now I'm gonna start with the basics,making a warm apple crisp and honestly,if I'm in the mood for apple pie but I,don't have the time to make the pastry,this is my go-to dessert and it all,really starts with the fruits six cups,of sliced apples now the nice tip when,it comes to making an apple crisp is,really any Apple type will do now to add,a little sweetness you could add sugar,but I prefer a little bit of maple syrup,and because it is about the aromatics of,a crisp baking a little vanilla just,adds to that just about a teaspoon just,a quick stir just to make sure that the,apples are coated with the syrup now to,start on the crisp topping which is,really all about oats brown sugar and,butter I like to add a little something,extra and brown the butter brown butter,adds such a sweetness and nuttiness to,the crisp topping and I can tell you it,just smells incredible when it's baking,so I've got 1/2 a cup of butter 115,grams I like weighing it simply because,that way it's tidy or easier than,cleaning out a measuring cup and put,this on high heat browning butter is a,common trick to add a nutty flavor,without actually adding nuts to a recipe,and you're melting the butter and the,milk solids within the butter actually,caramelize and that flavor goes into the,melted butter itself and it only takes,just a couple minutes I to actually,enjoy watching it just starting to brown,I can smell it I'll shut off the heat,and let that settle down so now I'll,make that oat topping grab my oats and I,prefer baking with regular rolled oats,as opposed to instant or quick cook that,can absorb liquid too quickly so a cup,and a quarter of rolled oats,and for the sweetness half a cup of,brown sugar you want to pack that into,your measuring cup and you can use,all-purpose flour but I figure this is a,weeknight desserts and baking with oats,if we can add the extra fiber with,whole-wheat flour I'm gonna put it in,there so 1/3 of a cup and of course an,apple crisp couldn't be an apple crisp,without cinnamon a full teaspoon and,just a pinch of salt just stir this up,just a little bit to combine and look at,that color of that brown butter mm-hmm,once everything is coated then it goes,on top of the apples and I'll just,spread this over the apples try and get,it as even as possible before I get this,into the oven I like to put it on a,baking tray and it's a good idea when,making crisps and cobblers because those,fruits can bubble up and juice over the,side so you want to catch that I'll line,my baking tray with parchment and now,this is ready for the oven I've,preheated it to 350 and the apple crisp,takes about 45 minutes and it smells,delicious every minute of that as its,cooking to check the doneness because,this is nicely browned on top already I,actually use a paring knife insert it in,the center when it yields easily then I,know my apples are tender,now I have one that I pulled out about,15 minutes ago to let it cool a little,bit I know it's hard to resist when,you've got it right from the oven but,just like letting your chicken rest,after you've roasted it to let the,juices sort of redistribute the singing,goes for an apple crisp but those apples,sort of soak everything up again pull a,little bit and then it's ready to enjoy,those lovely soft apples this is a,comforting food smell oh hello

if you love classic fall baking as much,as i do you've got to make my apple,crisp recipe,silky cinnamon apples under a crisp,crunchy topping and yes you should have,a scoop of ice cream too hey you're,watching preppy kitchen where i john,canel teach you how to make delicious,homemade dishes to share with your,family and friends this apple crisp,ready before you know it so let's get,started first off let's make that crisp,topping into a medium bowl we're going,to add three quarters of a cup or 90,grams of all-purpose flour,half a teaspoon of salt,half a cup of packed brown sugar you can,use light or dark it doesn't really,matter and that's about like 100 plus,grams depends on how hard you pack it,give this a little bit of a break up and,whisk,now we're going to add in one and a,quarter cups of old-fashioned rolled,oats those are the big ones not the,little chopped quick oats,mix it up one more time,and now i'm going to add in three,quarters of a cup or 170 grams of cold,butter that i had diced into little tiny,pieces i like to do this step ahead of,time and then just keep it in the fridge,for when it's ready to use right now,we're going to do this the old-fashioned,way and use our clean hands to mix this,up and just smush it together you kind,of want to smash the dry ingredients,into the butter,to create a crumbly crisp,so i'm using both of my hands to kind of,smash and slide the butter together,keep it in the bowl though,you could also make this with melted,butter like if you don't want to touch,this very much you're not into that just,melt the butter,pour it in mix it up and set it aside,and then crumble it that works too,okay,so as you smoosh it together you'll see,large clumps forming and once you're,there you're basically done i like to,make one mega clump and then just break,it up into a crumble this is going to be,a perfect crisp topping for my apple,crisp these are ready to set aside,wash those not clean hands anymore and,get your apples out to fill the baking,dish i'll be peeling and slicing ten,small apples that's just under three,pounds you could use a little bit more a,little bit less it's totally up to you,it's a really forgiving recipe so don't,stress about that,today i'm using granny smith apples but,you can use honeycrisp gala really any,eating apple is going to work pretty,okay for this if there are any idle,hands in the house with nothing to do,put them to work on prepping these,apples it'll make everything go super,fast but if that's not the case then,maybe put some music or your favorite,show on and get to peeling,right now i'm filming this video just,before the start of apple season but in,a few weeks i'll be able to go around,some of the older apple trees that we,have and pick and use them for recipes i,like like this i have no idea what any,of the varieties are called though we,just,have these like ancient gnarled apple,trees,left their own devices for decades,so we've been pruning them and clearing,all the invasives around them so they'll,kind of be more productive and happy,and some of them are delicious eating,apples,and then some of them are like cider,apples so they're full of tannins,and definitely not for eating i learned,that the hard way,but they're perfect for making like,alcoholic apple cider with,not,pressed cider if there's any people want to,make,this by the way is a recipe you do need,to peel the apples for because the skin,is kind of tough,okay clear this off and on to the next,step once your apples are all peeled,it's time to cut the flesh from the core,and then we'll slice them up,now we're going to slice our apples into,like roughly quarter of an inch pieces,you want to have a uniform size not for,the aesthetics i grew up in upstate western new york,right on the erie canal and everybody,had an apple tree in their yard which,means i've eaten my fair share of apple,crumble and i have strong opinions on,the topic so i'm excited to share with,you my favorite version which starts,with a ton of apples this is four pounds,of golden delicious apples and to me,good apple crumble has a thick layer of,apples and just a hint of topping now,golden delicious apples are perfect for,crumble because they're available,everywhere they have a really nice,balanced sweet tart flavor and they hold,their shape during baking if you can,find honeycrisp those are my favorites,but they're seasonal and probably a,little regional grey burns are also,another good substitute but whatever you,do don't use granny smith they will,break down to mush all right so i'm just,gonna peel and core them now whenever i,peel an apple it's silly but i try to,get the peel off in one long piece keep,myself entertained while i peel apples,that's not bad let's see if i can do,better,and i still sing the alphabet whenever i,twist off the stem because when you grow,up in apple country whatever letter you,land on and the stem releases from the,apple that is supposed to be the first,initial of who your true love will be,so that's all the apples,now we're simply going to cut around to,the core and cut them up into chunks,that measure about three quarters of an,inch,and you could use an apple corer here,but i don't like them very much i think,they're hard to use and they miss some,of the core cutting around the core is,just much faster,once you cut it around the core you're,just going to break the pieces down,into chunks again that measure about,three quarters of an inch,and that is a lot of apples which to me,is really important for a good crumble,we're just gonna flavor it with a few,things this is two tablespoons of fresh,lemon juice a little bit of sugar not a,lot i don't like really sweet crumbles i,just want to taste the apples so we're,only going to add two tablespoons of,sugar,half a teaspoon of table salt,last but not least three quarters of a,teaspoon of cinnamon,right you want to stir this all up,already smells good,next we're going to put these apples,right in the baking pan and here i have,an eight by eight inch metal pan i know,it's a small look of hand and it's a lot,of apples but we're gonna pack them in,there they look like they're overflowing,the edges of the pan you're probably,thinking where are you gonna put that,crumb topping well i'm going to cover,this with foil i'm going to park cook,the apples so it's going to reduce their,volume until they fall just below the,lip of the pan giving us room for the,topping,and we're going to put this on a rimmed,baking sheet just in case some of those,juices flow over the edges this is going,into a 400 degree oven for about 30,minutes until those apples fall just,below the lip of the pan,those apples have just a few more,minutes in the oven so it's the perfect,time to make the topping now the topping,like i said before i don't like a lot of,it and i care about the texture i like,it crunchy and a little bit sweet but,not overly sweet so we're going to start,with just a cup of flour this is,all-purpose flour and of course you,could measure it using a cup measure i,like to weigh the flour it just is,easier and it's more consistent for me a,cup of all-purpose flour should weigh 5,ounces to this we're going to add some,brown sugar half a cup of packed brown,sugar i keep my brown sugar in a zipper,lock bag oh if you have one of these,it's a little brown sugar keeper but,it's a terracotta a piece of terracotta,that you soak in water and it helps your,brown sugar stay nice and moist for a,long time this is light brown sugar i,pack it into the cup and i use the bag,to help me really press it into the cup,and then i rub the top to make sure it's,flat that's it half a cup of brown sugar,now half a cup of sliced almonds i'm,going to chop them pretty fine,you can use a food processor for this if,you want,into the bowl with the flour all right,just a few more ingredients,two teaspoons of vanilla extract,half a teaspoon of table salt,we're going to add two teaspoons of,water now i know it doesn't sound like a,lot of water but it makes a big,difference in the topping because it,makes it have an extra crisp texture,last but not least we're going to add,butter this is six tablespoons of,unsalted butter that i melted you could,melt in the microwave if you want i like,to melt it on the stove i don't know why,i tend to splatter it all over the,microwave now we're just gonna mix this,together until it's evenly combined and,you'll see it almost looks like a cookie,dough lots of little crumbles,perfect everything's evenly combined,let's check those apples,you can see they've really sunk below,the lip of the pan which is perfect now,i'm just going to press on them slightly,really to foreign,hey guys today i'm sharing with you my,apple crumble recipe this is my secret,crumble recipe so,good it's perfect for this time of year,um easier than an apple pie but just as,delicious,in this bowl here i have one and a,quarter cups of just regular plain,all-purpose flour this is organic,unbleached flour to that i'm going to go,ahead and add in,some brown sugar,we're gonna need a half a cup of packed,brown sugar,need a teaspoon of ground cinnamon,so easy to make,so good,teaspoon of ground cinnamon,didn't measure but,just a teaspoon of ground cinnamon,and we're gonna get mix these dry,ingredients together,now a crumble typically has,you know some sort of fat,to make it crumbly,such as you can use shortening lard,butter is what i typically use because,butter just has a much better flavor and,it works perfectly,i will leave below my link for my mini,apple pies which is what i use most of,the time when i'm making apple pies,because it's easy,it's no fail pretty much and it's,delicious,so we've got this mixed in together here,and now we're going to get over to our,fat now typically what you would see,most people do when making a crumble is,they will cut in their cold,um,fat there's butter or whatnot my trick,what i do i'm going to show you right,here,i'll be back,don't fall,we are going to brown our butter,that is what is going to give this the,best flavor ever,oh my goodness i actually make this when,i do my seasonal baking and i actually,sell my mini apple pies and these are,one of our best sellers,the browning of the butter gives it this,caramel like flavor i'm going to go,ahead over my stove this is a small,saucepan,and we're going to place this on medium,heat and then i'll show you the next,step real quick oh my gosh my stove is a,mess,all right so i have my butter here on a,small saucepan we're gonna wait for this,butter to melt as it melts it's going to,actually become more clearer in color,and then it will become a nice yellow,like a clear yellow color and then from,there it will start to brown you don't,want this to get burnt or anything so,you do want to keep an eye on it it,takes about,i would say,four to five minutes or so for this to,brown,and when this is brown completely you,will start to smell a beautiful aroma,like a caramel like,flavor,as you can tell now it's more of a clear,liquid it is not so it does have the,foam of the butter but the liquid itself,is more on a clear,side i hope you can actually see through,the foam,and then from here it will start to get,golden brown and that's what we're,looking for,you can see the liquid,you can see the color it's a lot lighter,it's definitely more transparent now,you can see through the liquid,obviously not through the bubbles but,once you can see the liquid,it's definitely more of a transparent,kind of liquid,you can see the color is now becoming a,golden yellow color it's perfect,if you get a little bit of brown in,there like i got some brown specks,that's more flavor but you don't want,too much brown flavor,i'm going to turn my heat off i'm going,to leave my saucepan on here for,just a couple minutes the remaining bit,of heat will just continue to brown it a,little bit more while we move over to,our next step,but that is perfect now it's a dark,golden brown color that's exactly what,we're looking for that dark golden brown,color and it smells like caramel i'm,actually going to add in some vanilla,extract i'm going to add in,a tablespoon of vanilla extract,and our one stick of browned,butter,make sure and scrape the bottom of your,pan because that's where you get a lot,of that brown goodness,that is flake bore,oh my gosh this smells so good i am not,even kidding you this smells amazing,oh i just can't,i just can't i just can't it's so good,oh my gosh,if you make this,and you just smell it at this point,before you even bake it,leave me a comment down below,every time i make this i'm not even,kidding you every single time i make,this,i am just in love with the scent that,comes out of this thing i tell you it,smells like a toffee,it's gonna taste like a crumbly toffee,on top of your,deliciously tender apples,oh you know today i want to share my recipe,for the perfect,apple crisp the combination of todd,apples,cinnamon and a buttery crumb topping,is one of my all-time favorites,apple season starts in the late summer,early fall,and today we're going to be using two,types of apples,granny smith that's these guys right,here,they're known for their distinctive,green flesh,but they're known for their tot flavor,now this is certainly an all-purpose,apple that works equally well,as a snack in pies,and it makes really delicious applesauce,now golden delicious,you know who that one is they have a,golden,yellow color now their flavor is,mellow sweet but mellow,this is also an all-purpose which is,great for eating out of the hand,for baking you use these for salads,or also it makes good dishes as well,like stewed down with pork or chicken,and cabbage and apples,it's great when it starts getting cool,outside,and you're looking for a simple,delicious dessert don't go any farther,this is it for you now i started,by peeling and coring about six,seven apples and,what you want to be careful is letting,the apple oxidize,the apple will oxidize if you let it,expose to air it starts turning brown,and starts getting a little bit nasty,a way to prevent that is by adding,acidity,particularly like lemon so we're going,to add a little lemon,which is not only going to be great so,that the apples don't oxidize,but they're going to be great as a,flavoring punch,to our apple crisp now to that,we're going to add sugar depending on,how sweet you want it,see i could go with more but i think,we've got,pretty much enough cinnamon i love,cinnamon and it's also really good for,you,and of course a little cornstarch,now once we have those ingredients,together,in my cast iron pan i have pre-buttered,a beautiful cast iron pan i've actually,had this for a while,because cast iron is such a great,reactor,the heat and you can really get it,really high heat you can do this on,use it on your grill you can you can use,it outside for,for vegetables all different sort of,things it really,keeps the heat so what we're doing is,once that butter starts melting,what we're going to do now is we're,tossing,our apples with the lemon the cinnamon,and the sugar and we're gonna put them,right inside of our cast iron,make sure you get all the juices,now once that starts,heating up the next thing that we're,going to do,is make the crisp topping,so with about four tablespoons of butter,and it has to be cold butter,a pinch of salt brown,sugar granulated sugar,and flour,we're gonna begin to start now we're,gonna use,a pastry this is a pastry cutter,that has little blades if you don't have,this,you can easily just use two forks and,you can get the same result,so what we're going to do now is we're,going to take our pastry cutter,and we're working that butter right into,the flour,and if you want if you're a really big,cinnamon fan,you can always add a little bit more,cinnamon to this as well,so when you have that topping and it's,all cut in,in our apples our apples are coming,up to temp as you can see,and now what you're going to do is,you're going to set your oven,at 375 degrees and you're going to bake,this for about 45,to 50 minutes sprinkle the topping on,top,talk about simple and easy now,we're going to bake this in the oven 45,to 50 minutes and look,it looks like this and it's just,absolutely,incredible to serve,with ice cream with whipped cream,right out of the skillet right there,there's nothing better,than this trust me you'll definitely,want to try it folks,and as always i thank you for watching,see you next time
