what's a better crowd pleaser than a,casserole i've got five cheap and easy,casserole dishes to feed your family,that won't break the bank we'll start,out with some family favorites you gotta,have some good chicken casseroles that's,probably the most popular and this is,one of my favorite it is king ranch,chicken casserole this recipe starts by,making the saucy layer with our favorite,canned soups this says cream of mushroom,and cream of chicken we're going to,start by combining those in a bowl along,with some rotel and a little bit of,chicken broth this recipe calls for two,cups of chicken broth i like my sauce,really thick and rich so i'm gonna cut,that back to about three quarters of a,cup to a cup of broth it's really easy,to make these sauces from scratch on the,stove and that's the way i typically,do it however the biggest benefit from,using the can is how much time it saves,the sauce came together in less than a,minute now we'll start our layers you'll,want to lightly grease your casserole,dish place down half of your tortillas,and half of your chicken then we're,going to sprinkle on top bell pepper and,onion i'm using a poblano pepper instead,of just a green bell pepper i think it,adds a little more pungency and they're,still super cheap on top of our onion,and pepper we're going to top it with,half of our cheese and then on top of,that we'll do half of our sauce and,we're gonna go on with more tortillas if,you need to cut your tortillas to fit to,your casserole dish that's totally okay,more chicken more peppers more sauce and,then cheese last and then finally we're,gonna give the top a sprinkle of chili,powder and i'm using garlic powder just,to add a little bit of punch to that top,cheesy layer and we're just going to,bake this at 350 degrees for about 30 to,45 minutes or until everything is golden,and bubbly everything in here is already,really cooked so we just need it to all,kind of come together oh my goodness,this,is piping hot and smells amazing king,ranch is the king indeed like the saying,goes all good things are worth the wait,so,like any good casserole we need to wait,before we get into it you want,everything to kind of resettle and come,together so we'll let it sit for about,10 minutes before we serve it up my,mouth just started watering i love to,serve it just like i would enchiladas or,something like that with some chopped,tomato,a sprinkle of cilantro,maybe a little,dollop of sour cream and then serve it,with some avocado maybe some tortilla,chips this is so creamy and definitely,indulgent,this has to be one of my favorite lazy,man dinners that you can have it's kind,of like enjoying an enchilada without,all that hard work just one of those,things that made me happy you definitely,need to give the king ranch a try don't,blink because this next casserole comes,together so fast you're not going to,know what happened but i had to include,it because it's one of our most popular,this is a cheesy chicken and broccoli,casserole we'll start by combining three,cups of cooked chicken with two cups of,cooked broccoli and i'm actually using,about three cups because we like,broccoli and anytime you can incorporate,more veggies why not to that i'm going,to stir in the 2 cups of cream of,chicken there's plenty of salt in the,cream of chicken as well so we only need,to add some pepper and then we're going,to stir in some sour cream another,benefit to using the canned soups not,only is it a time saver but it also can,save you money because you don't have to,buy the cream and the butter and the,flour and whatever seasonings to make,this mixture yourself keeps things easy,on vacation casseroles with cream of,anything was very popular when i was a,kid this is definitely something my mom,would have made now to take this over,the top and add that texture you know,for that perfect bite we're going to,combine one and a half cups of bread,crumbs with some melted butter and,sprinkle that on the top of course if,you wanted to keep this low carb just,leave that off this is gonna be so good,i'm using a panko bread crumb because i,love that extra crunch it provides this,one's gonna bake at 375 degrees until,it's all gooey and bubbly about 30 to 35,minutes,look at this this one's definitely a,no-brainer your family will love it you,can customize it to your taste so bubbly,creamy on the inside crunchy on the top,one delicious thing you could do is,serve it over a hot baked potato or just,simply with a side salad and maybe some,crusty bread or just over regular rice,or cauliflower rice i just love a good,casserole,to be honest something like this is,really one of my guilty pleasures i wish,my favorite food was something healthy,but it's just not now that we i'm gonna whip up sour cream noodle bake,it's an old-fashioned recipe it's real,meaty and cheesy and my husband and kids,love it now i've got two and a half,pounds of ground beef that's all brown,now normally i would drain off all the,fat after this but there's hardly any,fat to drain so that's convenient for me,now into the beef i'll add two cans of,just regular tomato sauce,then i'll add a little salt and pepper,and then just to give it a little kick,i'll add some crushed red pepper not too,much,okay now i'm going to let the sauce,simmer now i have a pound of just,regular old egg noodles,they should be ready,so i'll just drain them into a bowl,it's a really great layered dish,really simple but still lots of things,going on,okay,now i'll just add some creamy stuff to,the noodles first about two and a half,cups of just regular cottage cheese and,if you think you don't like cottage,cheese don't worry you won't even know,it's in there i promise,and then i'll add a good cup of sour,cream,some salt and pepper,and then part of what makes this so,delicious i add a good amount of green,onions the green onions just add a,really nice tang a really deep flavor,and because the noodles are hot it sort,of melts the creamy mixture,all right the creamy mixture is totally,coating the noodles so now it's just,about assembling it,i'll start with a quarter of the noodles,i'm doubling the regular recipe so i,have to keep track of the amounts i have,just throw about a quarter in there that,looks good,and i'll smooth them out,and then i'll just ladle a quarter of,the sauce over the noodles,the original sour cream noodle bake,recipe calls for just combining all the,sauce and all the noodles together but i,really like layering it because it keeps,the elements separate and then every,bite you get you get a little bit of,cheese a little bit of creaminess it's,really nice,and then i'll top this layer with some,grated sharp cheddar cheese and i grated,this myself i like the consistency of,cheese you grate yourself rather than,the pre-graded stuff,okay now on to the next layer,now i'll top the final layer with more,cheese,okay now these are all assembled i'm,just going to let them cool and pop them,in the freezer and then they'll be ready,to throw in the oven whenever we want,them,the guys are having a big morning of,working cattle over on tim's ranch today,and i'm making them a rib sticking,ranch-style lunch they are gonna be,hungry when they're finished,to go with the ribs i'm making twice,baked potato casserole it's pretty much,everything that's wonderful about twice,baked potatoes but in casserole form now,of course twice baked potatoes in any,form have to have bacon so i fried up a,bunch,and i just need to chop it up,you know you can use store-bought bacon,bits for twice baked potatoes but i,think nothing is like bacon you fry,yourself,particularly when you're cooking for,cowboys,they detect things like this,they might run me out of town if they,find out i used artificial bacon pieces,okay i got the bacon all chopped i'll,let that sit for a sec now i've got to,add a lot of butter to this casserole,because i baked a lot of potatoes,so i've got four sticks of softened,butter i want it to be really really,soft then when the warm potato mixture,goes in it melts really quickly,okay and four,and a whole container of sour cream,everyone likes sour cream with potatoes,let's face it,okay now for the potatoes i've got 16,big baking potatoes and i rubbed them in,a little bit of vegetable oil and then,baked them at 400 for about an hour,they're nice and tender very hot,so i'll just cut it in half,oh nice and hot,and i'll use a little towel so it won't,be too hot in my hands,and i like to use just a big tablespoon,to slowly scrape the insides out,okay that's the last potato scooped and,i've got nice little flecks of potato,skin all throughout so now i'll season,all of this it's a lot of potato so it,needs a good amount of salt,and of course plenty of black pepper and,then i also like to add some seasoned,salt it just adds a few different,flavors a little bit of extra saltiness,all right that looks great now i'll,throw in all of this delicious bacon,okay now the green onions go in,i also grated a lot of cheese a couple,of cups of cheddar jack,and i'll sprinkle that over the top,and then i definitely need some milk in,here so that everything will mix,together well so i'll just pour in a,couple of cups of milk,all right,now i just need to break out my mussels,i've got a potato masher and i'll just,go right in,and smush all this together,this takes a little while there are a,lot of ingredients in here the potatoes,don't have to be completely smooth but i,don't want there to be any huge chunks,okay,looks perfect,get the extra off now i'm going to put,all of this into a big foil container,i think it'll all fit,whenever i'm making twice baked potatoes,for a crowd it can get a little - Hey y'all.,It's Jamie Dean here of Mama's Kitchen,,cooking outta Mama's magazine.,Today, we're doing a perfect side for this time of year.,You've got your start of the year parties,or maybe winding down last year parties.,Everybody needs a good side dish,so today, we're doing an asparagus casserole.,Now, have y'all ever wondered,,I wonder if people on TV or internet or anywhere,,have to cook things that they don't like?,Yeah, today's the day.,I don't like asparagus, but I hope you like asparagus,and if you do, this is a very easy recipe.,You see here, we got a two quart casserole.,I got a couple good bunches of asparagus in there,and I've washed these and you know you just snap the bottom,is how you know.,Where an asparagus breaks,,that's where it needs to be broken.,You don't want to get that tough end in there at all.,So we're gonna go to a casserole favorite, mushroom soup.,So half this can of mushroom soup,is gonna go on top of our asparagus here.,Now y'all don't be calling Mama,and telling her I don't like her recipes,or Jamie said this wasn't good.,Everybody is allowed to like what they like.,And when I had asparagus when I was a little boy,,I had to go to the bathroom shortly thereafter,and I said, "Oo, that smells funny, Mama.",And she said, "Oh, it was asparagus.",And I said, "Okay, I'm out.",So I'm out on asparagus.,Half the soup goes on top of that,,now watch this.,I got some fresh peas. hey everyone it's natasha natashas,kitchen calm and today I'm gonna teach,you how to make a chicken and mushroom,casserole now I've seen this recipe,online of something similar called,chicken Gloria I can't vouch for those,recipes but I know this one is so good,my sister's mother and I shared this,recipe with me and it's one of the most,popular recipes on my website you guys,are gonna love it,so let's talk about what you need their,ingredients are so simple we need about,four large chicken breasts then some,salt and pepper about a cup of flour,some oil to saute about a pound of,mushrooms thickly sliced 1 medium onion,chopped 3 medium garlic cloves minced or,pressed and then for the sauce you need,3 tablespoons of butter then a cup and a,half of chicken broth 3 tablespoons of,flour about a tablespoon of lemon juice,and a cup of half-and-half or you can,mix milk with heavy whipping cream to,get a cup so to get started let's slice,up this chicken so we're going to cut it,up into about 1 inch strips and you can,cut them smaller if you want them,smaller you can also use chicken tenders,for this if you want it to be easier and,then you don't have to slice anything,now we're going to season both sides of,the chicken with salt and pepper,hey let's flip them over and season the,other side okay nicely seasoned and now,it's a good time to preheat a medium,large pan with three tablespoons of oil,and I'd like to set it over medium-high,heat just drizzle some oil in there and,now what we're gonna do is dredge the,chicken and flour just to get it nicely,coated you can do several pieces of,chicken at a time just to speed things,up and transfer that to a platter shake,off any excess flour as you go oh and,it's also a good time to pre-heat your,oven to 350 degrees Fahrenheit okay and,now that our skillet is hot and ready we,can go ahead and saute our chicken and,don't crowd the pan just put it in one,layer at a time and you want to saute,until it's golden brown just a light,golden brown you're not too concerned,about cooking the chicken all the way,through at this point remember you're,still gonna bake this dish our chicken,is golden and we're gonna transfer it,into a 13 by 9 baking dish okay scrape,the DeVries out of your pan then add,another three tablespoons of olive oil,now we're gonna saute the mushrooms,along with the onions just until they're,nice and soft this will take about five,to seven minutes then stir in your,garlic and cook that about one to two,minutes or until it's nice and fragrant,transfer the mushroom mixture onto your,chicken now we're gonna reduce the heat,to medium-low and wipe out that same,skillet with a paper towel then melt in,three tablespoons of butter,once that's melted you're gonna whisk in,three tablespoons of flour and let that,saute whisking it for about one to two,minutes until it's nicely golden,then whisk in your cup and a half of,chicken broth and one tablespoon of,lemon juice whisk that together until,it's creamy finally mix in one cup of,half-and-half and bring everything to a,light simmer okay and taste the sauce to,see if it needs a little more salt just,a teensy bit so just add a little salt,to taste pour that sauce over the,chicken and mushrooms,now you're just gonna cover this with,foil or a lid if you have one bake at,350 degrees for 45 minutes and it's done,okay our chicken is out of the oven and,it smells so good tastes even better,I'll tell you that YUM take a look at,that so creamy of course we have to have,a sample so let's do this thing,mushrooms and you can serve this over,potatoes over pasta rice anything you,can dream up really Oh creamy and good,that's hot wait I really can't wait,Wow it's just like unbelievable flavor,super creamy it's a chicken with a gravy,all-in-one YUM,you guys are seriously gonna love this,and so will your family and your friends,and everybody in your church thank you,so much for joining me in my kitchen,enjoy this recipe and we'll see you,later

meal whatever,you want to call it and to make it even,easier we're using this rotisserie,chicken that we got from the supermarket,on sale for five bucks you really can't,beat that we're just gonna shred that,and chop the meat up and add that to the,party first and foremost we're gonna go,ahead and wash our potatoes for my keto,or low carb folks you can skip the,potatoes and use cauliflower for this,recipe but for the rest of us we're just,gonna go ahead and throw in a couple,potatoes so once you rinse them off or,go ahead and dry them with some paper,towels make sure you give them a good,scrub to get all the dirt and whatnot,off of there we're gonna leave this skin,on for these there's lots of nutrients,in the skin but if you're not a fan of,potato skin then by all means go ahead,and peel them up but personally i like,potato skin so we're gonna leave that on,just make sure they're nice and clean,like so then we're going to take out a,nice sharp knife and cut these potatoes,into bite-size pieces as always there's,really no right or wrong way to do this,guys do whatever is comfortable for you,but you do want them to be about equal,in size that way they all cook at the,same rate we are going to parboil these,potatoes or pre-cook them that way they,get nice and tender when we throw them,into our casserole so first things first,though we got to cut them into equal,size bite-sized pieces as always guys,the specific measurements and,ingredients are provided for you in the,description box below so don't forget to,check that out once our potatoes are,prepped we're gonna add them to a pot,cover them with water by about two,inches and then bring them up to a boil,for about six to eight minutes or until,they start to get tender and then we're,gonna dry them up we've already gone,ahead and prepped our rotisserie chicken,that's super simple just take the skin,off remove the bone and cartilage we're,going to prep an onion,and a few cloves of garlic as well you,can use minced garlic or you know the,jarred garlic paste that you guys see me,use all the time also any of that will,work fine here now we're just going to,dice this garlic up,super easy recipe about five pieces of,bacon here once it gets pretty much,cooked all the way through we're gonna,go ahead and remove it to a paper towel,to let it drain,into that bacon fat we're gonna add our,onion covered today I'm going to show,you how to make this delicious taco,casserole super easy inexpensive and the,best thing is it comes together in about,30 minutes or less but before we get,into the to actually get to cooking I'm,gonna add in my ground beef again we got,80 20 ground beef and 93 7. so we got a,little lean a little fatty,so what I'm going to do now is just,break this up a little bit we're going,to work over medium-high heat for this,I want to break the ground beef up and,then I'm going to flatten it out and try,to develop some color,that color is going to add texture and,flavor to the ground beef which will,obviously add some texture and flavor to,our casserole so,we're gonna look for some color here,now while we wait for some color to,develop we're going to go ahead and,start to season the top side with a,little bit of my all-purpose seasoning,if you haven't tried that yet you can,get yours via the link in the,description box or just use whatever,your favorite all-purpose seasoning is,that you have at the house this is low,sodium so if you see me going crazy,don't worry about my blood pressure I'll,be all right,all right now we can go ahead and give,it a good mix now that we got a little,bit of color developing in there,kind of like that that's what you want,to see,all right so now we're going in with our,seasoning blend,and give that a good mix you can also,use a taco seasoning if you have a,favorite taco seasoning feel free to use,that this is kind of like a homemade,version,there we go it's starting to smell good,in here now we're going in with a little,bit of garlic you guys know I like to,use my garlic paste you use fresh garlic,as well about a tablespoon of that,and then for my secret ingredient,we've got a little beef bouillon powder,I'm gonna add that to beef up the beef,flavor,just about a teaspoon or so,you can find this usually in the chicken,stock aisle at most grocery stores,we're gonna add about a half cup of,water to this,and increase the heat to high,that's just to make sure that the,seasoning gets evenly distributed you,can kind of get all the fond and flavor,up off the bottom,if you're feeling frisky you could also,do the same thing with a beer,but I don't want you guys thinking of my,alcoholic too bad so we're gonna leave,the beer out today,put a little Corona in there or,something like that will work great,now we're going in with our veggies so,we're going to add,our onion first,then our jalapeno again guys the,jalapeno is optional you use bell pepper,if you don't want any heat,let's give that a good mix,and if you're feeling hungry you can,whip up a quick Taco while you wait,as always guys make sure you season to,taste and taste as you go and adjust the,flavor to your preference,once the ground beef is fully cooked,it's safe to get in there with a spoon,and you know give it a taste test,oh man this passing the smell test,though that's for sure,all right now we're gonna make our sour,cream mixture quick Pro tip on this you,want the sour cream to be at room,temperature that way it doesn't go from,super cold to super hot and curdle and,separate on you we're going in with,about two cups of sour cream here and,then to that sour cream we're gonna add,the zest of one lime it's going to add,some nice flavor,and a couple teaspoons of lime juice as,well,so we got the lime zest in there now,we're going with the lime juice,a couple teaspoons or you know a whole,lime depending on how much of that lime,flavor you want to have in there like I,always say make sure you taste as you go,and adjust accordingly to that we're,just going to add a littl
