeeze them like a tube of toothpaste,and the way to best way to open an,avocado go right in rotate the blade,around the seed give it a little twist,now this has a couple of brown spots in,it not a problem okay,taking the seed out whack the seed twist,it out it comes and to get the seed off,the knife just pinch the knife above the,seed helps if you can hold on to it and,there it comes off scoop the avocado,directly into a bowl just scoop it right,out of it's shell okay and if you see,any brown spots you can just scrape them,off with your spoon because the rest of,the avocado is just fine okay just like,that,avocados are always a mystery because,you never know what's inside them so we,have a little bit of brown here we want,to get rid of a little bit here more,than a little bit there there you're,fine,open the other one twist down oh that's,a beautiful one love that one,wet the knife twist fantastic that's a,great one and the secret ingredient is,just a little bit of your favorite salsa,not too much you don't want it to taste,like the spot your tomato soup but a,little bit of salsa has everything you'd,ordinarily put into guacamole anyway,onion garlic peppers a little cilantro a,little lime juice and of course a little,bit of tomatoes I'm going to start by,adding maybe 1 ounce 2 ounces quarter,cup call it a quarter cup okay and you,don't need a Cuisinart you don't need a,potato masher just mix it up a little,bit with a fork and some of it will stay,chunky and some of it will get very very,wealthy rate and that's what you want,remember this is about the avocado it's,not about eating a bowl of tomato soup,okay and just stir it up a bit and it's,probably going to need salt just a,picture I don't really think it needs,anything else if you wanted it spicier,you could sure add some nice hot sauce,to it your choice I have a selection of,Mexican hot sauces here and I'm going to,add when they add a little bit of this,particular brand which I like a lot just,to give it a little more heat there's no,heat from this from the hot sauce it,just gives it a nice little back note,into a nice Bowl,there you go I don't know about you but,I'm ready for the game with some chips,and a few beers that's fantastic quick,and easy guacamole

family and friends this guacamole,will be ready before you know it so,let's get started,first off we're going to grab some,cilantro an important part of guacamole,and fresh from the garden,here we go,delicious,let's go back in,we're going to chop one third of a cup,of red onion you could use any onion,that you enjoy i just think the red,gives a pop of color and it has a nice,flavor too,and we're doing the onions and garlic,first because we're gonna deflame this,with lime juice,first let's just give it a nice fine,chop one might almost say a mince,my mom would never do this but i'm gonna,measure out exactly one third of a cup,there's only so much onion that i can,sneak into a dish this house if you know,what i mean all right,in you go the rest can be in your,omelette tomorrow,now we're adding about three cloves of,garlic and this is not a clove of garlic,this is a joke we need to use a regular,sized clove otherwise you're going to be,smashing and chopping forever,give those a good smell,give them a good smash,we're gonna get that skin off and mince,them up,nice and fine watch your fingers,if you watch this channel you might know,that i have a guacamole video up and the,deal is that i,love making guacamole we make it on the,weekends so i'm making some today i,thought it'd be fun to film and,i've had a change of heart i used to,think that you should not have any,tomato in guacamole but i've come around,now that i'm growing my own and i have,delicious ones that i can add in,mince that garlic up and then we're,gonna add it right over our,onion,now we're gonna squeeze one lime on top,and if you have a dry lime go ahead and,add two because dry limes have no juice,these look nice and juicy though so just,squeeze that right in and the acid and,that lime juice is going to deflame the,onions and garlic it's kind of like a,quick pickle almost,plenty of lime juice in there we're just,going to give this a nice swirl and set,it aside,as we add the rest of the ingredients,it'll continue to steep in that juice,and just be more delicious,now it's time for the jalapeno i'm using,a big one so it's only one today but if,you like things extra spicy you could,use two or even add any other chilies,you enjoy,we're gonna remove the core and the,seeds and then just get to chopping my,boys lachlan and george do not like,spicy food at all,i like things like mild like medium,spicy and brian doesn't like the spice,either so they're always like couple,like spicy food huh i don't like spicy,food although they do like food that has,spices just not the heat,and we're going to add them right into,the bowl,the boys are actually eating lunch right,now so you might hear them tripping and,warbling in the background,now we're adding a big handful of,cilantro right from my garden i'm so,excited to have all these things growing,and,making my fresh produce dreams come true,i know some people taste cilantro and,it's just soap to them,you can't help it this is how it is you,can omit the cilantro but if you love it,like me you can add even more,now it's time for the avocados and it's,always a moment of truth because even if,you're an expert avocado picker you,never know if it's going to be like,perfect or maybe a little bit brown or,have a giant seed,that's nice look at that perfect,so happy about that and this is how you,remove an avocado pit,it's called a pit not a seed,never stab that's a trip to the hospital,use a spoon just to remove the flesh,from the skin,a lot of times people will just cut like,this but that's not a best practice,either i'm not telling you to do that,that could also be,you know a little dangerous,especially if you just sharpened your,dice i'm using three big avocados today,if you have small ones like this you,could use a little extra one,i'm just going to give these avocados a,chop or two they're going to get mashed,up so there's no need to dice them or,anything like that,can i tell you that one hi this is alia and welcome back to my,kitchen one thing that I really loved in,Mexico was guacamole um I used to have,it every day especially when they make,it fresh in front of you in the,restaurants at your table it's amazing,and since I've watched it every day,being made now I know how to make it,myself and I'm going to show you how to,make it it's super easy if you never,have it please try this recipe you're,going to love it and if you've had it,especially if you go to Mexican,restaurants then try making it yourself,because it's super easy and super,delicious when you make it at home so,let's start the main ingredient in,guacamole is of course avocados so make,sure you get a really good avocado I use,Hass avocados they usually meteor and,softer and they have a really good,flavor and also make sure that they're,soft right so your avocado has to be,soft all you have to do is basically cut,it in half then you can scoop the the,half without the fit inside just scoop,it in a bowl using a spoon and since,it's a right avocado you don't need much,work and then for the pit you can just,remove it easily and scoop the rest of,the avocado using a fork,smash the avocado and depending on the,consistency you're looking for so if you,want it soft,of course you smash it more if you want,it less soft with chunky in it then you,smash it less so you do what you like,and so just smash it like this,we need to add acid which is basically,citrus in this recipe to the avocado so,it doesn't turn brown so I'm using lime,and that's what they used in Mexico,pushes the line like this on your table,to make it juicier and then cut it in,half and basically just squeeze it to,get the juice add the lime juice to the,avocado if you like it really citrusy,you can use two limes if you want but,one should be fine,also if you don't have limes you could,use a lemon juice but I would encourage,you to use a lime it really makes a,difference now the finale all we have to,do is add the chopped tomatoes here the,fiery chopped onion and also if you,don't want to use onions you can use,green onions they're milder to have a,mild taste whatever you like and of,course the cilantro and mix all these,ingredients together,you can also add finely chopped,jalapenos or any kind of hot pepper I'm,not a big fan of jalapeno so I'm going,to skip it but feel free to add it if,you like it to season we're going to add,black pepper and of course salt and,finally mix it serve the guacamole with,corn chips and that's it I taste this,for you yummy,I love this recipe it's so simple and,has the flavors of the avocado and,onions and tomatoes and it's clean,flavors it is a million times better,than what you eat in the restaurant and,it's actually pretty healthy so I hope,you try it and let me know what to think,for the recipe just check the About,section underneath this video and also,love to hear from you so check out my,facebook but at 15

- Before I dive into today's video,,I just have to say wow.,We just hit 100,000 subscribers on this channel,which has completely blown me away.,And I'll have a lot more to say about that in,next week's video which will be a 100,000 subscriber,celebration video, and FAQ video and a Vitamix giveaway.,So stay tuned for that.,But let's chat about today's recipe.,Today we are whipping up my favorite dip,of all time and that's guacamole.,Many people have said that my guacamole recipe,is the best guacamole that they've ever had,and who am I to disagree?,So I'm happy to share that recipe with you today.,Now if you follow me on Instagram stories,you've seen a little bit of the behind the scenes,and what I've called hashtag guacwatch,which was a little experiment on how to keep,leftover guacamole and avocados green,and prevent them from turning brown.,And I am happy to share those kitchen hacks,and tips with you today as well.,So let's dive in.,All right, so my first tip is when you're buying avocados,make sure that the stem is still attached,because if someone else has already picked off the stem,in the store, it's more likely that that avocado,will have brown spots on the inside.,So we'll start with three avocados,and use a large knife to slice them in half,and remove the pit.,Then use a large spoon to scoop out the flesh into a bowl.,Next we'll add the juice of one fresh lime,and then a fork to mash it all together with the avocados.,And I actually use a serving fork as,it's a bit bigger and easier to mash with.,Now we'll add a few other ingredients to our mashed avocados,and that includes half of a small onion that we'll dice up,,along with two Roma tomatoes and a jalapeno pepper.,When it comes to the Roma tomatoes,,you wanna remove the seeds so that your guacamole,doesn't become watery and as you'll see,I just use my finger to scrape out the seeds.,Lastly we'll mince up two garlic cloves and add those,along with three to four tablespoons of chopped cilantro,and a half a teaspoon of salt.,Then all that's left to do is stir it all together,and of course take a test bite or two.,But I also promised to show you my favorite avocado hack,which prevents them from going brown and it's so simple.,Just add a little bit of cold water to a,storage container or plate and place the avocado,cut side down before placing it in the fridge.,24 hours later your avocado will still be vibrant green.,Now here's the cool part.,This concept can also be used for guacamole.,So if you have leftover guacamole,,which I know is unlikely to happen but just in case,,you can place that in a storage container,and then pat it down with a spoon so that you've got,a nice solid seal on top.,Then add enough cold water so that it,completely covers the top and place it in the fridge.,When you're ready to eat it the next day,just pour the water off and give it a stir,for perfectly green guacamole.,I hope you guys enjoyed this video and if you did,make sure to give it a thumbs up,and hit that subscribe button below.,We'll see you again in the next video.

4 Levels of Chips & Guacamole: Amateur to Food Scientist

i'm jerry and i'm a level one chef,i'm daniel and i'm a level two chef hi,i'm saul i've been a professional chef,for the past 20 years,so today i'm going to be making some,chips with bacon guacamole and it's,really easy you could be gnashing on,some chips and guac in 30 minutes or,less we're gonna make homemade tortilla,chips and guacamole that is nice and,chunky with a little bit of a kick today,i'm making pomegranate mango pineapple,chicharron guacamole and it's going to,be amazing just like everything i make,but i don't believe in myself who will,first we're gonna get started on our,chips today we're gonna be using white,corn tortillas we're gonna slice them,into eight little wedges i'm going to,start by making my own chips with corn,tortillas and i'm going to fry by myself,can you imagine that i'm going to bake,because honestly i'm a beginner i don't,trust myself around a frying pan super,easy process all you need are some corn,tortillas i'm taking the tortillas,cutting them in half and cutting them in,half again so i have something that's,like this size first i'm going to start,with the jicama sticks basically what a,jicama is a vegetable root it tastes,like a mix of potato apple and pear all,i'm going to do is zest the slime into a,small bowl i'm going to add a good,amount of salt so we're going to get,started with our lime i just got one of,these lime juicers recently and it has,completely changed my life and now i'm,gonna make sticks right i wanted to be,like half inch a quarter of an inch so,this is thick enough and this is when it,becomes stick,like a french fry and that'll be your,stick for your guacamole how do we keep,this nice and crispy ice bath,and we're gonna mix this with some,avocado oil and i'm gonna spread this,evenly across all of our tortilla chips,so for my other chip i'm using a,plantain we call this the mexico platano,macho so i'm going to cut the edges here,we are going to put our fingers maybe in,a quarter of an inch and kind of cut it,through through that side,now we're just going to cut it over here,to help remove the skin,and voila,wanna grab a mandolin should i close my,eyes i know it's pretty crazy but i'm a,professional i'm a professional i'm a,professional everybody keeps saying that,and there you have it,a plantain oil is hot one little tester,in there see how it goes and can i just,dump it in there and if you see a lot of,bubbles the more bubbles you see the,hotter it is just do it one by one we're,gonna mix some sea salt now into this,little tray here smoked paprika isn't,really that spicy it's just gonna give,kind of like a smoky,salty added flavor thing i'm gonna set,them on a wire rack to cool and also,that allows the extra oil to kind of,drain out of there look at that super,easy took like less than a minute we're,gonna power through these so nice and,good that's what we're looking for i'm,gonna wait for this batch to finish then,turn like keep adding more all right so,our chips are ready to go into the oven,i've preheated it at 350 degrees follow,me,now as i'm taking these out of the oil,while they're still hot and warm i'm,gonna start seasoning them with my lime,and salt mixture so not too too much but,just enough to kind of give them a nice,coating the oil will absorb the salt and,the salt will stay longer so my chips,have been in the oven for seven minutes,now and it's time to get them flipped so,the other chip that i'm using for my,guacamole is chicharron basically it's a,pork skin and this has been dehydrated,for more than eight hours i'm going to,defry this and this i'm gonna use this,as my plate no one wants to wait to eat,chips and guac they want them now okay,that's it can't wait any longer and this,is what a chicharron should look like,and should sound like the sound,of happiness all right so our chips are,flips we're gonna get them back in that,350 degree oven and we're gonna cook,them for another seven minutes i'm just,gonna give them one last hit with the,lime and salt mixture,easy chips are done i'm gonna get to,work on my mixins i'm going to start,with a serrano chili now i don't want my,guacamole to be like crazy hot like i'm,not using habanero peppers here this is,just enough and i like the flavor on,this and i think one is one is just fine,i'm going to grill the pineapple elm,because i want to add some char to my to,my dish when you do this make sure you,cut like a nice piece of thick skin so,you don't have those slots in here no,one likes to eat those i got to tell you,never confident about my knife skills,but i'm getting better every day i'm,gonna cut the onion i,know a lot of people use white onions,for their guacamole i just prefer sweet,onions in general daniel please i'm just,one colorway man one text you're like,hey dude i'm all about like a little bit,of i don't know brightness in my meal so,it's sweet onions for me,but again daniel do what makes you happy,buddy half of the onion,also goes into the blender,our pineapple is ready so i want
