These Doritos are so close to the original that I am surprised I am not getting sued.

all right today let's make our own,doritos now today's video is all about,that cheesy cheesy powder that covers,these golden triangles,and we're going to make our own nacho,powder today by dehydrating our own,cheese,and frying our own tortillas all right,with that being said let's go ahead and,get started,so first for our nacho powder we're,going to need some cheese we want to,begin shredding this cheese and i'm,using a block of about 200 grams or 8,ounces,however i'm only going to end up using,half of this the other half is going to,go towards next week's video which i'm,going to talk about at the end of this,video so in total for this recipe,all you need is 4 ounces or about 100,grams of cheese now the flavor of,doritos is actually,called nacho cheese which may be either,the traditional colby or also could come,from a more modern processed cheese,however i'm going to be using a cheddar,cheese here which will give a little bit,of sharpness and flavor,however you do you and if you want to,use some velveeta this is definitely the,time for it now with the cheese shredded,we need to dehydrate this cheese and,we're actually going to do this,in two steps firstly just place the,shredded cheese onto a rack and,into the dehydrator and let it go for,about 12 to 24 hours,at which point we'll have pulled a lot,of the moisture out of the cheese and it,should look something like this now this,cheese will be a little oily and,we're going to need to stop a little bit,of that up using some paper towels now,with my cheese i noticed that even after,using the paper,towels there was still some moisture,inside and this is probably due to the,fact that i had a larger,shred that i used so to help kind of,combat this i decided to grind this,dehydrated cheese powder,into a mortar and pestle creating small,granules now i took that cheese powder,and placed it into the dehydrating tray,with some aluminum foil spreading it out,into an even layer and also during this,dehydration i also added a few,onions to be dehydrated as well and,we'll use that as well in our nacho,cheese powder now,place the powder into the dehydrator and,let it go for an additional eight hours,now if you use a smaller shred of cheese,you may only need to do this once,but you're gonna have to be the judge on,how dry it is and this is gonna really,depend on the dehydrator that you use,the cheese that you use and also the,specific shred of cheese that you use,now the goal is to end up with the,cheese like this,which is slightly oily but more or less,dry all right now it's just a matter of,grinding up the onions and cheese into a,powder fine enough to coat our tortilla,chips so just go ahead and place the,onions off to the side and we're going,to start,to try to grind the cheese now at first,i tried to place them in the blender but,that was complete folly so i went back,to the old school method of mortar and,pestle which worked fine,i collected all the ground up cheese,into a bowl and as i said before i'm,only gonna use about half this cheese,the other half's gonna go towards next,week's video all right now it's time to,work on the onions,place the dehydrated onions into the,mortar and pestle and just begin,smashing we want to grind it into small,pieces,just like we did with the cheese now,don't worry about those flecks of onions,we're going to take care of those in a,few minutes,now go ahead and add the cheese back,into the morning pestle and mix it all,up and now we're going to also take this,opportunity to add the other ingredients,that make up the nacho cheese powder so,starting with,one teaspoon of coriander although this,one's kind of optional however not,optional is two teaspoons of chipotle,powder,and also one teaspoon of cumin next to,add with color i'm going to add about,one teaspoon of turmeric and the last,ingredient we optionally can add is one,teaspoon of something called anato seed,powder now this may be hard to find but,we're mostly using this for color,anyways it will give the powder that,characteristic red color that doritos,have,however again this is just for color and,it's really optional so if you can't,find it,you can still make this and it'll taste,great all right now mix this up,and there we go this is our dorito,powder and it looks pretty good,one last step we want to do is we want,to strain off any large pieces like,those flecks of onion from earlier now,feel free to smash,and grind any leftover pieces through,the sieve just so we don't make sure,that we waste anything and now we should,have a nice,fine nacho cheese powder and it's time,to make the chips so making chips is,actually a lot easier than you might,expect if you've never done this before,simply just cut up four to eight taco,sized corn tortillas,into quarters and place them on a tray,and set them off to the side now we're,going to heat up a pan,or pot to fry these in and you want to,fill that pan,or pot with neutral oil such as,vegetable oil or canola oil,we don't need a large amoun

episode,episode 17.,i'm doing this for a little while huh,for the record we're going to keep doing,fast food don't worry that's not going,away that's the whole baseline of the,series but i also want to start doing,snacks because a lot of people have,requested it,a lot but igdms blah blah blah so on and,so forth you keep,asking me i don't really make cheese,powders that often but i do make cheese,foams but,you know we're gonna give this our best,shot and we can see how close can we get,to a dorito and can we make it better so,with all that said let's,make this shall we we're not gonna go to,7-eleven because 7-eleven,i feel like they're not gonna like a,camera in there or what's the place that,people just don't care walmart look at,this,these are new poppables i mean i like,the concept but why,okay um okay doritos should we get the,party size,doritos is over party what is the,difference between these,but there's more air here's the air,here's the air,this is the same amount of chips you're,already on the down right now,for the first time we truly have,the bag the sound of this triggers my,remember when i was like in class and i,would like try to open a bag of chips,without the teacher hearing and it's,like,so doritos uh they've rebranded so often,this is like this new brand is so,aggressive,why doritos why do they need to be so,aggressive they're they're nacho cheese,chips all right,you don't need a lasers crunching and,slicing through your lettering just for,epic gamers only epic gamers,this is for you you got the classic,doritos smell right i wish more of these,were triangular the majority of them are,actually like all,like half pieces i mean they're doritos,like they're,they're kind of good they're kind of,good the one thing i have to say about,doritos they're nacho cheese flavored,no this tastes nothing like cheese i,don't even know how to describe this,they taste like doritos which tastes,good so what if we made an,actual nacho cheese flavored chip now,first things first,let's make our flavor powder so i,thought for a while exactly how i'm,gonna make this,so i looked around on amazon turns out,cheese powder is actually really easy to,find,and so i just bought some cheddar cheese,powder some white cheese powder you know,the links will be in the description for,that so for this method in a bowl you're,gonna combine one cup or 112 grams of,cheddar cheese powder,a quarter cup of 30 grams of white,cheddar cheese powder a quarter cup or,35 grams of buttermilk powder that's,optional two and a half tablespoons or,15 grams of nutritional yeast yeah okay,it sounds gross but it's,kind of tasty so two teaspoons or seven,grams of msg,yes you heard correctly if doritos is,gonna do it i'm doing it too all right,one tablespoon or seven grams of onion,powder two teaspoons or six grams of,smoked paprika and finally one,tablespoon or 14 grams of fine sea salt,give that some whiskey business until,thoroughly combined and that is your,cheese powder flavoring so it turned out,a little more,neon than i expected okay so let's talk,about making,chips of course you can mix together,your masa flour ideally it would be,better if you had nyx tamale and all,that and ground your own corn but let's,be humble for a second okay we're making,cheese powdered chips if you want it,fast just buy some corn tortillas place,the whole tortillas evenly spaced apart,on a baking sheet toss them in an oven,at the lowest setting possible for,10 minutes to dry them out and then cut,them into quarters and now they're ready,to fry then all you really have to do is,get a large heavy bottom pot fill it up,with at least two inches of oil,make sure it doesn't go any higher than,the halfway mark of the pot otherwise,it's a,fire hazard and that is bad now you just,take that there pot of oil place it on a,stove top over medium heat all right i'm,gonna stop that now and heat that until,it reaches around 350 degrees fahrenheit,or 175 degrees celsius for my metric,homies then in batches making sure not,to overcrowd the pot fry your chips for,about two to three minutes submerging,them and flipping them every so often so,that they get evenly fried and as soon,as those chips sort of stop frying and,bubbling and they're just kind of,floating there you're then going to,remove them from the oil place them on a,wire rack set over a baking sheet,and then immediately dust with your,cheese powder now notice how i'm not,sprinkling here it really works a lot,better if you're using a fine mesh sieve,and just kind of tapping it out that way,we want that,real even coating then just give those,chips a flip and dust them yet again,with your cheese mixture i know that you,might think oh well joshua can i just,toss it in a bowl yeah that's a,practical thought but it doesn't really,work very we

internet welcome to food theory,where today it's logo day watch one get,one free watch this video about how the,food on grocery store shelves are trying,to cheat you out of your money and then,you get on late,night tv back in 2007 when bj novak of,the office noticed that cadbury eggs,seem to be getting smaller i bite my,cadbury eggs this year they feel smaller,than they used to be something is up i,look through all the cabinets in my,house i find a cadbury cream egg from a,couple years ago and i brought it this,is this year's egg yes this is the egg,from a couple years ago look at that,judge for yourself america so there you,have it smoking gun clear as crystal the,eggs were getting smaller but the most,outlandish part of the whole story is,that cadbury actually tried to deny that,this is what they were doing you go to,the main cabaret website it says on the,front page no they have not gotten,smaller you've gotten bigger they were,literally gaslighting anyone who noticed,the trend it's not us it's you lol has a,molesy move there cadbury ballsy move of,course they knew they couldn't keep,getting away with it after being,publicly called out so they changed,their about page on the website from,this archived version why the size of,the eggs changed it hasn't you just grew,up to this quote since people's,preferences vary from market to market,so do our products basically an,explanation that amounts to we made the,eggs smaller and we thought we could get,away with it by lying to you until we,were called out on national tv this my,friends is shrink flation products,becoming smaller over time to give you,less bang for your buck all while,keeping you in the dark about it you,might think that this is just a crazy,one-off example but it's happening,everywhere case in point this is what a,doritos bag looked like several years,ago and this is what it looks like in,2022. notice anything different no well,that's kind of the point but if you zoom,in and enhance and enhance their down in,the corner the old bag has a net weight,of nine and three quarters ounces or,276.4 grams the new bag has a net weight,of nine and one quarter ounces or 262,grams that's a difference of around five,chips per bag and yet we're still paying,the same price same cost less product,earlier this year frito-lay was actually,confronted about it and they explained,by saying quote inflation's hitting,everyone we took a little bit out of the,bag so we can give you the same price,and you can keep enjoying your chips wow,thanks there frito-lay really doing us a,solid by giving us less chips for the,same price now their explanation on the,surface would seem to make sense in the,u.s inflation levels are now at a record,high climbing above eight percent in the,past few months higher than they've been,at any point in my lifetime everything,is getting more expensive and that's,gonna affect everyone including the food,manufacturers if doritos is paying more,for the ingredients that go into the,chips then they have two options they,can charge more money for the same,product or they can charge the same,amount of money for less product it,seems like a fair position for them to,take but there's something that's a bit,more insidious going on because most of,us aren't actually consciously choosing,to pay the same amount we've been paying,to get if your order it talked about a couple,of creams it's so good is that the one,where they wrap the soft tortilla around,the hard toward the hard taco shop yeah,you know from the technician video hey,everyone I'm Claire today we were in the,VA Test Kitchen and I'm making gourmet,Doritos I'm pretty excited about Doritos,I have a sweet tooth I'm a dessert,person I don't have like the gene that,makes me want to just like eat crunchy,salty snacky things unless it's a Dorito,all right I'll start with nacho cheese,these are delightful in every possible,way they're so crunchy not greasy lots,and lots and lots of air bubbles so,there's such an incredible light crisp,texture and of course most importantly,the powdery spice flavor coating on the,chips which is perfectly even oh my god,what an amazing food my brain and,experience tells me that it's a plain,corn tortilla chip with some kind of,seasoning coating sprayed on it,oh that's in the chip because from a,production standpoint all these flavors,it's way easier just to spray it on top,of a single bass chip you don't have to,change the formula,my preferred flavor mmm these are very,good maybe a little too sweet they're so,good why'd you do that to me sorry I,need someone to follow me around this,whole shoot with a wet paper towel spicy,nacho truly excellent compliments to the,Dorito people to the Dorito Chef of all,of the Reds of snacks that I have tasted,for this show this has the most,impressive flavor range often you have,like one central product and then the,variations fall quite short these are,all like pretty tasty I sort,think for the beginning like I'm not,going to nail the flavor of Doritos it's,equally making coca-cola it's like this,is a closely guarded industry secret,that no one can ever replicate because,there's like some some magic happening,but if I can make something close that,has that same like addictive delicious,quality then I'll consider that as,success your chip person where do,Doritos fall under list of favorite,chips I mean your brain short-circuits,and then it's like just give me more,it's true or false,Doritos are the most perfect snack would,ever made true true you went to a,restaurant yeah but what's your flavor,preference between the two see these are,the classic yeah flavors yeah I love,them both it's kind of like children you,know um but really of one favorite,really you have a piece just for me do,you think it's acceptable to bring in,some of the flavor notes from the other,types of Doritos that's a big question I,think they all have such strong,identities as their own thing mm-hmm,you're gonna do a Dorito you need to do,nacho cheese or you need to do Cool,Ranch,so which one would you do that's like,what's your favorite kid the ha that's a,probably just said nacho cheese okay,someone hands me a Dorito and I don't,look at it I'm inspecting that nacho,cheese that looks such a saturation of,that green green and red and orange it's,practically like Christmas colors to me,like one of the most important things is,that is the bubbly tech yeah chip yeah,how's that gonna happen,we'll see man we'll see what happens,during frying I think I probably has a,lot to do with the thickness of the,tortilla I know because it's where Tia,is pressed not rolled this is your,biggest challenge if they spent a,millions and millions of dollars,orchestrating this exact mix of flavors,scientists actual scientists created,this Oh get anywhere close to it being,an actual Dorito okay,I'll be super challenge accepted even,though that was basically you telling me,you have no faith in this process,Universal claim of the Test Kitchen for,Doritos not surprised so I think it's a,Delaney's point maybe it would be more,impressive if I created a homemade nacho,cheese Dorito that really did the same,things that the original not just,cerritos do logic dictates that every,Dorito is the same but that some curl,during frying and whatever do weird,shape so I just want to measure one,relatively flat triangle we're looking,at a short side of what's called 6,centimeters to longer side 7 and 1/2,centimeters,this isn't isosceles triangle you guys,isosceles right two sides of equal,distance and then one then in geometry,and isosceles triangle is a triangle,that has two sides of equal length yeah,here we go it's like the picture here's,my thought if I have my tortilla in a,rectangle,I'll make the rectangle the width of the,height of one chip basically I can cut,like this to make my shapes I mean I,would actually have to cut a i haven't even done my intro yet we just,started,perfect and we haven't had lunch no,there's no lunches claire,86 lunch more work more videos,oh no hey everyone i'm claire i'm in the,ba test kitchen and today i'm making,gourmet,takis,i've never actually had takis i've heard,a lot about them it seems like a,frequently requested,or may make subject kind of seems like a,cousin of the dorito,in that it's a tortilla chip with a very,intense seasoning on it,i know that they're rolled so i'm really,curious to get into them and kind of,take a look at the construction,open the bag i'm really hungry i haven't,had lunch we can go to six flags and,save,fifteen dollars did you say they're,purple,yeah that's not purple,oh wow these are good they've gotta,grill it but i don't know if i like this,flavor profile,these are good you eat a bunch of those,so you might get sick you can't eat too,many of these,you kind of want to go back though yeah,yeah they're good what other flavors we,got besides,way though wait is that is that what,we're having no the purple ones are,fuego let's try the spicy ones let's try,hot,is there like a plane plane oh fuego,wait so what did we just have we had um,crunchy fajitas crunchy fajitas,oh my goodness wow these are glow in the,dark yeah oh look at this one this one's,a little bit,like unfolded,well like these kill human beings why,are they so red,i think you're going to nail this one,yeah you know why because i already made,uh doritos take it right same chip roll,it different spice mix,make it less uh finish today i'm excited,for this one claire right your support,means everything,well i'm here for you anytime you just,call,he hasn't been here for like five,episodes,oh these the acid is all up front and,then you get kind of some of the chili,and then the heat comes later,they are incredible they're really red,like,unnaturally red the red is the coating,there's no red,in the middle i'm not really liable to,go buy a bag of chips but if i were,i would maybe be going for takis,i don't think i can try this why are,they blue,why are they blue it makes me feel weird,oh so this is taki's wild tm,spicy buffalo tortilla chips,each one is like a more brilliant color,than the last,wow these might be my favorite this,would be incredible with beer if i had a,bar,i would put these out because it would,make people drink,i have to shop i don't want to do this,anymore i got i can't i can't eat any,more khakis,they're so good they're spicy not like,crazy,it's very simple it's a rolled tortilla,chip coated in,some kind of very unnatural spice mix,just,the greatest,chris is still smelling it,this is a big bite for you chris you,really get a sweet,a a very early sweet it goes,sweet sour and then all sorts of other,things and then spicy,are you okay,no it's a lot it's sweet and it's so,sour,so sour a little bit of an assault acid,just like,and then it's just fire down below yeah,yeah and it just drops down lower and,lower,yeah it's like overload it's like when,your dog is like,sniffing out the window of the car and,you're like whipping through the,neighborhood and they're just like oh my,god this thing that thing,chris in retrospect this is truly your,worst nightmare is my person,i'm sorry i didn't think about that more,because she feels so his palette is so,sensitive,so it's this i'm sure that they're,different in general but it seems like,they're between,six and a half and seven centimeters in,terms in terms of the thickness,of the chip i would say it's very very,thin it just seems thick because,there's so many layers the chip is,three millimeters thick it's not a tight,it's not a very big spiral,it's not like there's many concentric,rows,i like to try to hydrate these and,soften them so i can roll it out and see,what the original shape of the chip is,before it's rolled,and i don't need it to completely stay,in one piece i just need,it to come apart enough that i could get,a general sense of the shape,oh no this didn't really help me a lot,this is as,whole an unrolled tacky as i could,manage,one thing though that i noticed is that,if you break apart a taki,the inside of the roll has the,powder coating on it so that tells me,that it's,flat first coated in the powder then,rolled then possibly fry it again,or somehow crisp again so that it stays,that it maintains that shape,time for my favorite part reading the,ingredients corn masala flour,the seeds processed with lime cloves,seeds vegetable oil,and or soybean or canola oil and or rice,bran oil close parenthesis seasoning,breakfast salt maltodextrin,acid sugar sodium glutamate hydrolyzed,soy protein onion powder yeast extract,artificial color,that's these red hold on did i miss the,clothes bracket nope,red 40 like yellow sticky spread this,natural and artificial flavor sodium,bicarbonate soybean oil chili pepper,parentheses chili disodium i know sinai,sodium guanilate tbhq,this is antioxidant close parentheses,close bracket because i,remember thinking that the food was way,better than the day,it's like that sometimes you know,can i ask what happened tony's was,always pretty packed,you mean like,what i shut down,same reason everyone else did,pandemic,i may have lost everything but uh,it's all right,i'm still one of the luckiest guys in,the world,what do you mean,well i get to do what i was put on this,earth for,every day i get to,cook and share food with people,sometimes i even still go downtown to,help feed the homeless just like i did,when a,restaurant was still open,plus i got roscoe here you know,you on,you ever think about opening up another,restaurant i think it would make a,killing yeah,that'd be the dream,the banks won't really give me a loan,you know people won't even really look,at me,everyone,thinks i want to scam them out of money,for,drugs or,alcohol or,whatever else you know it must be really,tough i'm sorry,yeah thanks it's just,being homeless,nobody trusts you,i've been,kicked out of so many places now i just,may end up living in a tent downtown,someplace,are you gonna be around tomorrow,yeah,i mean not exactly here but i'll be,around what i'm gonna bring some
