hey i'm john canella and today on preppy,kitchen we're making delicious banana,muffins so let's get started first off,the bananas this is all i could get at,the store and i really wanted to make,them today so there's a fix for that,if your bananas are looking a little,green or too yellow pop them onto a,baking sheet and bake at 350 for about,10 minutes or until they're blackened,all over this makes some magic happen,and they will be perfect for baking and,yes this hack works for any time you,need to use bananas for baking but,they're not ripe enough while my bananas,are baking up so they ripen really,quickly i'm gonna combine all the dry,ingredients and the sugar in a big bowl,so that's one and a half cups or 150,grams of all-purpose flour,180 grams i can't lie to my metric,friends,three quarters of a cup of granulated,sugar that's 150 grams,a teaspoon of baking powder,and a teaspoon of baking soda,if you follow my instagram account or if,you see um some of the shorts i put up,the kids actually made this themselves,and it was like one of the cutest things,ever we could put a little insert here,and they did a really good job too this,recipe is so simple that my,four-year-olds could make it basically,on their own i just like told them what,the measurements were and they used,their little uh measuring spoons so cute,so biased as a parent too i'm also using,three quarters of a teaspoon of salt,this is kosher salt i just want to show,you in the palm of my hand how different,it is from regular uh table salt like,little salt peppers it looks like salt,cereal to me i'm only mentioning this,because if you use table salt or fine,salt you want to use like half a,teaspoon or less it really is a saltier,salt you're packing more salt in a,spoonful okay,our scale is done grab a whisk and whisk,it up,and then we're going to set that aside,we need to melt half a cup of butter is,113 grams if you wanted to you could use,vegetable oil on this but the butter,gives it a wonderful flavor okay my,bananas baked up they're nice and dark,now and if you can see this they're like,jelly inside that's what you want,overripe bananas have a really soft,mushy texture which i would not want for,eating banana these guys have that now,even though they were previously green,set that oven to 425 this batter comes,together super fast and you want the,oven nice and hot when it goes in so i,actually want one and a half cups of,mashed banana which is normally three,but these are massive bananas so i think,i'm gonna measure it out before i mash,them in the bowl if you had too much,banana there's too much moisture and,your muffins aren't gonna bake up and be,fluffy they're gonna turn into pudding,after they cool and sink down there we,go see nice and mushy,these bananas look massive but the skin,was really thick on them so they're,actually uh,not as big volume wise as i expected i,think three is gonna be just about right,plop that into your bowl,also melted my butter in the microwave i,just want to show you my kind of hack,for not having horrible butter,explosions just put the paper on top,when it melts and if it does explode the,paper really contains most of it so,that's for you now i'm going to mash my,bananas up i have a potato ricer you,could use a fork if you want to and this,is totally up to you some people like,big pieces of banana in there some,people like it totally mashed through,and some people don't like banana at all,so,for the people who like it really mashed,mash it up if you want bigger chunks,just leave some chunks in there,yeah if you don't like banana click up,here for my chocolate muffin recipe,let's get all this delicious banana off,right now i'm going to add my half a cup,of melted butter in,get it all out,two eggs room temperature is best you,never want to have ice cold ingredients,going into the oven unless it's a pastry,tart that's different,one teaspoon of vanilla and,if you were keeping track of what was,happening you might have realized i,forgot an ingredient earlier in the,video where's the cinnamon,so,let's just add that in now one teaspoon,of ground cinnamon you can use other,spices that you enjoy too and let me,know in the comments if there's a really,good spice that you like in your banana,muffins mix that in,now we're going to mix up our wet,mixture so it's nice and combined,there's some lumps in there but that's,great for me,if you add really cold things into the,oven what happens is the center takes so,much longer to bake by the time it's,done the outside is burnt or dry so,warmer is actually a better way to go,and sometimes for things like pies like,a pumpkin pie for example i'll actually,heat the filling up on the stove so that,it's warm going into the oven and it,bakes up nice and even i'm gonna do a,switch route here,add the wet into the dry it smells so,good,i love all that melted butter,we're gonna fold this together one tip,for you is just It's true you can make this banana bread,with just one banana and a few pantry staples.,Let's get started.,In a bowl we're going to whisk together a quarter of a cup of flour,,a quarter of a teaspoon of baking soda, a quarter of a teaspoon of ground cinnamon,,and 1/8 of a teaspoon of salt. You'll add that to the bowl. I'm just going to mix it together.,We're going to set this bowl aside and get another bowl. We're going to take our,one banana. The riper the banana the sweeter the banana bread. You're going to,peel it and add it to the bowl. And we're gonna get a fork... oh here it is... fork, and,we'll mash the banana right in the bowl.,It doesn't have to be perfectly all mashed. I like to have a little chunks in,there. And to the banana we'll add two tablespoons of sugar.,We'll mix the sugar in the banana together.,Okay, and then we're going to add in a tablespoon of butter that we melted,,one egg yolk,,and 1/2 of a teaspoon of vanilla extract.,And we'll mix these together.,Okay, next we'll take our dry ingredients and pour them into our wet ingredients.,And we'll mix them together.,And then we'll take a lightly buttered 8 ounce ramekin, or a baking dish of,similar size, and we're going to pour the batter into the ramekin.,And then we're going to bake this in a 350 degree preheated oven for about 30 minutes.,And here we have our banana bread for one. Hi, I'm Joanie from One Dish Kitchen and today I'm showing you how to make a,small batch of banana muffins. This is the perfect muffin recipe to use if you,have two bananas that are super ripe and need to get used up quickly. It's an easy,recipe that comes together so quickly and it makes the perfect amount of,muffins if you're serving one or two people. So I've been making banana,muffins for years for my kids when they were all living at home. I took that,recipe and I scaled down all the ingredients and came up with this small,batch muffin recipe.,So, let's get started. So we're going to mix together 1/2 a cup,of sugar, one of our two bananas. We're just going to break it up a little bit,into the bowl.,And then we're going to mix these together.,So you want to mix the sugar in the banana together for a good 35 to 40,seconds. You want a really nice banana cream, sort of, look to it. Then we're,going to add in 6 tablespoons of cooled melted butter,,one egg,,and a half a teaspoon of vanilla extract.,And we'll mix it all together again.,Next we're going to mix in a cup of flour, a teaspoon of baking soda, and,a 1/4 of a teaspoon of salt.,So you're just going to mix it until the,ingredients are just incorporated. We're going to take our last banana and we're,going to mash it with a fork. I like to do this because I like little chunks,of bananas in my banana muffins. So you're gonna be using very ripe bananas.,So, you saw mine had little freckled spots on them. Even more ripe than that,will work. Just remember the riper the banana the,sweeter the banana. Add the mashed bananas to the muffin batter and we'll stir it.,Now if you want to make banana nut muffins just add in a quarter of a cup,of chopped walnuts or pecans. Delicious.,Then we're gonna take our muffin tin. So this recipe is gonna give you about five,or six muffins depending on how much you fill into your muffin tin.,I like to use a cookie scoop. You don't have to, but I like to use a cookie scoop,because makes all the muffins about the same size. We're gonna fill the muffin,tins with, about, say 3/4 of the way full. And you don't have to use liners. You can,just lightly spray your muffin tin with some oil spray if you like. Okay and,we're gonna pop these in the oven., "Put muffins in oven preheated to 350°F for 20-25 minutes, or until toothpick or knife stuck in muffin comes out clean",Look at these. Aren't these beautiful? They're so big and fluffy and they look,so delicious. Also these muffins freeze really well. So,all you do, if you want to freeze these banana muffins, is let them cool after,you take them out of the oven and let them cool. And wrap them in some plastic wrap,or put them in a zip top bag and they'll keep in the freezer for about 2 months.,These muffins are so tender and moist they're absolutely perfect. Look at that.,And I love how you see little chunks of bananas in the muffins from that whole,banana that we mashed.,So like I said, it uses just two bananas. have you ever looked at a bakery case,and seen banana muffins and asked who is,buying that they are not tasty they're,never good it's true and i don't know,who made those recipes but it wasn't me,because i have a banana buffing recipe,that is enough blow your mind,lots of banana flavor super fluffy but,ultra moist it's the perfect combination,and every bite has just the right amount,of spice this whips up in just a few,minutes and you are gonna fall in love,with it so let's get started these are,the ripest bananas that i had in the,house and,they're almost ripe enough but not quite,you want to have a banana that you do,not want to eat you want a mushy,blackened banana so,we're going to take three of these,pop them onto a baking sheet and bake,them at 350 for about 10 minutes until,the skin is blackened you just want them,cool down,i don't know if you're guilty of this,but i have been a creature of habit with,breakfast and it's gotten to the point,where it's like i don't want to have the,same,thing that's in my regular rotation,again so i'm mixing it up with some,delicious banana muffins this will be,enough to have for the kids brian me and,there'll be a couple left over for,snacking and you know for the next day,too it's gonna be perfect starting off,with one and a half cups or 180 grams of,all-purpose flour,for the leavening agents i'm adding one,teaspoon of baking soda,one teaspoon of baking powder and then,for some contrast we're using a whole,teaspoon of salt,there you go,one teaspoon of cinnamon,if you want to just add the cinnamon and,call it a we're on to those,bananas,okay now we're gonna do some banana,surgery take a sharp knife and make an,incision down the middle,open up look at this,you know bananas are very triggering for,people on a number of levels but if,you're watching this video i'm assuming,you like bananas i had friends who would,like only touch like i had to be like a,firm banana which i actually find,disgusting like fern bananas are not for,me i want them to be perfectly ripe,mushy bananas are also not for me only,for baking i would never eat a mushy,banana,if you,have dealt with the best fruit ever,persimmons there's two kinds of,persimmons there's fuyu and hashia,although you can correct my,pronunciation in the comments if you,want and basically,i like fuyu which are the ones that,taste,delicious like crisp custard or crisp,and amazing but people bake with the,hashia ones which like kind of they look,like bell peppers almost,they're very pretty,but you have to eat them when they're,like totally mushy otherwise they don't,taste good for a number of reasons,mainly tannins,anyways it's my roundabout way of saying,mash those bananas into a large bowl,this,mash smash smash okay now we can,just,get all that out i'm using three bananas,if you didn't notice,set this,aside and we're just gonna make it all,in one bowl now so we're gonna add in,five and a half tablespoons of unsalted,melted butter,sounds like a party already,add in a teaspoon of a nice vanilla,nice vanilla usually comes in a glass,bottle that's your hint,if you like the taste of artificial,vanilla that's great i do not so i would,recommend either using a real vanilla or,just skipping it all together,it's not like a necessary ingredient but,it adds a layer of flavor which i find,quite enjoyable,all right one quarter cup of a full fat,plain yogurt,if you wanted to you could use like a,non-fat or,low-fat yogurt that's up to you and,the life you're living,and now two eggs room temperature please,if you want to be safe crack them into a,small bowl one at a time and then,transfer them over could save you some,heartache based on,shells or the occasional like scary,looking egg we're going to whisk this,all together,this smells amazing oh my gosh i wish,you could smell it right now,in fact you can if you make the recipe,do you know what i forgot in this recipe,this is like clap if you know what i,forgot hey I'm John Cannell and today on preppy,kitchen we're making easy delicious,oatmeal banana muffins so let's get,started first thing set that oven to 375,it needs to be nice and toasty and these,guys come together in no time at all in,fact they're actually so easy that my,kids love making this as well get two,bananas they should look like this not,for eating only for baking if you have,those like yellow green bananas that,aren't ripe at all you can still use,those pop them onto a baking sheet bake,it 350 or even 375 until they're,blackened it's about 10 minutes then,you'll mush them up and use them just,like normal when you're using banana in,a recipe,you actually kind of want to be exact,ish like some bananas are tiny little,baby bananas some are gigantic so I like,to mash my bananas into a measuring cup,it gives me an exact result everything,comes out just that much better your,bananas are adding flavor and texture,there's a ton of water in here it just,makes everything moist and amazing,without being oily and greasy let's see,if two will do it or if I need a little,bit more if you had too much banana it's,too much moisture and they can be kind,of gummy and collapse and could be like,under baked in the middle so it's really,better just to do one extra step of,measuring things out correctly even,though my mother would never do this she,would just toss things in she doesn't,like measuring at all but it always,works out for her she's lucky so close,I'm going to add another half banana in,just so I can be right at the one cut,Mark also if you add a little bit less,banana than you should you're not going,to get the 12 muffins I'm just going to,tell you right now so it'll still be,delicious you'll still like enjoy the,recipe but you might have one or even,two muffins last that looks great I'm,setting this aside and now it's time to,get our dry ingredients but first why,not put your muffin papers in you don't,have to use muffin papers you could just,spray your baking dish but that's a,recipe for heartache in my opinion,it's time for our dry ingredients,starting with one and a half cups or 180,grams of all-purpose flour I also want,one and a half cups of old-fashioned,oats these are going to give you a,wonderful chew and some body and,substance it also means that you can add,this into your kids lunch they'll have a,wonderful snack they enjoy but it's,still a good source of fiber and,everything else 150 grams one and a half,cups,I also want two-thirds of a cup of,granulated sugar 133 grams I get a ton,of questions about sugar and baked goods,so I want to go over it really quickly,because it's so important sugar is doing,two jobs one it's sweetening things up,so it's delicious but it's also giving,you a soft tender crumb that melt in,your mouth texture actually comes from,the sugar just like when you add lemon,juice to a cake and the acid interferes,with the coagulation of the egg protein,there the sugar is doing the same thing,so it's making weaker bonds between the,egg and the flour and giving you that,soft melt-in-your-mouth crumb,I swear I love these little canisters,but they look exactly the same I'm like,one and a half teaspoons of baking,powder and half a teaspoon of baking,soda that only took me half an hour I'm,also using half a teaspoon of salt and,finally one teaspoon of cinnamon I will,say you could use any spice you enjoy if,you like nutmeg have at it cardamom,whatever you want scale is done grab a,whisk we're gonna whisk this up cinnamon,and oats is like a match made in heaven,and I said it earlier but like I love to,put these in Laughlin and George's lunch,bags as like their lunch snack treat,situation and they really keep them full,because of the banana and the oats,that's all mixed up in a medium Bowl,we're gonna whisk together a couple of,delicious ingredients starting with,two-thirds of a cup of milk if you're,not a milk fan you could use almond milk,soy milk whatever you like I'm also,adding in a third of a cup of Veggie oil,this gives you so much softness without,having to worry about them coming out of,the fridge and being hard butter and,veggie oil they're both fats but the,benefit of the oil is that you can put,them in the fridge they'll come out and,they'll be super soft right away a lot,of butter-based desserts just need to,come to room temperature which can be a,pain one teaspoon of vanilla will go a,long way so add that in two eggs and,eggs here are our binding agent they're,gonna hold everything together the yolk,gives you some more richness too if you,don't want to use the egg you actually,don't have to you could add in about a,quarter cup extra banana or so because,banana is also a binding agent in,addition to it giving you that wonderful,moisture there's a lot of egg,Alternatives I get asked about banana is,a great one you could use applesauce,sometimes and flax seed if you grind it,up and you soak it in water really,really like goopy gluey and it mimics,the texture of egg whites if

hey guys and welcome back to my channel,today I'm gonna share with you this,really simple recipe so WeightWatchers,one point banana oatmeal cups this is,all the ingredients that you need for,the recipe and for really spotty bananas,flour and you can also use gluten-free,flour really easy substitute quick cook,rolled oats cinnamon some stevia in the,raw and eggs,Here I am just peeling all of these,bananas I'm mashing them as well you can,go as chunky or as not chunky with these,bananas as you want and this is also a,really great activity if you have small,children or toddlers I decided to do,this on my own today because I was,filming but a lot of times my children,love to make all of the mash banana,recipes with me,don't forget to go ahead and preheat,your oven to 350 degrees,next I am cracking four eggs into a bowl,and whipping them really well,next I'm adding one whole cup of the,quick cook rolled oats into the bowl,with the eggs and the banana I decided,to add four packets of stevia in the raw,but I found that you really don't need,this much the bananas sweeten this,recipe a lot themselves so feel free to,put half of the amount or not at all if,you'd like next I'm adding in this,all-purpose flour and this is really,easily substituted with a gluten-free,one-to-one flour blend here I am just,scooping out four tablespoons of flour,and adding it right into the mixture,I just sprinkled liberally on into the,bowl I love cinnamon so I probably added,way too much for this recipe but go,ahead and play around with how much you,like or different flavors some nutmeg,some cloves even some ground ginger,would be really great in this recipe as,well,go ahead and mix it all up really well,and by the end of it when everything is,incorporated should look a little bit,like this,I sprayed my muffin tins with a,zero-point spray and remember that this,recipe you should make 12 muffins in,order for it to be 1 point per muffin,and this is how they turned out they,taste so good they smell so good and,these are one points per serving I,really like them warm but I also really,enjoyed them cold my children also ages,six five three and one really loved them,as well so this is a really great meal,prepping item to have on hand when,you're doing Weight Watchers program and,they're also a really great snack to,pair it with some zero point frites or,even some Greek yogurt it was so,delicious so I hope you guys enjoyed,this video and please don't forget to,Like and subscribe and let me know if,you made these banana oatmeal cups and,the comments below thanks so much you,guys bye
