hello everyone and welcome to lounging,with lenny my name is lenny today i will,show you how to make chicken scalopini,so stay tuned and make sure to watch the,video to the end and as always enjoy,scallopini is an italian dish that can,be made with chicken veal or beef and,today i will show you how to make,chicken's jalapeno iphone or chicken's,jalapeno with mushrooms,first let's prep the ingredients take,one garlic clove and mince it,please subscribe to my channel press the,bell press notify me to get notified,about my new videos,take half a shallot and chop it fine,chicken scallopini is very easy to make,it will take you less than 30 minutes so,it's a great everyday dinner recipe that,your family and friends will enjoy,8 ounces of creamy mushrooms also known,as baby bella,and slice them,take one fourth of a bunch of parsley,remove leaves from stems and finely chop,it,it's a great italian dish that can be,served over pasta rice or mashed,potatoes or any other side dish of your,choice,take two chicken breasts,slice them in the middle,and cut them in half,lay chicken breasts down on the board,cover with plastic wrap or bag and with,a flat side of meat tenderizer pound the,chicken breast,make sure not to skip this step this way,the meat will be tender and chicken will,cook evenly,pound them from both sides and transfer,it into the plate,take one-third of a cup of all-purpose,flour,season it with salt and black pepper,to season the flour is very important,step when we dredge chicken medallions,the salt and pepper will stick to it,make sure to shake off all the excess,flour,so,put it on the sheet pan and put it aside,preheat the pan to medium heat pour some,olive oil,and now it's time to sear the chicken,sear it until it's golden brown in color,total time about 3 minutes,transfer it into the sheet pan and put,it aside,make sure not to wash the pan after you,sear the chicken that's where the flavor,is so you need to use add two,tablespoons of butter and make sure that,it's unsalted butter when i cook a bake,i never use salted butter because it's,harder to adjust the seasoning later on,add shallot,garlic,saute it for about 30 seconds,and add mushrooms,let the mushrooms saute for five to six,minutes,and pour one cup of dry white wine,reduce about 70 of it,add half a cup of chicken stock,juice from half a lemon,season it with salt and pepper,and place the chicken in,on a medium-low heat let it cook for one,and a half minutes on each side,you can tilt the skillet towards you and,pour the sauce over the chicken,pour 1 3 of a cup of heavy cream,flip the chicken over,let it cook for additional one minute,and sprinkle with chopped parsley,and my chicken scallopini is ready,please enjoy,you

Today we're gonna be making this delicious Tuscan chicken.,Welcome back to our kitchen where we show you how to make delicious family,friendly recipes. Packed with flavor my delicious Tuscan chicken in sun-dried,tomato sauce is rich creamy and totally moorish. We're starting by preheating the,oven to 160 C or 320 F, and then we're going to coat the chicken breasts. Whisk,a large egg in a shallow bowl, in a separate bowl mix together three,tablespoons of plain all-purpose flour, a quarter of a teaspoon each of salt and,garlic salt and half a teaspoon each of black pepper, oregano, thyme and paprika.,Heat 2 tablespoons of olive oil in a large frying pan on a medium to high,heat, dip the chicken breasts in the egg and then dredging the flour mixture,place the chicken in the pan and fry on both sides until golden.,Now we're going to take the chicken out of the pan and place on a tray and then,we'll place in the oven for 10 minutes to finish up cooking while we make the,sauce.,To make the sauce we're going to add a tablespoon of olive oil to the same pan,and heat over a medium to high heat, add a sliced onion and cook for three to,four minutes until they start to soften,,now add two cloves of minced garlic, 1/2 a teaspoon of oregano, 1 teaspoon of,paprika, 160 grams, or a cup, of sun-dried tomatoes, a red bell pepper that's been,sliced and a tablespoon of tomato puree or paste, cook for 2 minutes stirring,gently. Pour in 90 mil, or 1/3 of a cup, of white wine, allow to bubble for 2,minutes then add in 240 mil, or a cup, of chicken stock and a pinch of salt and,pepper. Bring to the boil and then simmer for 5 minutes.,Add in 90 mil, or 1/3 of a cup, of double or heavy cream, 50 grams or half a packed,cup of grated Parmesan cheese and 90 grams or 3 cups of baby spinach. Stir,everything together and cook for a couple of minutes until the spinach,starts to wilt. By now the chicken should be cooked, make sure it's not pink in the,middle, and then remove the chicken from the,oven and add the chicken to the sauce, and cook for another couple of minutes,then top with a sprinkling of fresh parsley. Serve this delicious Tuscan,chicken with potatoes pasta or just a big hunk of bread to dip into that,creamy sauce. - Chicken cacciatore is all the comfort.,Now, there are so many versions,of this beautiful hunter-style, Italian dish,,and mine is easy and absolutely delicious.,Braised chicken with mushrooms and peppers,in an herby tomato and wine broth, a family favorite.,I'm Suzy with themediterraneandish.com.,Let's get this party started.,(upbeat music),So, you guys, when I season my chicken,,I just love to make sure that,every bit of it is well-seasoned,,and so I like to lift up the skin,and make sure we get underneath with some of the seasoning.,We're gonna go ahead and season the chicken,with some kosher salt and black pepper.,So, we're gonna just head over to the stove,and cook this party in one big pan.,The first thing we're gonna do,is grab a nice big braiser or pan like this.,You need a lid later on,,so just make sure you have one of those.,We're gonna turn the heat to like medium-high-ish,,and we're gonna heat up a little bit,of good extra virgin olive oil.,We're gonna warm up the olive oil until shimmering,,but not smoking.,I'm gonna start with the skin side down first.,(oil sizzling),Sizzle! Hi guys, right I'm gonna show you one of our brand new dishes on the new menu at,Jamie's Italian across the whole country. It's one of our best sellers currently,and you guys, you love your chicken and I like to love you back by giving you,amazing chicken. So none of this sort of indoor reared chicken right we only have at,Jamie's Italian the most amazing free-range chicken. This is from Devon,and that'll be the same chicken in every single restaurant beautiful free-range,from Creedy Carver. Lovely family farm and they're really beautiful birds.,We marinate them, always in bay, rosemary, garlic and a little lemon zest, a little,oil and they normally get marinated at least a day before so you get that,flavour inside. So we've got a beautiful chicken breast here and a little wing,bone and we use the legs for a different dish. But over there is the lovely Andrea,Hello!,Andrea just cook me one of these please. So if you watch Andrea now,he's gonna pick a nice breast, he's gonna place it skin side down on,the grill. Now there's a method of cooking that what you always do at Jamie's Italian.,Now look at what he's gonna do. He's gonna pick that plate up and,that plate is scaldingly hot. So this chicken will get cooked from both sides.,Look how he did it. So strong.,So it's a really nice method. We always cook our grilled meats like this.,It's called Al Mattone which means under the mallet, under the brick.,And it's an old method of cooking over fire where you put your,cut of meat 'schhh' and then you pick up a hot rock 'schhh'. So if you imagine that it's cooking,from two sides. So it's gonna cook quicker, it's gonna be more juicy and,it's gonna tenderise a little bit and it's going to make more surface area for,crispy skin. Yes! It's gonna cook nice and quickly about,four or five minutes so let's make the sauce. The sauce is called, we have a few,chicken dishes. The one I'm going to do now is Chicken Pizzaiola.,Which is kind of like a pizza sauce right which sounds a bit odd but go with,me right. It's a real classic. We're gonna start in a pan, a little sauce with,garlic, olives, capers, oregano and this amazing chilli from Calabria and it's,really, really special. We source that especially.,And the chillies from Calabria, they've got a warmth but there's a sweetness and,fruitiness to it that just makes this whole dish.,So every time a chicken dish comes on in Jamie's Italian that goes on fresh and,then we make this sauce to order. So we're going to slice up our garlic.,We'll go in with a little oil.,This sauce is always made to order. Chicken grilled,nice and fresh. Simple dish but big flavours. In with the olives and the capers.,I'll get a little teaspoon of Calabrian chilli. The colour that comes out,of them is phenomenal and you know, it makes it a little bit spicy.,In with the oregano. All these people are getting excited about piri piri,chicken if you want to try like Sicilian style piri piri, much better. I'm telling,you this is the way forward. So we go in with a little swig of,vinegar and then a nice passata. Look at that. How we doing on that chicken?,Ready chef!,So look, just have a look at that chicken. What you'll see is the skin is crispy.,Let's serve it up. When the chicken comes off the grill we let it,rest for a little bit. We're going to go in with our wonderful pizzaiola sauce.,It's delicious. I'm then going to take the chicken and,I'm going to slice it.,And then I'm just gonna open it out on the plate look at,that guys. And then just a few little bits of lemon dress rocket.,Just a few little bits in and around. Look at the colours! Guys, guys! Look at the plate.,Really nice, simple dish. Humble. hey guys the Bombay chef miRNA nom de,and welcome to get carried when we talk,about cooking techniques pan searing is,one of those that takes chicken so,completely different level and with the,combination of garlic basil and olive,oil,you're in for a short read today let's,make a simple restaurant style meal,which is called pesto chicken so let's,get cracking,the first step is to get a pesto right,which is an Italian sauce made out of,basil leaves so the first thing is I'm,taking the basil leaves in a grinder to,this the next thing that goes in and,some cloves of garlic followed by some,cashew nuts I'm using cashew nuts,because they are economically viable and,easily available in India but,nevertheless the original recipe calls,for pine nut the next thing that goes in,is Parmesan cheese will grate this,to bring out the flavors and to season,the sauce a little bit of salt add,lesser because the parmesan already has,salt and with that a little bit of,pepper to grind this I'm going to use,some olive oil and this is a sauce that,does not use water at all grind this,into a fine or a coarse phase depending,on your choice with this a basil pesto,is ready and this is traditionally made,in a motor and vessel now that's ready,let's move on to prepping the chicken,I've taken a breast of chicken I'm going,to trim all the fat the next step is to,retain the shoulder bone and trim all,the meat around it this step is,classically known as frenching the bone,however if you're not comfortable,keeping the ball you can remove it off,from here or alternately use boneless,chicken the next step is creating some,gashes instead of creating gashes like,we always do I'm going to cut them in a,crisscross pattern so that eventually it,looks nice on the plate with this a,chicken breast is ready let's process,the other pieces similarly,all these trimmings can be used for a,nice and simple stir fry so do not,discard this now that the chicken is,trimmed and ready let's begin marinating,it to this I'll be adding in a basil,pesto and along with this some salt and,some olive oil give this a nice mix make,sure the pesto is rubbed into each and,every gash and crevice and allow this to,marinate for a minimum of 30 minutes the,chicken has marinated for 30 minutes,let's now begin pan searing it for that,I've taken an iron pan in which I'm,adding very little of olive oil again,let the oil be minimum because the,marination already has a lot of oil the,next thing is to place the gas side in,oil and allow it to pan clear increase,the flame and allow it to pan sphere on,high flame for 2 minutes trying to give,this a flip,allow this to pan sear on the second,side as well for 2 minutes and while,doing this let's put in the remaining,sauce,this step is technically called basting,and keeps the meat nice and juicy at,this stage we need to lower the flame,tint the pan and throw the oil on the,chicken piece,once this is done on low flame itself we,need to cover this and allow this to,cook for 10 to 12 minutes,generally in restaurants at this stage I,plunge it into an oven at 200 degrees,for 12 minutes again let's give this a,quick check you serve this with I'm just,going to use some cherry tomatoes cut,these into random halves like so and you,can also retain a few whole ones,increase the flame turn the pan on one,side and show in the tomatoes once this,is done off goes the flame and let's,begin to serve and finally some fresh,leaves of basil with this your simple,restaurant style chicken pesto is ready,to try pesto pasta check the link in the,description box below and while you're,trying this wait for what makes the bomb,bishop gets into your kitchen,also do not forget to like and share our,videos and subscribe to get carried
