wash our apples then,let's go ahead and peel them but if you,feel adventurous today and on the,daredevil side you can go ahead and peel,them with a knife you let them know that,not only Rambo is the only one that can,handle one now that we have our apples,peel we can go ahead and slice them and,how thin or thick you want them is all,up to you we like to go on the medium,side so everybody can be happy,remember your king or queen or both of,your castle so those that go against the,king or queen don't eat today let's go,ahead and place the slices on a bowl,let's go ahead and start working on our,filling we're gonna add 3/4 of a cup of,white sugar 1/4 of a teaspoon of salt,3/4 of a teaspoon of ground cinnamon 1/8,of a teaspoon of nutmeg,2 tablespoons of all-purpose flour or,cornstarch and lastly 2 tablespoons of,lemon juice now let's go ahead and mix,and then we can leave it there for 20,minutes to 45 minutes and this is gonna,get all the good juices out to Apple,let's go ahead and take our butter and,cut it in cubes and we want to make sure,that the butter is coming out right out,the freezer,the coldest the better and we're using a,total of 2 sticks today but now we're,only gonna cut in cubes one and a half,sticks,now let's go ahead and make some pie,crust and we're gonna use the food,processor to get that done but now that,you feel blackbelt light you can use two,samurai swords to Rambo knife two forks,or the deadliest of them all a pastry,cutter let's go ahead and add two cups,of all-purpose flour one teaspoon of,salt one teaspoon of baking powder one,tablespoon of sugar we can go ahead and,add the butter and we're gonna pulse it,a couple of times to mix everything in,now we can go ahead and start adding our,water and we're gonna do that a,tablespoon at a time and we want to make,sure that the water is ice-cold,so adding a couple of cubes of ice will,go a long way we can start by adding,three tablespoons and pulse now we could,turn on the food processor and start,adding 1 tablespoon of water until,everything is well mixed,now let's go ahead and flour our working,surface we can dump our dough,sprinkle some more flour on top and,create a disc form now we can go ahead,and place that on a sip lock back on the,freezer for 20 minutes now we can go,back to our filling let's go ahead and,mix it once again and as you can see all,the juices have fall to the bottom what,we're gonna do is go ahead and drain out,that liquid and place it on a saucepan,because we're taking it to the stove,we're gonna turn the stove on to medium,low and add two tablespoons of,cornstarch adding the cornstarch in a,little bit of water and pre mixing it,before throwing it in and it's gonna,help you avoid any lumps and this is,gonna help thicken the pie filling once,we see the mixture of oil we're gonna,turn the stove off and now we can add,the half a stick of butter that we use,to grease the pan and now you can whisk,away,we let the mixture cool for a little bit,and then mix it with the apples let's go,ahead and grease the pan let's go ahead,and take our dough out the freezer thus,our working surface and we're gonna,divide the dough on two pieces because,one is for the bottom and one for the,top and we're gonna place one back on,the freezer again and remember to put it,inside a sip lock bag because if not you,can imagine what your freezers taste,like we're gonna take our rolling pin,and dust it and we're gonna start,pushing the dough down and rolling at,the same time and at the beginning,you're able to flip the dough once it,starts stretching you won't be able to,and remember if you feel the dough that,it's sticky you can add flour in small,amount and our goal is to get the dough,one inch or two inches bigger than the,actual pie pan once we get there we're,gonna use the rolling pin to carry the,dough to the pan and you do that by,rolling the dough slowly to the rolling,pin and remember it doesn't have to be,perfect remember that you're gonna place,another dough on the top we want to fill,in all the gaps and using your tiny,little scissors we're gonna go ahead and,cut the excess dough and we reach pie the perfect balance of,sweetness and acidity like bursts in,your mouth and you're like oh my gosh,what's happening i'm in love thank you,this is the best thing ever so let's get,started i'm using my all-time favorite,pie crust recipe i just doubled it for,two discs because i need one for the,bottom and one for the lattice on top,you can click up here for the full,how-to video all the ins and outs,everything you need to know i also have,that full recipe in the blog post as,well so you can click on that in the,description below it's basically 300,grams of all-purpose flour a quarter cup,of sugar or 50 grams into the bowl of,your food processor along with a quarter,teaspoon of salt whizz it up and then,you add in one cup of unsalted butter at,room temperature that's 226 grams if,you're counting whiz whiz whiz and then,you're gonna add in one quarter cup of,ice water in a drizzle along with two,tablespoons of vodka don't worry it'll,burn off whisk it a couple times until,you get a rough shaggy dough pop it onto,a pastry mat,work it over just three or four times,and then you're gonna have your disc,that you can wrap in plastic and chill,it is that,easy okay this needs to go back into the,fridge so it's nice and cold while we,work on our filling in you go,to make the apple pie filling for your,apple pie you can do two things you can,make it pop it into that pastry or,you can just making nice little like,one-inch dices basically with our apple,a little bigger smaller doesn't matter,and you will continue this process until,all of your apples have,just the cores left,last apple,oh my gosh i thought i was done,right now i need about a quarter of a,cup of lemon juice,right here the acidity will really wake,up the apples give you a nice contrast,to the sweetness and,i want to zest half of a lemon so good,thing i didn't finish juicing it right,so,let's get the zest off this is not the,ideal way to zest lemon but it'll work,save this for a minute and then just add,in,give this a quick toss,now we're going to add in two thirds of,a cup of sugar that's one third,and two thirds,yes,that's a lot of sugar but it's a pie,people,all right toss this one more time i'm,using my clean hands,okay,we're gonna set this aside,and do some skillet work now these need,to get washed,placing one quarter of a cup of unsalted,butter,onto a large skillet and let it get nice,and melted,once your butter is all melted and,delicious it's time to add in the apples,carefully,we're going to cook these apples on,medium high for maybe 2-3 minutes we,want them to start really releasing,their juices,so cook on medium high,and then just move them around,occasionally,so you can see a ton of juices are,coming out right now all the juices will,be reduced and form almost a caramel,it's going to be amazing reducing to,medium low right now and i'm adding in,half a teaspoon of cinnamon,get in there you,give the apples a toss that reserved,lemon zest goes in there too now flex on,your family members okay this is a good,apple pie recipe it's a recipe that i've,made plenty of times before apple pie is,actually my husband's favorite dessert,and you know he wanted some apple pie so,here we are this recipe is super easy,let's go ahead and get started i'm going,to be using some granny smith apples and,i'm going to start to peel them now i,don't have that beautiful tool that,gives you the perfect peel on apples,luckily i don't mind having a little bit,of skin my husband doesn't mind so we're,gonna leave some of the skin on,and i'm gonna cut them i don't want them,too big and i don't want them too small,i have the pot of apples it is now time,to add in the brown sugar by the way i,did pre-measure all of this,and glow it because y'all know me,usually i just do my own thing i taste,as i go especially since there's no raw,egg in this but i'm starting to measure,for the sake of you guys wanting to know,the measurements light brown sugar,white sugar nutmeg and cinnamon,lemon juice,and a pinch of salt now i am going to,pinch but we might add some more later,on because i think salt is like the most,important part of this a lot of people,think that in sweets you don't really,need that much salt i disagree salt and,sweet it just adds something to it i've,had a apple pie that was like really,just sweet and i could tell that there,was no salt in it and it was just like,it's just too sweet but when you add in,a little bit of that salt it just it,does what it needs to do okay now it's,time to give this a good mix and we're,going to let it basically i don't know,if marinade is the right word but we're,going to just let it sit in here just,for about 15 minutes,okay so now it's time to pour it into,the pot get it nice and warm soften up,the apples a little bit,you want to try to make sure to get it,all and one thing that i could have done,i could have just let it sit in the pot,probably should have did that so the,apples are in and they're cooking you,want to go ahead and have your,cornstarch on the side because,cornstarch is used to make things thick,oh wow y'all it's getting thick already,i don't know if y'all can tell,oh my gosh that looks so good,you can tell it's getting thick because,it's just,you could just tell okay you could just,tell,oh,it is sticking to the apples y'all yes,smell i kind of want to taste it you,know what let's taste because i always,tell y'all to taste as you go this is,very important if it doesn't have a raw,egg in it you can taste as you go,anything that you're going to be adding,a raw
