- Hey, everyone.,It's Natasha of NatashasKitchen.com,,and today, I'm gonna teach you how to make,the ultimate chicken pot pie.,(funky music),You're gonna love that super easy flaky, buttery pie crust,,and wait until you see the filling.,It's unforgettably good.,Let's get started 'cause I'm hungry.,(hands tapping),We'll start with a rotisserie chicken.,You'll need four cups of cooked, shredded chicken.,You can use a store-bought rotisserie chicken,or try the easy recipe that I'll link to in the notes.,This is also a great way to use leftover chicken,or even leftover turkey,,and you can use light meat or dark meat,to make a chicken pot pie.,You can use two forks or just use your hands,to shred the meat into bite-size pieces.,Set that aside,,and we're gonna do some quick prep of your vegetables.,Thinly slice eight ounces or half a pound of mushrooms,,and brown or white mushrooms are fine.,For safer slicing, so the mushrooms have a flat surface,,cut the mushrooms in half and then thinly slice.,It may seem like a lot of mushrooms,,but they do shrink down quite a bit once they're cooked.,Set those aside,,and now we're gonna chop up one medium yellow onion.,And if you don't already have one,,a food scraper makes food prep so easy.,This is probably one of my favorite tools in the kitchen,,and I will link to it in the notes.,Next, thinly slice two medium carrots.,You should have about one cup of sliced carrots.,We love the flavor and texture of the carrots in here,,but make sure you don't slice them too thick,because they won't cook through properly.,Another quick tip for safety when cutting carrots,,to make them more stable, cut them in half,,then thinly slice.,Next, we'll mince three large garlic cloves.,The easiest way to peel a garlic clove,is to first cut off the end, then smash them,,and smashing will help release the skin,,so they peel easily.,Once your garlic is finely minced,,our last bit of prep is to finely chop,one-fourth cup of fresh parsley.,Once all of your ingredients are prepped and ready to go,,it's time to fire up the stove.,Place a large pot or Dutch oven over medium-high heat,and add six tablespoons of butter.,This is one of my favorite Dutch oven pots.,It's a five-and-a-half quart,,and I will link to it in the notes.,Once the butter is melted,,add your diced onions and your sliced carrots.,Saute those together for about eight minutes,,stirring occasionally, or until the veggies are soft.,Next, stir in your sliced mushrooms.,Then add your minced garlic.,(funky music),Continue sauteing those for another five minutes,until the mushrooms are softened.,Next, sprinkle the top with one-third cup,of all-purpose flour,,and stir constantly for about two minutes.,The flour should be golden in color,,and you're basically making a roux,,which will help to thicken up the sauce.,Next, add two cups of chicken broth,and one-half cup of heavy whipping cream.,Bring your mixture to a simmer,,then continue cooking for another minute,or until the mixture is a thick gravy consistency.,Just before you turn off the heat,,add two teaspoons of salt,and one-fourth teaspoon of black pepper,,or season the mixture to taste.,It's important to have a well-seasoned mixture,at this point.,Now, add your four cups of shredded chicken,,along with one cup of frozen peas,and one-fourth cup of finely chopped parsley.,Stir that together until it's well combined.,Then, take it off the heat and let it cool slightly,as you roll out your pie crusts.,We're using two disks of our homemade pie crust,that we made the night before.,These have been chilling in the refrigerator,,and homemade pie crust is the easiest thing to make.,You can use store-bought in a pinch,,but I highly recommend trying homemade.,Check out our easy video tutorial,for the best homemade pie crust.,I will link to that in the notes.,Lightly flour your work surface.,Then, roll one chilled pie crust disk,into a 12-inch-diameter circle.,One of the things we love about this all-butter pie crust,is it's really easy to roll and work with.,You want to have a large enough circle,to fit your nine-inch pie pan,and hang a little bit over the edges.,Here's our best tip for transferring a pie crust,into your pan.,Lightly dust your rolling pin with a little bit of flour,to keep it from sticking.,Then, loosely wrap the dough around your rolling pin.,Now, simply unroll your crust right over your pie pan.,Arrange the dough evenly into your pie pan,,so you have a little bit of dough hanging over the edges.,Then, pour your chicken pot pie filling,that has been cooling slightly over your pie pan.,Make sure you get every last drop,because everything in here is delicious.,Spread the filling evenly into the pie pan.,And you'll be you know i've met so many people who say,they don't like baking for all sorts of,reasons i think this is like beginner,baker's gold,it's that gateway baker's recipe,today we are going to make wonder bread,super easy super fast only a few,ingredients and it's delicious and it,happens to be gluten free that's crazy,rick always wants his youtube thumbnail,what wonder bread,there's a lot of,white rice type bread dough recipes out,there from taiwan china india,this one the reason why i like it is you,can make it with pretty much any off the,shelf rice and it comes together super,fast in a blender our brilliant chef,matthew has kind of gone off the deep,end he developed this same recipe from,every grain you can think of,you gotta get it at chefs.com,all right you don't need much stuff,rice,same rice already scooped,rice in a bowl you gotta soak the rice,for how long well it depends depends how,much of a hurry you're in,so,you can,go right into making the bread right,here right into the blender,but if you soak the rice even 20 30,minutes we've found goes a long way when,you have dried rice it's like basically,this hardened shell of starch,right but as you soak it,that starch,starts to,soften up and that means when you blend,it it's going to be finer and when it's,finer that means it's going to be,fluffier so i'm going to put this one,aside i'll make a loaf later this guy,it's been soaking 30 minutes or so it,just gets like a little bit puffier,chalkier or looks like a little cloudier,than fresh rice we're not trying to wash,all the starch off we're just soaking it,drain everything goes in the blender,here's what we got a little more,water,oil you can use any oil you want it'll,just change the flavor you can go,neutral you can olive oil sesame oil,whatever you want salt you need salt for,a little flavor sugar a little flavor,also speeds up the yeast,and yeast,makes red rice that's it i don't think i,need anything else,rice goes in the blender,sugar,if you'll notice these are all the same,ingredients you always put in bread salt,too little salt bread doesn't taste like,anything too much kills the yeast salts,one you want to like keep an eye on,here's why i add like double triple the,amount of yeast often to a lot of breads,one it rises way faster two,i love the yeasty flavor of it you know,like really nice savory umami,yeasty flavor oil,easy,that's it oil again you could do no oil,the bread will be a little bit,uh chewier a little denser a little less,spring but you can do too much oil and,the bread kind of like wants to rise and,split and sink again and get dense so,there's a perfect little middle ground,we'll cover that on chestnuts.com,that's it,that's everything,i'm going like extra slow this is like a,fast bread everything goes in,pour it bake it easy but i'm gonna stop,and talk for a little bit you want a,high power blender the vitamix the,wearing the breville we like the,breville one you know you don't want to,lose like moisturizers that you got at,your grocery store for 29 dollars,probably won't do the trick if i blend,it a little bit,i'll have,crunchies,and there won't be enough fine enough,flour basically a rice flour to actually,get a nice sponge if i blend too long,and it gets too hot i can kill the yeast,all together,further i can like gel and actually,hydrate the starch and it'll be like a,gum like a gum paste so,i recommend going,like full blast until,you get a thermometer,you go to 105,or so and stop because these any of,these high power blenders that are going,to make a nice smooth paste are also,going to heat up,right and the yeast is going to die if,it gets 120 125 130 here's the other,thing sugar starch all this good stuff,the yeast is going to start eating it,right off the bat and if it's 105 it's,its most active temperature so we're,going to pour the batter in and it's,going to immediately like you're going,to see it in the first few minutes it's,going to start rising and rising and,rising it's proofing really fast and,then poop right in the oven it's part of,why this bread is done in an instant and,so quick part of the,we're making the flour,the dough,we're proofing it and kind of priming,the yeast all in the blender all in one,step so it's kind of magic that way,am i even plugged in,maybe let's find out,murph here we go,i'll cool it down for a second,you know if you like steam milk like,you're making coffee or espresso or,something like that same thing i'm just,seeing how hot we are,we're up to a minute,just because we're making a video hey bakers today we're making a classic,french dessert which just so happens to,be my all-time favorite chocolate,eclairs,lightest air choux pastry,filled,with vanilla pastry cream and then,dipped in chocolate,so easy to make so satisfying let's get,started,shoe is one of my all-time favorite,things to make it is so,so simple it's basically foolproof half,a cup or 113 grams of unsalted butter 1,cup of water 240 milliliters,half a teaspoon of salt and like a,teaspoon in half two teaspoons of sugar,we're gonna put this over high heat and,bring it to a rolling boil,take this off of the heat really fast,dump in one cup or 120 grams of flour,and stir hard with a wooden spoon stir,stir stir stir until it's all,incorporated,and we're going to stir for like 30 to,60 seconds,there we go,okay now,back onto the heat,and stir for another 30 seconds or so,you're gonna see this form like a ball,now we're gonna dump this out into a,stand mixer you can see it's super hot,so start mixing it on like medium and,cracking an egg at a time,one egg,mix,steam,once it's incorporated add the next in,we're going to want to scrape the bowl,down too,love the color,third egg,i want you to see,it's becoming kind of like more cohesive,like it's pulling away and forming,strands we want the dough to be,hanging on to the paddle attachment but,dripping down slowly so you want like a,nice silky consistency this isn't here,yet so we're gonna add in one final egg,not nope,add in one final egg like a bit at a,time,and let's see where this is at,almost there i'm gonna add the rest of,that egg in that's a total of four eggs,okay take a look at this,clinging,silky falling away slowly that's exactly,what we want now we can transfer this to,a piping bag,like i have to tell you the color is,just amazing and,would i eat this raw yes i've done that,and i think it's delicious i'm,transferring my dough to a piping bag,fitted with a large star tip that's an,869,normally i would use a round tip but,a star tip should give you a little bit,more control when it's baking and have a,nice puffy and,prettier eclair but both work and i,don't mind the more rustic look of a,round tip if you don't have a piping tip,just snip the tip off your pastry bag,and it'll be fine i have a little dollop,of dough here i'm just gonna,you stay there i have a little dollop of,dough here and i'm just going to,add,a smear onto the corners,of my baking sheet,it'll hold it in place while i pipe and,do my egg wash i don't think it's moving,around i'm going to try and pipe these,out nice and pretty but if things fall,apart the egg wash fixes,everything so don't freak out don't,worry about it make sure to space them,out a few inches apart because they do,get puffy in the oven,something very satisfying about piping,these out we're going to fix those tips,at the end don't worry,you can also use a pair of scissors to,cut the end off that works too and it's,not cheating,setting aside we have another batch left,these need an egg wash before they go,into the oven it'll make them nice and,brown a little gloss,tablespoon of milk one egg,give it a quick mix,here's a little tip if things didn't go,as wonderfully as you'd like during the,piping and a little bit misshapen you,can use your egg wash to kind of sculpt,things together it'll fix a lot of the,issues you don't want any little points,coming off of these because they're,definitely going to burn these bake at a,high temperature,so,just use the egg wash to,push down a little bit,and then you can gently brush the rest,of the way,this one's a little fat so i'm going to,push it together over here,think of it as baking photoshop,the ridges are,really going to disappear for the most,part but they help control the spread,during baking so,that's why they're there,that looks good one more batch to go,these are gonna go into the oven at 4 25,for 15 minutes then reduce the,temperature to 375 and bake for an,additional 20 25 minutes or so until,they're nice and golden brown and don't,be afraid to turn these around halfway,through,so that they get a nice even color,first off the custard it has to chill so,you got to make it first you could even,make it the day before you're gonna add,in two cups of whole milk and you have,an option i'm gonna go the old-fashioned,way and use an actual vanilla bean it's,like what are you like,dirty old string that's very expensive,no vanilla beans if you don't want to,like buy these because they are pricey,get vanilla bean paste it has all the,beans in it a lot of vanilla flavor,vanilla extract tastes,almost exactly the same so you could,also just use the extract the only thing,you're going to miss are the little,seeds all right we're going to split,this in half just cut down the middle,and now,use your knife,and scrape out all those seeds,throw the pod in as well,we're going to bring this just to a boil,and then take it off the heat we want,nice hot vanilla milk for this custard,all now before we get into actually making,these beautiful burritos we're gonna,make some homemade flour tortillas and,they require a little bit of resting,time so we're gonna get those started,first,i'm taking this recipe from the new york,times these are sonoran style flour,tortillas 10 ounces all purpose flour,so in case you don't have a scale i'm,also going to measure these in cups and,those ingredients are going to be in the,recipe linked in the description once i,got 10 ounces of flour i'm gonna add one,and a half teaspoons of kosher salt and,then one and a quarter teaspoons of,baking powder then i need about five,ounces of water at 150 to 160 degrees,fahrenheit and then three ounces of lard,and melted,give the dry ingredients a whisk then,get that into a stand mixer or you could,use a food processor as well get it,going and slowly drizzle in the lard,until it's fully incorporated into the,flour then slowly drizzle in the water,once everything's incorporated and it's,come together jack up the speed a few,notches and then let that knead for five,to ten minutes once it comes together,into a ball get it out of the mixer so,it should be a little wet and tacky just,gonna knead it a little bit by hand get,it into a ball coat in plastic wrap and,let it sit for two hours,so this is a mcdonald's sausage,breakfast burrito this was my childhood,this is what i grew up eating for,breakfast it was my favorite thing these,were little sausage and egg burritos,little tiny burritos could fit in the,palm of your hand usually you got two of,them and obviously a mcdonald's item is,fast and convenient which is the whole,point haven't tried one in a while,so let's take a look inside looks like,we've got little balls of some breakfast,sausage looks like american cheese is,nicely melted and about one scrambled,egg looks like not a lot looks like real,egg not a lot of vegetables it's a good,starting point but i want to up the,amount of veg and also add potato and,still be able to reheat these guys up in,the morning in about 30 seconds now i,just want to open it up and i want to,see how much of the content there is,inside of the burrito so i can make sure,i don't over stuff them i'm going to say,about a half cup,probably even less than a half i think i,can get away with about a half cup maybe,a little less than mine now they kind of,roll it like a fajita,and of course a little hot sauce,that's honestly not bad not great on its,own it's not as good as when it has hot,sauce so that means the hot sauce is,sort of covering some flavor up,obviously we can do better so while the,dough continues to rest we can prep some,of the other ingredients got about a,half pound of italian sausage you can,also use breakfast sausage i'm just,gonna kind of create these little,meatballs by squeezing it out of its,casing pinch a little bit out,little sauces meatballs,i keep this chilled in the fridge,onto the breakfast potatoes you want a,really fine dice just like we crumbled,the sausage,into nice fine bite-sized pieces we want,to do the same with the potato,on a nice even small dice and once,they're all diced up we're gonna toss,them into a pot of water we're gonna,rinse that starch off a few times with,some cold water fill it back up with,some cold water add a little bit of salt,we're gonna bring those potatoes up to a,boil and then down to a simmer and let,those go until they're about halfway,cooked we're gonna let those potatoes,get par cooked and while that happens we,can chop up maybe half this onion about,half this bell pepper and the whole,jalapeno fine dice on everything,and what you can do is peel out some,layers push it into the board,this way you can get really fine dice,really easily,i think that's about all i need that's,around a half cup i'd say,just flatten the bell pepper out thin,strips and then into a fine dice just,like the,onion then the same thing with a,jalapeno,quick tip about jalapenos when you're,dicing them go very slow or you risk,some of that jalapeno juice getting in,your eye and that's no fun i just got a,squirt on the cheek so i dodged the,bullet we got our vegetable diced we're,gonna set this off to the side but now,the potatoes should be half cooked not,fully tender we can drain them of the,water and just set those off to the side,and then in a non-stick pan over medium,high heat we're going to add a little,bit of oil and once the pan's hot get,those sausage balls into the pan we want,to make sure they're nicely separated,and then we're going to let them sit so,they can brown,once you start to get color on one side,you can start to toss them around to get,even color and we just want to cook them,through we don't want to overcook them,at all you want to go high heat here,once they're just cooked through we want,to strain them of their oil so that we,can get that oil back into the pan and,use it to cook the potatoes i'm going to,get those potatoes in and we're just,going to let them be we want to develop,nice color on the
