greetings my beautiful lovelies it's,emmy how are you it's great to see you,and welcome back today i'm going to be,making brownies but,brownies that require 100 hours before,you can actually eat them,100 hours let us process this a little,bit this is a,four day recipe that means you have to,wait,four days and a little extra before you,can actually eat these brownies,but will the four day process improve,the flavor,of the brownies that is the question,so big thanks to all my lovelies that,recommended this video to me,it's a recipe made by alan zu i'll put a,link down below to his recipe,and channel down below and that is the,recipe that i'm going to be following,today,so in a nutshell we're going to be,making a brownie batter but,we have to let the batter rest for a,period of three days,we're gonna bake it and then let it rest,for another 24 hours,to allow the flavors to develop i,consider myself quite a brownie,connoisseur i have loved brownies since,i was,a child my mom would go to the mall to,go shopping on the weekend and she would,buy me as a treat,one mrs fields double fudge brownie and,i would nourish that thing for days i,would pinch little pieces off roll,little balls,so me and brownies go way back way back,so i'm very curious to see if this four,day process,is really going to be worth it so what,i'm going to do is i'm going to make,this recipe,i'm going to bake some right away give,it a taste the rest,i will follow the directions to the tea,and we'll taste that four days later,but i want to have a little taste,comparison to see if this is necessary,to wait,this amount of time before we indulge in,this,much chocolate and this recipe has a lot,of chocolate you're going to need the,seven 100 gram,bars of chocolate seven bars of good,quality,chocolate but we're starting on a good,foot aren't we,so let's go ahead and do this so first,thing we need to do is brown,some butter i'm going to turn on my heat,oop,it would help to have some fuel in here,yep you need some butane,otherwise you can't have a fire right,you need fuel,there we go two sticks of butter,butter has milk solids that toast up,nicely,and they also can burn so we have to,keep an eye on this we don't want,burnt butter we want brown butter,so browning the butter gives it a great,nutty flavor and we're gonna stir this,and keep stirring it until it gets nice,and nutty and toasted in color,i just killed the heat you can see how,it's starting to turn,this brown color now i'm going to add,one tablespoon of espresso,powder and i'm using king arthur's,espresso powder,and i'm imagining the heat will,accentuate,the coffee flavors,kind of similar to when you're making,indian food and,you toast up your spices and the fat,this is 30 grams of coffee that has been,frozen,and this is going to bubble up,and we're going to cool it down,this recipe actually contains quite a,bit of coffee and alvin is a big fan of,how,coffee accentuates the flavor of,chocolate,so we're gonna set this aside and let it,cool a little bit i've got four large,eggs,did you see that that was a thin shelled,egg,it's a good thing i keep my counters,clean because we're gonna do this,three eggs,now we're gonna beat this up on low,speed,now we're gonna add one tablespoon of,vanilla paste,i've never used this ingredient before,it smells like,vanilla extract but it contains sugar,interesting that's beautiful,and indeed it has little bits of the,vanilla bean pod in there,and the seeds,oh that's nice and we've got a bunch of,sugar,two and a quarter cups of sugar a lot,we're going to add this to the eggs,and we're going to beat this until it's,light and fluffy and makes nice little,ribbons,i'm going to add some of that now,all right to our egg and sugar mixture,we're going to add a half,cup of cocoa powder i think,and another tablespoon of espresso,powder,now we're adding one tablespoon of,kosher salt,mmm you looking fine,eight ounces of melted dark chocolate,this is 75 percent,dark chocolate so pretty bitter all of,that in there,and i cut this up into pieces and i,melted it,in the microwave 30 second intervals,so i wouldn't inadvertently burn it,now we're going to sift in one and a,half cups of all-purpose flour,i'm going to switch to my bread whisk,this is really great for thick batters,because it's made from mixing bread,oops that's not good,so i've got two bars of chocolate milk,chocolate dark chocolate 75 cocoa mass,31 cocoa mass we're going to chop this,up and then add it,to our brownie batter,boom,and then mix this in lovelies do you,know why this batter is so incredibly,thick,it's because i almost forgot to put the,key ingredient,butter the brown butter that we made,that we work so hard to get nice and,toasty,almost forgot to add that into there,along with all that espresso powder that,wants to stick to the bottom,get that all in there okay now we're,talking,i was going to put my cutting board away,but then i read the hey guys welcome back to another day of,baking things with chocolate in it that,is all we're doing for the rest of,december if it has chocolate in it,and it goes in the oven we are baking it,i have a tea today i have a boba tea,because i had,i decided to have coffee yesterday at 4,00 p.m,and then was up until 2 a.m watching,tick tock videos so today,we're really sleepy but we're going to,power through because again,baking season today we're going to be,embarking on a journey,a recipe baking journey and we are going,to attempt,the 100 hour fudgy brownies these are,done by alvin here on youtube he works,with,tasty and buzzfeed and he has a,fantastic series called,making it big so if you haven't seen it,already go and check it out but on his,channel he created these,100 hour brownies and they look so,rich and fudgy and decadent and he said,that the amount of time that it takes to,create these brownies,is 100 worth it and in every single,comment that i read from you guys you,all wanted me to see,if it actually does make a difference if,the recipe is good as it stands just,like,making the batter putting an oven and,then eat or does it make a huge,difference to go through that whole 100,hour process,and like is that actually worth it so,are we making the 100 hour brownies,yes we are are we also going to make,them again in 100 hours so we can,compare it side by side,yes we are because i like to think of,myself as the brownie,scientist the cookie connoisseur in a,laboratory and i'm very curious if this,process,actually makes a huge difference i don't,know he says it recipe so the,first thing we're going to be doing is,actually over on the stove because we're,going to start with,brown butter and we did this actually,for,the was it the two two day cookies or,three day,it was two days and brown butter adds,such a depth of flavor,to cookies and like i feel like i should,do it more often in my cookies but,it does require some patience just like,it's it's an extra step,you know so we're gonna be starting by,adding in two sticks,of butter into a pan wow that was like,two giant boulders of butter,he seems to be stirring his pretty,consistently so,i'm trying to do the same then we add in,one tablespoon of espresso powder this,right here it just smells,incredible like that really rich,undertone of espresso with the,creaminess of the butter like oh,tell me more and now we're gonna add in,these little ice cubes of,coffee yes that's right i just did two,ice cubes in here technically alvin only,did one ice cube but when i waited out,that,ended up being two for my ice cube tray,so make sure you measure measuring,is important i'm gonna get butter all,over my camera lens and now,while the butter is cooling we're gonna,get into the next step which requires,the assistance of freddy,naturally she's been so helpful these,past couple videos,girl thank you,what was i doing so we're gonna start by,beating a couple of different,ingredients together,starting with four eggs excuse me we're,starting here,one two three and four and to the eggs,we're gonna add in,two and a quarter cups of sugar everyone,is a lot of sugar,oh it's like snow love december but only,for this,this can go away after christmas though,not not sugar but snow,you know what i mean wee beautiful i,don't know why i put that over there,this should go in the sink,and then one tablespoon of vanilla paste,now that is what alvin specified in,in his recipe um couldn't find that i,did find a pack of two vanilla beans for,13. though,it seems that though there isn't a huge,difference if you're using really good,vanilla extract and i'm going to be,using the pure vanilla extract,today and we're going to cream this all,together,all right that looks good,okay now i'm going to remove frannie,here thank you for jessica and now,look we're going to sift in some of the,ingredients so we're going to add in,here half a cup of cocoa powder,a tablespoon of espresso powder as well,as a tablespoon,of kosher salt i did mention this is a,lot that's a lot of coffee but it's,going to like,it's going to chill because there's also,a lot of chocolate and those two are,just,made for each other you know coffee and,chocolate i mean,can you name a better combination i,can't it smells,absolutely fantastic i'm very excited,about this,but also kind of sometimes to wait so,long,now i'm going to go grab my brown butter,add that in bloop,oh the bottom of my pan is so dirty oh,okay none of you are judging me because,we're family all right,families don't do that you judge me,you're what's going on peeps welcome back to,another episode of no matter how these,rankings go,cue the angry comments i gave you guys,five options,on my instagram story of course you,voted for,everybody's fudgy brownies and yes i did,see all of your angry dms in response,to these poll results but this channel,is based off peer pressure so,what the hell you want me to do some of,these recipes look absolutely insane so,i'm gonna be really interested to see,how this one goes,we've got tasty's fudgy brownies alvin's,100 hour brownies claire's malted,forever brownies and then babish's,melty fudgy brownies as well let's queue,up the brownie king chalkboard,and let's get right into this one if you,have been a viewer of the channel for,any amount of time,you would know that one of my all-time,favorite recipes i've ever made is,tasty's fudgy brownies,so i figured that was a perfect place to,start you will need some granulated,sugar and dutch processed cocoa powder,some kosher salt,and ap flour vanilla extract and some,unsalted butter,a couple of eggs and eight ounces of,dark chocolate i've honestly lost count,at this point but i'm pretty sure,this is the fifth or sixth time i'm,making this recipe on the channel,because,it is that good it's not just one of my,favorite brownie or dessert recipes it,is,legitimately like top three recipes out,of all of them i've ever made on this,channel,it's super quick and simple to make i've,got to commit it to memory,basically by now because it's that easy,and that tasty video,in general is just so nostalgic from me,from the duration,it being one minute to the music and the,the video style,i feel like my buzzfeed test series kind,of peaked around that time,and this is going to be a constant theme,with all of these recipes but,especially with this one there's so few,ingredients that,if you spend a couple extra dollars on,higher quality chocolate and butter,you'll be able to tell in the final,product and is anybody surprised this,one came out perfectly,it smells and looks amazing i will be,absolutely shocked if any of the other,recipes beat this one today,but just for the fun of it let's give it,a try,just the smell of these man it's just so,nostalgic,it's kind of magic how amazing these are,in,less than an hour the salt is right,there,uh the chocolate and cocoa flavor is,just right in the forefront,if brownies are here and like fudges,over here these things are,right smack in the middle amazing,incredible delicious,whatever other adjective you want to,come up with if they get knocked off the,top spot,i will be very shocked next up today,we've got,binging with babish's quote melting,chewing gum fudgy brownies,and for those i grabbed some granulated,sugar and cocoa powder,unsalted butter and bread flour some,kosher salt and baking powder,espresso powder and six ounces of dark,chocolate,6 eggs some vanilla paste and vegetable,oil,right off the bat i love the addition of,the espresso powder because it works,so well with dark chocolate those,flavors just get along and,hype each other up like no other this,recipe was designed for a 9 by 13 inch,pan,rather than an 8x8 square pan that's why,there's a lot of eggs and,a lot of the other ratios seem a little,bit crazy and i guess,the most interesting part of this and,something i never thought of before,is that with the introduction of the,bread flour,and then that vigorous whisking of all,of your ingredients,he's actually wanting to create some,gluten here i've always been in the,habit of,just barely working in your dry,ingredients as to not,create that tough chewy texture but,that's precisely what we're going for,here so it'll be an interesting contrast,this guy is going to get baked in a 350,degree oven for just,25 minutes compared to the 30 with the,last recipe,and again this is on purpose because,babish loves his brownies borderline raw,and i'm kind of in the same boat as him,as gross as that may sound,much like a lot of pies or even some,cookies you don't want to bake brownies,until the pan is completely firm,because by that point it's just,overcooked and dry you want to yank it,when it's still jiggly,let that butter and chocolate come down,back to room temperature and set up,and you will be left with the most ideal,brownie texture,and this recipe is no different,i had to adjust my camera to show you,how delicious and fudgy this looks,because it was kind of hard to see,in the last shot look at that now i look,like,casper the ghost,so this is good uh it's got really good,flavor with the espresso and the,different kind of chocolates in there,uh the texture more so the dryness is a,little bit,off-putting i think almost the espresso,and maybe,the working of the bread flour kind of,leaves like a,drying sensation in your mouth it's kind,of weird though because when you first,bite it it doesn't read as dry at all,it's after you finish chewing and,swallow it kind of leaves like a dry,after feeling i don't know it's not bad,at all but,tasty doesn't have

hey guys we're back with a big one here,these are the 100 hour brownies by alvin,zhao,this is a recipe that i've been wanting,to try for a while now so,here we go so the first thing we're,going to do is brown some butter,there's a lot of butter in this recipe,and if you've never made brown butter,before the trick is to let it come to,room temperature,and slice it up so that it toasts evenly,the next thing i'm going to do is add,some espresso powder there's actually a,lot of coffee in this recipe this is,only part of it,and this is going to add some rich,flavor and enhance the flavor of the,chocolate,i'm also adding a coffee ice cube this,is going to cool it down and also add,more flavor,next thing i'm going to do is add sugar,to my eggs and i'm going to add some,vanilla extract,now the recipe calls for vanilla paste,i didn't have vanilla paste and i,actually couldn't find it so i'm going,to use the vanilla extract i don't know,if that's going to affect the taste of,it at all,but anyway that's what i used so i'm,just going to beat this until my eggs,are nice and whipped,and as you can see they're very pale,here and this took a little bit less,than five minutes to do,next i'm sifting in my cocoa powder this,is dutch processed cocoa powder,and more espresso powder i also added,sea salt and there's a lot of salt in,this recipe i was really worried about,the finished product,but don't worry spoilers it comes out,just fine,so now i'm adding my butter mixture in,there and i'm just going to mix that up,until my batter is nice and smooth,next i'm adding some melted dark,chocolate here you want to use 75,cocoa you want to use good quality,chocolate luckily i was able to find 75,cocoa chocolate chips in my store so,that made things a lot easier for me,and next we're going to sift in our,all-purpose flour and we're just going,to go ahead and fold that in there,now at this point this batter smells,amazing i can't believe i have to wait,four days before eating this,but i heard that if you bake this,immediately it's gonna taste very bitter,so,you do wanna wait anyway i'm adding some,chopped milk chocolate and some more,dark chocolate chips and i'm just gonna,fold that into the batter before i add,it to a,13 by 9 inch baking pan that's been,greased and lined with parchment,and once you have that all smoothed out,on top it's time to add the rest of your,chocolate,and you're probably thinking oh it's,time to bake these this wasn't that bad,no i'm gonna cover this with plastic,wrap and this is gonna go in the fridge,for three days,and the reason why this is is so that,the flavors get to know each other a,little bit more,and the batter will basically mature,over time,now i started making those brownies on,tuesday today is friday,and this is how the batter looks and,this is going to go in a 350 degree oven,for 30 minutes and i was actually kind,of worried that it wasn't going to be,long enough but,these actually came out perfect but,here's the thing we're going to cover,this with tin foil while it's still hot,and this is going to go in the freezer,for 30 minutes,and this is going to keep all the,moisture within the brownies,and as you can see i had to part my,freezer like the red sea in order to,make room for this,and then after 30 minutes this is going,to go back in the fridge for another 24,hours,now finally it's saturday and these are,done,now let me tell you something these,brownies had some weight to them these,were heavy heavy brownies but taking,them out of the pan was no problem,and slicing them up was no problem,either these were surprisingly very,smooth right out of the fridge,almost like fudge and they're very very,thick look at these look on the inside,they look good don't they now i'm gonna,do exactly what alvin did he heated his,up a little bit i'm popping mine in the,microwave for a few seconds,and this is it time to try these out,as you can tell these are very dense and,very chocolatey looking,question is was it worth the wait let's,listen in,holy crap oh yeah definitely worth the,wait they were amazing,now you're probably thinking john why am,i watching your video when i could be,watching alvin's,well i'm very happy that you asked me,that because doing this recipe actually,inspired me to jazz up my recipe a,little bit,so that's coming up next,all right the first thing i'm doing is,melting some unsalted butter in a small,saucepan,and i'm not going to brown this i'm just,going to keep it the way it is i'm,adding my dutch processed cocoa powder,and some espresso and so i was like you know what,this is the perfect way that i'm gonna,do this i think the original recipe is,credited to,a chef alvin zhao from buzzfeed i don't,know if this is like a tweak of a,different version of like 100 hour,recipe or if he created the 100 hour,recipe,but i'm gonna just say he created it but,what if he did it,this is actually more than a hundred,hours already because well actually user,error so yesterday i wanted to film this,video,i did not get enough chocolate bars,because for one pan of brownies you're,gonna need about like,this many chocolate bars eight chocolate,bars so this is,a day after so what you do is you make,the batter you stick it into the fridge,for a hundred hours or something like,that you take it out you weigh 100,yeah you take it out you put it into the,oven now during that time,we're going to taste test this and,compare it to a 10 hour recipe or,a 10 minute recipe like an easy peasy,everyone can make this brownie you,probably have all the ingredients,at home type of recipe i don't know what,you can do in a hundred hours i,i googled it because i was like i need,to know what do people do that's about,two work weeks and a half right,apparently in 100 hours,bill gates makes 50 million dollars i,don't know how i came across that,information,but it didn't really make me feel good,about myself because i was like he puts,50 million dollars into his bank account,and i put brownies into my stomach,i don't know maybe i have the better,life and i know what you're thinking,stephanie but it looks like you spent,100 hours on hello and welcome to the rhubarb room,where today we're making brownies,but not just any brownies we're going to,be making alvin's 100,hour brownies and uh not just that,either,so i kind of saw alvin's 100 hour,brownies and i thought well,is it really worth it is it is it worth,the extra time,and effort to make these brownies,compared to your normal brownie,and so i thought it wouldn't just be,good enough to make these brownies and,then just try them on their own because,you kind of forget what a good brownie,tastes like really,and uh so i thought we would have a,comparison in this video,so to have kind of like a benchmark a,scale of what a good brownie should be,i've gone with benjamin babish's,melty brownies for this one so we're,going to see which one's better,but also then see obviously if the 100,hour version,which i'm expecting to be a little bit,better just because there's a few extra,steps in there,there's a few things that you might do,differently to a normal brownie,uh yeah we'll just see if it's basically,worth taking that extra time,because it does take a little while to,make 100 hours there's no joke when you,want a brownie so let's jump in,i'll go through how i made these and,then we'll give them a taste test,uh but before i do if you are new to the,channel you do like this sort of stuff,then maybe do consider,subscribing and hitting a notification,bell to be notified of when new videos,like this come out,but so without further ado let's get,into it so first we're going to start,off with the 100 hour brownies just,because,they do take so long so to start off we,got some butter in a pan and with this,we're making brown butter which i've,actually never made before,uh so this was a nice little interesting,challenge i won't lie i did burn the,first set but that's,because with the next part um with the,brown butter you,want to take it to where it's brown but,in the next part,uh alvin adds espresso in there and i,thought the espresso might be a little,bit grainy,so i was a little bit hesitant to add,that in so actually the first time i,went for,uh instant coffee which actually burnt,instantly so don't do that if you're,thinking about that it has to be,espresso powder,i'm just letting you know so if you do,try to make these you don't make the,same mistake i did,so on this second batch that you're,seeing um,i did go for espresso powder and as you,can see i did put more,espresso powder than alvin did,originally but that's just because in,the next step where we're adding these,ice cubes alvin does use coffee ice,cubes whereas i'm only using normal ice,cubes just,just water that's why i ended up putting,more espresso initially than alvin did,so basically we went in with the ice,cubes as you can see it all foams up and,we mix it very fast,to stop it from bubbling over and,basically just cools down the butter so,it doesn't it doesn't burn it doesn't go,past the browning stage and,yeah it doesn't burn so after that it's,time for us to pour it out,sell it aside and uh let's start the,brownie mix,so we went in with some eggs and as you,can see almost instantly i got eggshells,in my mix,so what you can do to get this out is a,nice little tip is just use the eggshell,because they sort of attract each other,for some reason and it's just an easier,way to get the eggshells out rather than,using your fingers or,going in with a spoon but after that we,went in with some sugar,and then we beat it we beat this sugar,and egg because we want some we want,some air we don't we want some volume,in this uh egg and sugar mixture in our,brownie bella,so this you might not do normal brownies,you'll probably just combine it and then,that's about it but this,yeah we really went and beat this one so,after we had done that we added some,cocoa powder,some coffee and some salt now you might,notice in this the coffee,i did actually use instant coffee here,again that's just because from the first,part i was a bit worried that,the graininess or grittiness of the,espresso powder might show up,in the final product so i kind of,whipped out a bit there probably should,have added the espresso powder again,but i so,last week i saw mr alvin zu's hundred,hour brownie,and i really wanted to try it,so we're going to be making hundred hour,fuji brownies are they best ever,let me walk you through the entire,process if it goes from this thick,luscious batter,to one and a third pound of chocolate to,back and forth,in the fridge and the freezer and the,oven as it goes from all the different,phases that it has to go through which,takes about,100 hours in total to back to this,gorgeous brownie but we'll be tasting,this,i'll be walking you along a taste test i,did after,one hour then 24 hours then around 72,hours and then the entire 100 hours,and i'll be giving you uh the,differences that i,failed is it worth it so let's get to,baking so i have my ipad next to me and,all the ingredients they're all measured,in grams and ready to go,and because i really wanted to test it,out exactly i didn't skimp on anything,i went to the store and bought myself,the same,kind of chocolate the same ratios that i,wasn't in the recipe i didn't divide it,in half,because i really really wanted to try it,as it truly was,and the recipe link to mr zeus channel,is in the description you can find the,recipe there he has all the details that,you need to make this brownie,in his video so do watch that,so the batter is quite thick and that,means it's going to make a really,fudgy delicious brownie that's one of,the ways to know if the brownie batter,is good is it supposed to be,thick and now i'm going to chop up some,chocolate this is not the entire,bar that i'm using i have another,ginormous 400 gram bar next to me,that i'm gonna chop up and i'm gonna put,it in,1.3 pounds of really good quality,chocolate if you,add everything up with the melted,chocolate and the one chunks that,goes in it's a lot of chocolate for this,recipe but it's,i hope it's going to be worth it another,little tip that i wanted to share with,you guys,is this is what i always do when i'm,baking especially brownies,i line my pan i grease it i put some,parchment paper on it and then i,again grease it with some oil spray or,butter whatever you have,and your brownie will never ever stick i,have this one ready for the test patch,that was an eight eight into eight,square i'm going to be using half of,that,so now i'm just gonna drop my gorgeous,batter it's a little hard to move it,around because it's so thick,and because i took out some of the,batter for a test bath that tray was too,big and now i am shifting it in a,smaller one,now i'm gonna put in all the heaps of,chocolate that needs to go on top,and the big tray is gonna be baked,in around three days time i'm gonna make,sure that i seal it properly because it,is going to stay in the fridge for quite,a while,i want it to stay as nice as possible,because uh we do tend to open doors,quite a lot and with little kids,i know my kids are always opening the,door and checking what's there in the,fridge,um so this is gonna go in the fridge for,the next three days,so see this one later and now it's,uh 21st of october 10 49 on a wednesday,so this had been in the fridge for 30,minutes the test patch,that i did um half of an 8 into a,square i'm gonna bake it for about 18,minutes at 350 degrees fahrenheit,because it's small and it had not been,in the fridge for,that long i reckoned 18 minutes would be,perfect and it left the sides and it's,still wiggly,in the middle so that means it's ready,to go,i am gonna follow the next,step i am going to put it in the freezer,for 30 minutes,because i really want to give it a try,and see what these steps,do to a brownie um so this has been in,the freezer for 30 minutes it's still a,little soft as you can see,and now i'm gonna cut it always always,use,a sharp knife and you are cutting a cake,especially a fuzzy brownie and a keep,a glass of warm water nearby dip it,clean it,after every cut and you will have,beautifully,clean cut brownie every single time,so this looks quite fudgy it has,wrinkles on top i don't see a lot of,flaking on this,but it does look quite fudgy so let's,just taste it,so not only did i taste it myself but my,family did a taste test too,and we actually found it very very,bitter i'm someone who loves,70 chocolate and it was still very,bitter for me everything else i've,mentioned,on this screen you can read up on that,and then what i did was i covered it up,really nicely and tightly and i put it,in the fridge for 24 hours to see,if it would make a difference to it so,after 24 hours,it um it was quite solid as you can see,any fuji brownie would be this is how it,looks at the moment,i'm gonna microwave it for about 20 to,30 seconds,and see how it tastes like what,difference does it make is it worth,waiting 24 hours or not,and of course it was not going to be,much of a difference looks wise but,i was really hoping to see,what difference does it make to the,taste of the brownie,and again i had my family tasted too,and everybody gave it thumbs,up a little bit it was a bit better,everything but,the sweetnes
