book it's so weird to say that,i'm so super proud and a lot of hard,work went into this on page 48 ketogenic,diet on a budget i'll actually give you,the recipe ingredients here um this is,roasted green bean almondine with,blistered tomatoes now years ago in,college i used to work at a small greek,seafood restaurant that would almondine,anything that what nailed down to the,floor they had snap ramen dinner group,ramen dinner green bean almond dinner,squash almondine almonding basically,just means uh a dish cooked in uh butter,and spices and uh topped with slivered,almonds um but it was very popular back,in the 70s and 80s and this little place,almondine everything and so that's the,inspiration for this recipe now not only,are these recipes affordable and,delicious they're also fast so this is,going to be a fairly short video all,right so we're going to start with a,pound and a half of green beans and as,you can see i've already trimmed these,they are ready to go so i'm going to,transfer these to a baking sheet so,here's our green beans we've got a pound,and a half of that and then we're going,to drizzle this with melted butter this,is three tablespoons of melted butter,now,all the recipes in the book uh make six,to eight servings because they're for,large families or for batch cooking for,those of us that just want to cook once,or twice a week and eat for the rest of,the week this is a great way uh the book,is a great way to do that all right so,also to this we're going to add a few uh,spices this is just a half a teaspoon of,salt,half a teaspoon of onion powder and one,full teaspoon of garlic powder not,garlic salt garlic

see you in an hour then don't forget to,bring something,do you forget about the cookout i'll,need to bring something so you don't,look like a,well then let's begin,we don't have time to enter the store,and we are not going to buy pre-made,cookies,because that shows with chumps and we,have certain standards to uphold,so we must use what we have and,hopefully not break anything,as he lays everything on the counter he,thinks he'll need his,eyes and says a small prayer to the,broccoli gods that,this will be tasty nutritious and most,of all done within 30 minutes,he separates enough broccoli until he,has about a pound since this is triple,washed he will forego a quick rinse,he pulls out this trusty cast iron and,to this he cuts bacon slices in half,four ease of management he adds about,half a pound of bacon to the skillet,and this goes onto the stovetop where it,will cook over an indoors campfire,high medium low heat if you don't have,bacon,you can use ham next he moves on to his,onion he wishes it was red but,oh well after removing the ogre-like,layers he dices the onion into medium,pieces,not too large and not too small you,wants to make sure the bacon doesn't ban,so he checks it using his large kitchen,forceps that he purchased from an equine,veterinarian,he flips and rearranges the bacon to,ensure complete dual-sided crispiness,time check you have 17 minutes remaining,he sets his onions aside and purposely,spills his broccoli onto the cutting,board,doing so allows him to place his cut,broccoli back into the same bowl,he proceeds to cut the fluorides into,small bite-sized pieces,so that are easy to eat this is a salad,after all,not an elephant once complete he cleans,and,then using his kitchen shears he pays a,visit to scallion steve,on his new herb ledge he cuts a few,stalks and returns to the kitchen,the very tips of the scallions are,removed and only the tips he cuts his,temps in half and using his favorite,sword,he chops him into tiny bits with another,watchful ear he recognizes that the,bacon smells about,done upon a quick check it is,so he removes it from the skillet onto a,paper towel lined plate,this will soak up any extra baking,grease and prevent the salad from being,too,bacony yes that's the thing as he sets,the bacon aside to cool he fetches a,plastic tub,using some good quality mayo he adds,three heaping spoonfuls of the emulsion,then he fetches his greek yogurt which,happens to be sealed,so we hope it's fresh he adds roughly,the same amount of greek yogurt as he,did mayo,this yogurt is fat free as it's all they,had in the store,for some acidity he adds two tablespoons,of red wine vinegar,he has the all-important sodium chloride,pepper of the black variety,pepper of the red variety and a squeeze,of spicy mustard,the time has arrived for the mixer as it,becomes an even mixture he gives a,blessing from the holy scallion,and mixes it in once it's well,incorporated and the bacon has cooled,he splays out the pork belly onto the,cutting board using the same dirtied,sword from before,he gives the bacon a rough chop,basically he makes real life bacon bits,then he well picks up his dirty spoon,after cleaning his hands he then,proceeds to add the bacon to the sauce,he sets it aside and cleans because,that's,somehow he has managed to dirty a spoon,again,he adds his previously chopped onions,and gives it a good whirl,as any good cook should do he gives it a,taste,success he sets the spoon aside and,checks his time keeper,it's almost go down adding the broccoli,as quickly as he can he then uses a,spatula of salts to mix,dennis continues mixing until all the,ingredients have become best friends and,the broccoli is evenly coated in the,white sauce,you can also add slivered almonds,walnuts or even dried cranberries,but he has nuts he transfers it to a,presentable bowl and covers it with wrap,of the saran,then out the door he goes,comment down below what you would pair,this broccoli salad with and if you,believe low carb food should be healthy,easy and delicious,make sure to check out these other,videos until next time,eat well

what's going on guys we are in the,holiday season and we have a ton of,holiday recipes from desserts to side,dishes on our food blog keto connect net,you can go check those out and today,we're gonna be making a delicious side,dish that you're gonna want to serve at,your holiday parties this year we're,making a loaded cauliflower casserole,fresh herbs bacon cheese and of course,the main star cauliflower so this is,pretty straightforward simple chop,combine bake kind of recipe so you can,make this ahead of time and then pop it,in the oven right before you want to,serve it or you can just make it and,keep it in the warmer and then serve it,when people arrive we have a large head,of cauliflower chopped up into florets,and as you can see my florets are kind,of small because that's how I like them,I want like a bite-size cauliflower but,you can do bigger florets if you want in,the bottom of this bowl there is about 3,to 4 tablespoons of water so what we're,gonna do is we're gonna steam this so it,gets tender so there's multiple ways you,can do it,steam it on the stovetop that's probably,the way most people would do it but,we're gonna go the microwave a little,easier a little less cleanup so to do it,in the microwave we've got our water in,the bottom cauliflower on top and then,we have wet paper towels here which,we're going at to cover and we're gonna,microwave this on high for 5 to 7,minutes and it should come out nice and,fork tender,so as our cauliflower is steaming we are,going to prep the rest of the,ingredients,so we have some fresh chives here we,have some green onions fresh parsley and,then we have some bacon that we've,cooked up and we're gonna chop that and,crumble it up as well if you want to,make this easier you can do everything,dried or just in like ground powdered,form you don't have to do the fresh,herbs but I think it takes it to the,next level so let's get to choppin we,got our fresh parsley and we have some,green onion here which I think will add,a lot of nice flavor and we are gonna,save about half of it for the topping so,let's separate that half right now the,rest over there and then we got our,bacon that we are going to roughly chop,up as well alright so we have our bacon,roughly chopped up,and so we are also gonna save some of,this for the topping all presentation is,always very key so we're gonna add the,rest to our pile over here some here and,the cauliflower is also done so I'm,gonna bring that over so it's very,steamy very hot so be careful that is,cooked looking good,tender and you can test that with the,fork just poke it with the fork if it's,fork tender it's good to go so we're,gonna set that aside and let it cool a,little while we get our base going the,loaded cauliflower cheese base I have 2,ounces of cream cheese room-temperature,that is very key because you want to be,able to mix it in and to that we're,gonna add 3/4 cup of sour cream some,garlic powder all the herbs the green,onions and the bacon that we set aside,two teaspoons of a brown mustard so Matt,here got some spicy brown mustard add a,little kick there but any mustard really,should work we always like to have a,grain mustard like a thick grain mustard,in the fridge it's pretty delicious so,that'll also work great just a mustard,will give it a nice little kick about,two teaspoons and then our cheese's so,we have some sharp cheddar and we have,some Monterey Jack I love a good,Monterey Jack I think it adds a nice,creaminess a nice richness so we're,gonna do half of the amount so we're,going to 1/2 a cup here and then we're,gonna use 1/2 a cup for the topping this,is almost like a cauliflower mac and,cheese but like on steroids because you,got all the fresh herbs you got the,bacon got everything in there we're,gonna just give this a quick mix and,then once we had the hot cauliflower in,which we're about to do everything will,combine really really nicely so let's,pop in our hot cauliflower along with,the water that was in the bottom of the,bowl we're gonna add that as well so,that again that was like 3 tablespoons,of water,you can see everything melting into one,another beautiful oh my god that smells,so good and you know what smell I get,first interestingly is that mustard and,it's really nice mixed with the herbs,and don't forget when you're making,dishes like this like you don't have to,be,exact or precise add more bacon add,onion,I would love some chopped onion in here,some crunch add more cheese and less,cheese whatever your liking so here we,have a 9 by 13 casserole dish we're,gonna spread this in here and then top,it with the rest of the cheese the bacon,and the green onions okay oh my god,that's beautiful this is gonna be a hit,at your holiday parties all right so now,we're gonna do the rest of our cheeses,1/2 a cup of cheddar cheese and then our,bacon and green onion and you can even,set aside some chives and parsley if you,want to like a little more color going,on so everything in this dish is really,salty you got

now I know Thanksgiving is about the,turkey and about the ham but I'm all,about the sides so today I'm going to,show you three of my favorite side,dishes that you can make in less than 20,minutes the very first one that we're,gonna get started with is,it's basically like a sweet potato mash,but we're making it low carb so in order,for this to be low carb instead of using,either sweet potatoes or yams we're,using kombucha squash so I don't know if,you guys have I used to call it kombucha,but it's kombucha squash,um it actually I've already started,peeling one so this is what it's gonna,look like you don't want to keep any of,the green because then it will be bitter,but um we're gonna go ahead and peel our,next one because we are making a big,batch,if you're making it like for the,holidays and you would use two if you,want to make like a small portion then,of course you could just use one but I'm,going to kind of walk you through it,it's gonna be super quick this is,probably going to be the most time,consuming is getting it peeled this is,probably what's going to take us the,longest but it's almost just like,peeling your potatoes or like you know,your your yams okay so we're gonna go,ahead and cut this in half,and we are going to deseed it so as you,can tell there are seeds inside take,these little guys out,foreign,yeah so there are seeds this looks very,similar to Pumpkin Seeds because,I'm assuming it is part of the pumpkin,family,let's just go ahead and finish,de-seeding these little guys and then we,are going to move on to the next step,pretty much,like into chunks again if you want them,in little bite-sized pieces you can do,that I'm thinking this is what's gonna,work for me,they're about one inch squared I like,that okay so now we have everything,diced up we have our hot water and now,we're just going to go ahead and get our,kombuchan,okay so now we're just gonna let this,boil until it's forked tender,so these are now for tender,okay so I'm gonna go ahead and strain,this and then we'll go ahead and prep it,so we're going to start off with a,little bit of almond milk,I'm just gonna pour that in,we have our heavy cream,we have some butter and our maple syrup,so this is our sugar-free maple syrup I,use the one from chalk zero this has no,sugar it's just a much healthier,alternative to regular maple syrup so,I'll go ahead and leave it linked in the,description below,now we're going to use a Masher two,get this all,okay so now we're just gonna go ahead,and play our sweet potato mash before we,move on to our next recipe,okay so now we're moving on to our next,recipe which is probably one of the most,popular recipes during Thanksgiving or,any holiday which is our green bean,casserole now this is not only a regular,green bean casserole,this is obviously low carb but you don't,even have to cook it in the oven this is,actually gonna be made stove top right,here from start to finish so we're gonna,go ahead and add in a little avocado oil,because we are going to saute our onion,and these we are obviously going to cook,them just until they are,nice and translucent,okay and now we're going to toss in our,mushrooms,all right now we're going to go ahead,and add in our heavy cream,we're actually only adding in half the,cheese,we're adding in half of our cheese,because we are going to save some for,the top,we're going to add in a little splash of,almond milk,okay,before we,add in our green beans this is literally,like one of the easiest sides you can,make even for dinner like if you're just,trying to make a quick you know side,dish with your chicken or salmon or,anything like that you can literally,whip this up stovetop you don't have to,turn on your oven it's going to be full,of flavor nice and creamy,literally one of the best I'm telling,you okay now we're gonna go ahead and,toss in our green beans now I'm just,using canned green beans to make life,just that much easier but if you want to,make it from fresh green beans then the,only difference is that you would,actually have to kind of saute and cook,down the green beans and not cook down,but cook the green beans I would just,saute them with a little bit of oil some,garlic,um maybe even a little onion just until,they're forked tender and then you would,just continue this process but,I mean a lot of the green bean,casseroles out there are literally made,with canned green beans so if you're,okay with that then look at this it's,like literally one of the quickest,things you can ever make so I'm adding,in a little garlic powder,some onion powder,and then we obviously cannot forget our,salt and pepper,and then of course we're going to do,some salt,let's give it a good mix,look at that and now to finish this,recipe off I'm just going to top it off,with a little more cheese of course this,is not only optional but you're gonna,add as little or as much as you want and,now to finish it off we're just going to,top it with our crispy little onions,and like for me personally I think

what's going on today guys we got a,really cool video for you today a little,bit different than what we usually do we,got two recipes and they're pretty basic,these are recipes we make every night at,least once a week we make each of these,recipes so these are side dishes,typically for dinner we make some kind,of meat like salmon steak something like,that and then a side dish one of these,so the first one I'm gonna be making is,going to be broccoli mushrooms flavor,would be the third ingredient I would,say you got some garlic you got some,shallots you got some lemon kind of like,a fresh take on this a big common thread,throughout all the side dishes I make is,like you just had a lot of butter at the,end we're gonna start we got a pan,heating we're gonna be using this,10-inch,Dutch oven and it has a lid lid it's,pretty crucial when you're cooking,broccoli because you want to steam it so,to start this recipe we're gonna get the,broccoli in on high heat with a little,bit of water and just to steam the,broccoli so it cooks through and then,we're gonna add the rest of this good,stuff make it flavorful so just dump the,broccoli and this is probably like six,to eight cups worth of broccoli dump,that all in and then I'm just gonna add,about a cup of water pop the lid on so,while that is cooking I'm going to chop,up some garlic and some shallots and,we're going to be using these and we're,gonna be using these in both recipes so,one shallot each and then probably like,four to five cloves of garlic in each,recipe depending on how big they are and,I must say the fresh chopped garlic,tastes a lot better than the minced,garlic wouldn't you say yeah I'm gonna,get like probably eight cloves total for,the two dishes here looks really weird,I'm gonna use it anyway it's like a,green potato chip kind of I just cut,them into slivers I don't get too crazy,with like smashing it and winsome,whoa look at him it's all green in the,inside okay so I'm gonna leave it,uncovered so some of the water can,evaporate honestly I used to be when I,would do like garlic and shallots and,stuff and broccoli I'd be a lot more,conscious of how many carbs the total,dish was but these days I honestly don't,really count them that much like I just,put as much garlic and shallots as I,want as much as tastes good to me and,I'm cool with that,most of my carbs for the day come from,the side dish I have with my dinner so,like this dish here my serving would,have like what like probably like 30,total cars maybe like 12 to 15 net carbs,something like that so these are looking,pretty good typically I'll do like a,fork test and see I'll try one of the,root pieces like yeah that probably,still has another minute or two to go,this is a good time to add in all the,other good stuff you want to add I'm,still gonna hold off slight no I'm gonna,add the butter at this point I'm gonna,add the mushrooms the onions the garlic,and the butter save the lemon juice so,we're going in with one shallot we're,going in with half the garlic I'll give,mega the green one we're gonna go in,with some butter so typically for this,size portion I'll do like four,tablespoons or so half a stick of butter,pop that in the microphone Asuza NIT,salt and pepper we got these cool,automatic grinders and feel free to add,whatever other spices and herbs you want,to this sometimes I'll add like some,tumeric sometimes just some onion powder,garlic powder if I want extra flavor,yeah you can top it with hot sauce yeah,so I just kind of like mix it around and,let it finish cooking and then I'll take,it out when the butter is melted,basically I'm gonna add half of this,this is shiitake mushrooms sometimes we,do like baby bella mushrooms or whatever,we find at the grocery store okay so,this is completely done fully cooked,through the broccoli I like my broccoli,like pretty well cooked and the last,thing I'm gonna do is add the lemon,juice so we're doing the juice of one,full lemon and even if you're not a big,lemon fan because mega hates lemon but,when I did this she was like whoa the,lemon makes it so much better yeah so,that's about good that's it guys all,right guys now it's my turn and I'm,really happy that Matt's let me do this,one because this is my favorite of the,two it's Matt's two so he had to do the,least fun one but we're going to be,doing some shaved Brussels sprouts and,bacon for this side dish this is so,delicious you're gonna have to make this,at home and as you saw Matt cut me up,some garlic cloves and a shallot so,that's good to go this is also just two,servings this is something Matt and I,will split and this is a 12 ounce bag of,Brussels sprouts and then we usually use,about two slices each so four slices of,bacon in total,we love the shaped brussel sprouts,because it really just soaks up all that,bacon fat it cooks down pretty quickly,so it's also like a super quick side,dish and behind me I have the Dutch oven,heating to medium-high we're,doing our survival guide to the holidays,quito style we wanted to share a couple,actually six of our favorite side dishes,so that you can be quito throughout the,holiday season,so our first side dish that we would,recommend making is one of my favorites,it's creamed spinach and it's basically,frozen spinach and you make a little,sauce with heavy whipping cream garlic,and cream cheese to thicken it and then,you add like the drain of frozen spinach,into the pan and you mix it all together,you can't onions in it too just a little,bit onion okay are you looking at me,like that alright he's starting okay,ignore him,so creamed spinach is our first,suggestion do I have to do that over,again no so what is one of your,favorites to do so one of my side dishes,I make all-time is just simply some,Brussels sprouts with some bacon mm-hmm,and you pretty much you can do it,multiple ways but one way is to just cut,the Brussels sprouts in half oil olive,olive oil pepper salt some garlic powder,and throw some bacon on there and put it,in the oven at like 400 you gotta watch,out because they can burn they can go,from like cooking a burning within like,a minute so just you know keep watching,them and I think it takes a while though,it takes like 20 to 20 good minutes to,get a nice you want like that nice a,nice crisp on it yeah and then you can,like you can turn them over and put them,in a little bit longer but that's one of,the ways to do it another way is to take,and boil the Brussels sprouts a little,bit I've heard about them and then you,drain them out really well put them on,the sheet pan and you can take like a,glass and you can imagine yeah make them,and smash them so that they get like,brown and all this size another kind of,good little Brussels sprout pancake if,you will and you can use Parmesan cheese,on top of that so they're pretty,versatile there's plenty of different,ways to cook brussel sprouts but that's,one of my go-to side dishes of course I,think that most people would say that,like mashed potatoes are very much,missed during the holidays if you're on,keto so of course we're gonna talk about,cauliflower mash,and the way I make mine is as I roast my,cauliflower just put it on a pan cut it,into pieces roast it with salt pepper,tossed in olive oil at like 400 degrees,until it's nice and light golden brown,and then I put it in a food processor,with all of the ingredients like heavy,whipping cream sour cream and you just,get any like pulverize it for I do a,vine for about 20 minutes so it's more,about like yeah it's like really long,time it's like there's no granules in it,left anymore is just it tastes more like,a puree but it really really gives you,that mashed potato feel and roasting the,cauliflower are probably helps it adds a,nice texture so what kind of I'm like,the smell that cauliflower has it's like,kind of sour sometimes I think that the,more that you cook cauliflower the,better and almost more you extract the,taste yeah yeah you could just make it,into whatever you want once you like,cook it and make it all nice and golden,brown,mmm that's one of my favorites so what,about you okay so my next thing also,includes bacon maybe I should not have,bacon but it's pretty much you take,either green beans or asparagus and you,wrap like a little bundle if you will a,bundle of joy just wrap it in bacon and,you put them in the oven it was,you know salt and pepper and you know,leave some space and the tinks you,wanted to get you know really hot and,crispy but put them on a baking pan,baking sheet put them in the oven for,like 400 425 and keep an eye on them and,you just get these little bundles of,perfect serve and enjoy yes you can also,probably do like a hollandaise or other,type of dipping sauce yeah a drizzle of,something on top of there it would make,it lovely yeah and it they look like you,two they just look presentable right,cause they're like a little tiny,individual so yeah yeah low part gets so,the next thing it's gonna sound like,almost stupidly simple but when I made,this for Thanksgiving a couple years ago,it was like people ate it so fast and,they're saying how delicious it was and,it was like it's broccoli roasted,broccoli with some onion chopped onion,tossed in olive oil and just like garlic,and then lemon on it and there is,something that that magical happens that,when he roasts a lot of these vegetables,people just like can't get enough of,them so I would say if you're in a pinch,for time this literally takes like two,minutes to prepare at the end you squirt,like lemon juice all over it and it's,got like that acid making it to it,people the whole thing was gone I didn't,even get to try it so they were all,talking about how great it was it was,literally the simplest thing so,sometimes simple is b
