you have to knock them all,over go to the back because they're,going to be the freshest ones,bring your water to the boil that means,that there's bubbles take it off so they,subside look at the water there's no,bubbles here guys it's just poaching,poaching is not boiling boiling will,smash the eggs all around pokestar,gentle,my egg you crack it into there,and you just plop it in,and if you have lovely fresh eggs you're,gonna win most the time,some people say put some vinegar in the,water,really why,yes it does firm up the egg but it,tastes like vinegar so what i would,suggest don't bother as far as cooking,is concerned roughly around three,minutes is going to give you a softish,egg then it's down to you to use your,noddle so get in there,so i'm just touching that you want it to,kind of feel like a lovely fresh springy,mozzarella,a nice little poached egg,it's cooked to perfection,so there you go a basic poached egg on,toast,if you haven't got fresh eggs i do have,a few little tips first up if you spin,your spoon,around in the pan like this and then you,get your egg and plop it in the middle,if you see the inertia of that water's,wrapping it around the yolk so while we,cook that i've got some lovely asparagus,here now i've dressed it with a little,oil a pinch of salt a little lemon juice,if you look in here now it's kind of,cooking quite nicely you can see how,it's just wrapped around,so let's have a little look here let's,bring that up you can see it's more,pouchy now,so look on the asparagus,i'm just going to season it with a,little salt a little pepper,of course this,recipe comes from this book jamie's,america it's one of my favorites i think,the recipes are absolutely incredible,and in this recipe of course we're in la,we're in east l.a with the mexican,communities i spent a lot of time in,east l.a,on different jobs working in schools and,different districts,met some amazing people this tortilla is,a homage to them it's so simple i love,making this for like two to four people,i get a bunch of plates and i just put a,couple of things in the middle of the,table first up let's just slice up some,tomatoes,salt pepper,coriander leaves,and lime,a few fresh chilies,so that's the tomato part,then we're going to go on to the avocado,part now avocado can depending on the,variety start oxidizing and discoloring,and the thing that will stop that,is citrus,especially lime so just a little squeeze,of lime juice a light seasoning you can,finely slice it if you want,and then you can just push it down just,to make it look nice,i'm going to use some wheat tortillas,here reheat these i've got a little,planter here or in a dry pan non-stick i,don't want them crispy i just want them,bendy and warm really important pan,on to a medium-high heat,we're going to do some eggs we're going,to add spring onions or scallions i saw,variations of these eggs in the states,and with the mexican communities i,really love this method,manchego cheese so i'm just going to,grate about a heap tablespoon that's for,seasoning if you wanted to,you could just get your knife and do,little nuggets of manchego and they,won't fully melt completely until you've,finished so you get little bombs of,cheese in your scrambled eggs,these eggs from my chickens you can see,they're all different sizes and that's,what happens when you've got chickens,because they're different ages six eggs,will probably be enough for four people,actually having a few ribbons of yolk,and the white is quite nice so that kind,of loose,whipping like that is absolutely cool,i'm gonna use just a tablespoon of oil,and just a little bit of butter in we go,with the eggs,right now i love to use a spatula for,this really important there's these,lovely little sheets,in here so literally i'm going to take,it off the heat now because i'm reading,the temperature and i don't want to,overcook it so we want sheets and,undercooked if it's cooked in the pan first recipe is easy okonomiyaki this is,called tombayaki in japan it is easier,and simpler than making okonomiyaki and,of course so delicious,first shred cabbage,it's going to be cooked in pan add oil as needed,since pork belly contains a lot of fat i,don't add oil,when it gets soft,add pork,sprinkle salt and pepper on both cabbage,and pork,cook until the fat part is crispy,in the case of pork loin or anything,else,as long as it's cooked through it's okay,mix pork with cabbage,remove from pan once,next make egg mixture,add sugar,and milk,mix like cutting the white,oil the pan,and put all the egg mixture into the pan,when the eggs are slightly cooked place,cabbage and pork on top of eggs,and roll up as if making an omelette,i'm not really good at rolling up this,egg but it's fine,just put it on the plate as you roll it,on and you're good to go,finally put economy sauce if you don't,have this prepare an alternative sauce,as i like,when you want to make organic sauce with,winstashia sauce,mix 1 tbsp dashia sauce 1 tbsp ketchup,and one teaspoon sugar,mayonnaise,dried bonito flakes,and ornery dried green seaweed,these toppings are the same as,okonomiyaki,you really should try this easy,okonomiyaki with eggs as the main,ingredient,might be better than okonomiyaki,next one is crispy fried egg,you'll be shocked how easy and really,delicious it is good thing about this,recipe is you need only egg and,breadcrumbs,you can use leftover bread crumbs,first spread a 1 to 2 tbsp bread crumbs,on a deep dish,crack an egg on top of it,sprinkle breadcrumbs to cover the egg,let's sit for 10 minutes to blend the,breadcrumbs into the egg,deep fry it for two minutes on each side,be careful not to break the yolk when,adding it to the oil,once in the oil,never touch it the ingredients are all evenly,distributed and it helps to cook the,eggs a little faster and more evenly now,I'm just scraping down the sides rest of,the cheese gets sprinkled on top that'll,Brown really nice under the broiler and,under the broiler it goes some people,bake their frittata I like a really nice,Brown top so I cook it the entire way,under the broiler the only variable is,if and when I turn the broiler from its,low setting to its high setting there is,no big mystery about when it's done it's,done when the eggs look solid when they,don't seem to be sloshing around if you,give the pan a little shake this was,looking almost done after like two,minutes and it wasn't as brown as I,wanted so I turned the broiler on high,a minute later here it is that top will,visibly puff up a bit when it's done and,if you're still not sure you can just,touch it it should be soft but bouncy if,it's still liquid inside it'll feel like,it it'll feel squishy like a water,balloon let it cool down and solidify,for a few minutes before you take it out,a good way of checking whether or not,it's stuck to the pan and indeed to,release it from the pan if it has stuck,is just to shake it back today we're in the test kitchen making,our favorite egg dishes eggs are life I,will eat eggs any time of day and be,happy good for breakfast lunch or dinner,you're able to achieve just this,incredibly diverse range of textures you,can fry an egg you can poach an egg can,be rolled into an omelette what can you,not do with a good egg,that's awesome I would pretty much be,lost without eggs,one of my favorite egg dishes is a,French omelette it's just eggs and,butter and you finish with some salt,maybe some herbs if you want at the end,the technique of the French omelette,it's it's delicate and it takes some,finesse and it's something I've made 100,times you know a thousand I mean my God,I mean more than 100 times something,I've made a ton of and it should be nice,and custardy and silky on the inside and,the outside shouldn't have much color if,at all I shouldn't have any color to be,honest so before I start whisking the,eggs I like to just portion out a little,bit of butter I'll put it in the pan I,use a non-stick pan it's probably the,only time I do use one I only take it,out when I make,fancy French omelets like today and then,when it comes to mixing your eggs into a,nice pale uniform consistency I use a,fork the Whisk tends to aerate a bit and,whip in bubbles into your egg which will,give you a much different consistency,take you away from that smooth velvety,custardiness and more of like you know,Aunt Susie's scrambled eggs you do want,to incorporate them really well I don't,want it to be marbled you want just a,really consistent uniform color,then we'll go check on our butter our I,don't want it too hot you know if I was,on a higher temperature I'd have walked,away we'd have brown butter we'd be,wasting butter we'd be doing this again,oh here we go,add it right in scrape your bowl nice,what I like to do when you make an,omelet is you kind of we can even start,right now you can start to swirl the,center you know start to cook that Mass,not gonna lie is a little bit of a,challenge and we're going to be able to,hide that or call that the Philly flip,in the Oyster world where you can hide,your mistake but now watch we can just,get a little flip on you're,gonna get just like anything so make,some omelets,today I'm gonna make a sort of like,chorizo stew what I love most about,baking eggs is that it's such a slow,cook I chose to go the shishuka-esque,route just because I really appreciate,that sort of like tomatoey onion peppery,stew that you're cooking your egg in I,think that imparts such flavor so I have,my cast iron skillet here we're going to,start with sauteing our onions you want,to saute them until fragrant this is,Mexican chorizo it's made with vinegar,and chilies rather than the Spanish,style which is more spice with like,garlic paprika giving it that distinct,brick color we're getting back in,shishuka land we're going to add our,freshly chopped tomatoes not that,there's anything wrong with canned,tomatoes but if I have these around I'm,always going to use fresh I'm adding,garlic powder and cumin a little bit of,salt so it's looking Stewie I think,we're ready to add our chicken stock I,want the eggs to really try to absorb,some of that moisture rather than just,be sitting on something it has come to,the point where I'm feeling the,consistency see we're getting that,shishuka likeness,that's hot and now I'm ready to crack my,eggs,there's no need to make a well with,these eggs what we're looking for is to,keep that white intact so I don't really,want to create a situation where there's,room for it to seep into the stew I have,my oven on at 4 25 this is going to be,done relatively quickly,it's looking exactly the way that we,want it to you have that sort of like,set white but you can clearly see that,the yolk is so very much intact the,Cotija is going to lend more of that,milky salty flavor where the cilantro is,going to give us a little bit of a fresh,moment so this is my shishuka inspired,chorizo baked egg dish it's looking,really decadent,you have these other elements that,really bring out our star which is the,egg the egg is tender the egg is still,runny but it really works here with all,of those other like really big fl
