A PROPER FULL ENGLISH BREAKFAST

oh it's all coming together this is one,of my favorite meals I get so excited,every time I cook a fried breakfast an,English fried breakfast what's your,favorite on this no I like the bacon you,like the bacon,real winter we like the sausage don't,you understand,Winston,Winston,come back with that leg of lamb,it was the famous playwright William,moreham who once said to eat well in,England you should have breakfast three,times a day,I could do that it was the victorians,who thought that breakfast traditional,English breakfast was the most civilized,meal of the day and they would sit down,and have kippers and devil kidneys and,just the most amazing old-fashioned,ingredients not the traditional sausage,eggs bacon and all of the things that we,associate with the traditional breakfast,today when I was at Balmoral Castle,cooking for the royal family we'd cook,kidneys and kippers all the time it,wasn't until really the War years that,English breakfast really took off and,then people were eating that sausage,eggs bacon mushrooms black pudding fried,bread all the time and it became super,popular it's one of my favorite meals,and whenever I fly into the UK it's,something I've got to have I go straight,to the restaurant in the airport and I,order a traditional fried breakfast and,it's so good here in the USA a lot of,the American pubs,British pubs they serve traditional,breakfast but it's not always the same,they use American bacon an American,sausage and worse American beans yuck,I'm making a traditional fried breakfast,today and to make a traditional,authentic breakfast you've got to have,authentic ingredients the bacon the,sausage the black pudding and the baked,beans and I've put a link to them Below,in the description so you can make an,authentic British breakfast too so let's,go through the authentic ingredients,starting with the bacon the bacon is,back bacon not the long thin streaky,bacon used in America and it's cut from,the loin and has a little bit of the,streaky bacon the back bacon on there in,England they cut so thin and they're,called a Rasha of bacon there's a new,word for you rashes of bacon sausages,all authentically known as bangers in,the UK that's because during the War,years meat was pretty scarce and just,wasn't available and was super expensive,anyway and rationed they filled the,sausages with lots of Rusk and lots of,bread crumbs and lots of seasonings and,lots of fat in there too so when they,were in the pan cooking away sometimes,that fat would just burst through the,skin they'd bang bangers and splatter,everywhere that's where the bangers came,from there's many different types of,sausages you can have for breakfast and,the traditional ones are ground pork and,and Seasonings like mace which is sort,of the outer kernel of the nutmeg and,then the Rusk in there as well my,favorite a Lincolnshire sausages the,sage and onion flavor in there is just,amazing when I cook for the royal family,the Cumberland sausage was the favorite,they didn't break them into links it was,just one long sausage just in a coil and,that was great great for Prince Philip,just to throw on the grill and just cook,as a whole sausage and then he could cut,the portion that you wanted sausages in,my opinion and what made breakfast in,England alone they spend a billion,dollars a year on sausages the sausage,man in the UK black pudding it gets a,bad route but you know what it's so,tasty it's high in fiber and rich in,iron what's in it it's Pig's blood it's,Pig's blood and it's thickened with meal,with oatmeal and things like that and,lots of seasonings and all packed,together and it's absolutely delicious,this was a favorite of King Henry VII,way back into the times he'd have this,on the menu all the time back in the war,years Housewives would actually walk,over to the abattoir carrying a pail and,come back with a big pail of blood that,they'd make their own black pudding to,less than the week,mmm it's so good no no no you've got to,try it order some and try it I promise,you'll love it mushrooms need to be the,little baby Bellas they call them flat,mushrooms in the UK they're a little,more open than this but they're really,meaty in texture and they add a gorgeous,flavor to the breakfast and then,Tomatoes Tomatoes we can't use tinned,canned you have to use fresh tomatoes,usually from the greenhouse in Jolly Old,UK right you take the tomatoes you cut,them in half and saute them and they're,just the perfect addition to this fried,breakfast bread we have bread but we,don't always have toast and it's fried,bread that we normally serve with a,traditional breakfast lots of oil in the,pan we drop in the bread and we fry it,till it's crispy as you bite into it all,that oil runs down your chin oh,delicious we only live till about 25 in,England but we do eat good eggs eggs,you can do boiled eggs you can do,poached eggs you can do scrambled eggs,but for the traditional breakfast it's,got to be fried eggs and finally the,beans it's got to be

the,thickest sliced bacon you can find and,for about two to four people you can,place four to eight slices on a baking,sheet lined with aluminum foil pop that,into a cold oven then set it to 450,degrees fahrenheit and set a timer for,20 to 25 minutes now once your timer has,gone off your bacon should be a,beautiful golden brown and cooked,perfectly if it's not crispy or dark,enough then hey guys i'm harry and i'm chi and today,we are on a mission to find the best,full english breakfast in london so what,is full english well it's supposed to be,a massive breakfast that absolutely sets,you up for the day so what do we,actually want on our plate in the full,english breakfast well we want some kind,of egg whether it's fried or scrambled,or poached as long as it's cooked well,that's fine we want some bacon ideally i,think we're looking for some nice crispy,bacon,and some sausages as well and then some,kind of bread some places toast their,bread some places fry their bread but,it's got to have carbs,today we're starting our journey at,billings gate market,police gate is an old east end fish,market but tourists come here from all,over london to come and have a taste of,their full english breakfast,i'm hungry are you ready to go and find,out i'm really really hungry let's go,let's go,so we're in the cafe at billings gate,market and we've just been given this,absolutely massive full english,breakfast,so i'm going to go clockwise around the,plate i'll start up here we've got a,sausage it looks like a really good,sausage thick cut proper pork we've got,baked beans we've got the mushrooms,tomatoes hash browns black bacon fried,bread,fried egg and toast as well,where do we start egg first i think,first let's go for it,right let's go,it's nice it's really light the fried,bread is unhealthy that is not a diet,option i know this is not my option but,to be honest like they've given one,fried egg on top of fried bread and it,doesn't really feel like too heavy it's,really nice tonight we might be saying,that by the end but we'll find out,right i'm gonna try this bacon,got like a good amount of crisp on this,full of flavor,yeah that's good,like not not overly salted and like not,too greasy either,um i like the fact that there's not a,lot of fat on it you can actually get,the full flavor of the meat really,really good,this is just like i can literally see,there just meat spilling out of it um,that is a very full sausage i think,that's not bad there's almost like a,little bit too much going on now it's,like,on the side of kind of under done,because it's not like the texture is a,bit more like a sausage roll than a,sausage if that makes up yeah it's more,like minced packed in rather than meat,itself but really tasty,it's got all the ingredients that you,look for in a kind of classic english,breakfast maybe not the freshest,ingredients but everything does have its,place on the plate and it's just a lot,of food for your money which is great,next we travel to gallery cafe in east,london which serves up an all vegan,offering of the full english breakfast,so we've been vegan for just over a year,um we went vegan last year at the end of,the january um,but the cafe itself has been vegetarian,for 25 years,we,serve vegan full english,which comes with,a classic vegan staple of linda,mccartney sausages with red onion and,rosemary scrambled tofu,which is cooked with some spices,carrots and onions and garlic then we,have wilted spinach some pan fried,mushrooms it comes with,homemade baked beans which are cooked,every day about over the course of about,five hours,we do get a lot of vegan travel to come,here sometimes we'll have people,traveling here they'll get a bit delayed,or something,and they'll ring ahead and make sure,that we've still got,still got breakfast on here is something,of a destination for vegans in london,yeah,well the first thing that we can see is,this like really really vibrant plate of,food i mean everything just like really,pops out color wise you can see the,tomatoes super super bread this amazing,scrambled tofu um like egg replacement,it's just like vibrant yellow it's looks,so so fresh and really really good also,the homemade baked beans look ridiculous,almost more of like a stew than what,you're expecting from traditional baked,beans,so i'm really excited to see how they,taste,oh wow,i think it's a really nice replacement,like obviously it's not a true,replacement for it's because it doesn't,try and replicate the taste of egg it's,just a nice sort of,accompaniment to the other things in the,meal,these are,sort of almost a classic like vegan,vegetarian sausage like this is,obviously vegan sausage that's um going,to have some kind of like meat,replacement in the middle of it um,therefore it wouldn't wouldn't really,expect it to have the same kind of like,textural look as a classic sausage,i mean compared to the the meat sausage,we had at billing escape i'd almost say,i prefer this just because it's got more,flavor and the texture is,it tastes more like a proper so like a,well cooked,so so these are the homemade beans they,make these every day,they look and smell really good,it's almost like a kind of a salsa base,to it like the chamomile you can really,taste that there's like fresh matcha in,there the tomato really comes through in,less of a sort of like breakfast like a,king you should lunch like a prince but,you should dine like a pauper,now which of those are you going to do,today i'm going to do,part of an edwardian full breakfast now,that is a challenge i mean this,is an edwardian full breakfast edwardian,of course the edward is edward vii he'd,have chicken he'd have pusan he'd have,guinea fowl he'd have woodcock in season,he'd have what they call meat in jelly i,think this is pigeon in aspic,all that,and,you're going to do,a boiled,egg now michael not just any boiled egg,i'm going to do off anco cut with smoked,haddock,wow,okay that doesn't sound like an,anti-climax how do you do it,the first thing i'm going to do is poach,uh my natural smoked haddock okay that's,not very yellow is it well no uh if it's,yellow some food coloring has been added,so i'm just gonna poach this this won't,take long maybe two or three minutes,what are you poaching it in i'm poaching,it in just give my hands a bit of a wash,um i'm poaching it in some milk drop of,cream some peppercorns and one bay leaf,so i'm going to chop some chives while i,wait for that to cook i don't rather,ridiculed it as just a boiled egg but,it's quite a substantial dish in itself,this i mean imagine eating all this kind,of stuff as well as the earth on,for breakfast i can't i can't breakfast,has evolved so much down the centuries,hasn't it when you had the um early,hanoverian kings in the 18th century,they would have breakfasted off cold,meat and cheese and beer,well the water well the water wasn't,very safe so that was a good excuse for,having beer at breakfast and then when,you got into the later hanoverians the,prince regent he'd have cake and hot,chocolate and loads of booze hmm when he,died he was 24 stoned you know oh my,goodness built like a barrel i'm not,surprised if he was eating cake and,booze for breakfast but it wasn't until,the victorians that we really started to,get the modern breakfast and bacon and,eggs and all that sort of stuff but,bertie later edward vii,he went in for things in a big way is,that boiling over no it's just about to,come up now i'm going to take it off,um and the liquid you live dangerously,you look dangerous the liquid that we're,actually uh cooking the,haddock in we're going to make a,bechamel sauce,with i like bechamel source,originally done by a french aristocrat,and named after a financier in louis,xiv's court,you're meant to say do you know,everything michael do you know,everything michael no but i can look it,up,oh guess what,there's butter in this dish absolutely,bechamel sauce is basically butter and,flour into a roux,and then you cook the roux out just for,a few minutes and then you pour hot,liquid on top so that's kind of a really,important part it's a it's a common,mistake that people make that they think,bechamel is just they pour their cold,milk on top of it and what you'll get is,a lumpy bechamel it's a lovely creamy,saucer isn't it it is a lovely creamy,sauce and Today we are experiencing London's best full English breakfast,myself Jamie and Ebbers have been individually assigned a price point we,are going to go out and find an amazing full english breakfast for that price,point take the others there and try and justify our choices they'll be eating,they'll be talking they'll be probably arguing and does it have to be a full,English breakfast yes just so I know I've got the brief correct - no Demi no semi full English so I've got our first,breakfast today I brought the boys to Billingsgate market a unique London,experience the markets pretty much shutting up it's 8 o'clock and we're,going in for breakfast in the billingsgate market cafe,fish market isn't the first place I think we're coming to for filling this,breakfast the market is very ebbers the cafe isn't no it's the opposite event,the food hasn't arrived yet but the thing that you've nailed is the greasy spoon atmosphere,if you're gonna come here you've got to get there fishy breakfast scallop kipper or star,of the show what people who walk through this door come for,the scallop and bacon abroad that's the one everyone comes off it's four quid it's,less than a fiver like that is gonna be our starter today. It's the scallop of,breakfast bacon grilled tomato. I mean those scallops have come from the UK's biggest fish market next door about,20 steps away not even feet 20 steps oh it's not where that came from,no I don't think there's anywhere in London you can buy and eat and enjoy scallops as delicious and as cheap as this,right my turn and I hope the boys are ready for a,breakfast if you're supposed to breakfast like a king we're going to,rule the world with my choice. What a surprise what,delicious Come to a steak restaurant for a full English,which is renowned to be one of the best steak restaurants in London,cornflake cereal milk and obviously you have to go with a recommendation of the house,which is for a shot of bourbon,I'm gonna have this for breakfast every day. Can we get one Hawksmoor breakfast for three please,everytime that door opens into the kitchens my heart skips a beat,HP gravy ... if you could smell what was coming off of that dish, so good,Trotter baked beans unlimited toast there's actually only four slices so I dont...,think we can ask for more so you know HP brown sauce yeah no ...,now turned into gravy. I'm fairly happy with my choice,choice at this stage. I am happy with your choice, I think you've done well.,Now usually this would go against every bone in my body. Sharing.,but I think we can probably cope with this amount,Short rib bubble and squeak is something else,don't mind me if I don't butter the toast. I'm marrowing.,what is so classic about a full English is that it's so familiar yeah and yet this,poses more questions it's not the obvious I'm approaching full these can be a real,issue,my place is so good I don't want to be turning up this full two down one to go,we're gonna go classic we're going greasy spoon we're going full English,but Italian this place I think is amazing because it is a cafe it's run by,an Italian family is called E. Pellicci it's in the top 45 TripAdvisor,restaurants in London and it's a cafe so there's gotta be something amazing about,that,everything is homemade by mum she's got a lot of beautiful chicken bacon a mushroom pie,not long come out the oven you've got lasagnas canolloni's these everything is,homemade all the chips are cut by hand so if you need to know anything give us a shout,already good find how did I not know this existed I'm now suddenly so worried about my choice,I mean we are it's cozy it's RAM everyone knows everyone this is perfect,two full english breakfast with chips and fried bread,one of my favorite, so good - we're gonna come back for pasta next time this is the bit where we discuss budget and,whether or not we thought these were value for money,let's start with the first place all being not a full English debatable a slice of,English history one of the oldest fish markets you've got fresh scallops and,for a tenner scallops bacon egg coffee four quid if you want the roll you're not,just getting breakfast are you you're getting like visiting something is,something different Hawksmoor if you were to have that by yourself,yeah with the milkshake and a coffee with service 30 quid hands down the best,food we ate today - the quality of business unbelievable great,value for money considering everything that you get the best food do you know,what was annoying though what number three because that was the best full English,experience and the moment walks in the door I felt like I was a member the,family that is a quintessential full English breakfast it's a place that,you'll talk about when you go back home value for money,an incredible value for me very uniquely different three uniquely brilliant turns,out we're really excellent at picking full english brea

it's breakfast time forget stacks of,pancakes covered in maple syrup and push,aside your love of grits as there's,really no place for any of these items,in the classic full English breakfast so,grab your knife and your fork and come,with me as we feast our eyes on,Britain's most treasured national dish,history of the full English the origins,of the full English breakfast are a bit,of a mystery but many believe it harks,back to the time of landed gentry who,were keen to display their wealth and in,doing so would put on lavish cooked,breakfasts for their guests the full,English breakfast was later adopted by,the working classes as a great way to,start the day during the Industrial,Revolution and has since become part of,the British national identity nowadays,most Brits indulge in a full English,only at the weekends but boy is it worth,the wait also called a fry up the full,English consists of the following,fundamental items eggs fried eggs are,most common in a full English breakfast,well what did you expect with the name,fry up,however scrambled and poached eggs are,totally acceptable options bacon we,mainly use British back bacon which is a,combination of both pork belly and pork,loin the bacon is served fried or,grilled until the fat is golden brown,and no it isn't covered in maple syrup,sausages the full English breakfast is,the perfect place for you to show off,your sausage and no I'm not talking,sausage patties or hotdog wieners,instead we prefer a simple Lincoln or,Cumberland sausage fried or grilled,black pudding I can only imagine this is,called a pudding to make it sound more,appealing black pudding is actually not,a pudding in fact it's more like a,sausage but made with kidney fat oatmeal,and pig's blood mm-hmm it sliced and,then yep you guessed it fried and tastes,a bit dry and salty a bit like,everything else on the plate baked beans,are baked beans are very different to,the original American creation which was,made up of beans stewed with pork and,molasses British baked beans are stewed,haricot beans typically in a tomato,sauce you could make your own but most,of us just by the minute a toast toast,or fried bread is essential for mopping,up all the lovely grease left on your,plate you can use it as a platform to,transport eggs and beans to your mouth,or you could save it and cover it in,marmalade in the north of England,grilled oat cakes are popular whilst,soda bread is served in Ireland in,Scotland a potato or tatis gone is a,staple whilst Wales interestingly has,lava bread which is made up of seaweed,boiled with oats I think I'll stick to,toast banks mushrooms mushrooms should,never come from a tin only fresh,mushrooms will do grill or fry them,gently and add some herbs if you're,feeling particularly creative Oh,tomatoes grilled tomatoes are perhaps,the most colourful item on the plate,next to the brownie creamy beige color,of everything else these have a tendency,to explode so try not to wear your,favorite t-shirt to breakfast unless,tomato juice embellishment is the look,you're going for,so there you go eggs bacon sausages,black pudding baked beans,toast mushrooms and tomatoes let me know,what you think it really is the perfect,way to start the day like a true Brit,enjoy with a cup of tea or coffee and of,course a copy of the morning papers what,twist do you like best on the,traditional English breakfast,let us know in the comments or tweet us,at Anglophilia and remember you can like,us on Facebook - now can I pinch a,sausage this one is grilled to,perfection,that one is the perfect start to the day,watch this one,it's egg-cellent

- My name's Austin.,I've worked here since I was 14.,The name of the café is Terry's.,The best way to describe it would be,post-war, 1940s, '50s.,That was due to my dad's love,of post-war London and Britain.,All the black-and-white photos,,everyone's looking at the camera, everyone's smiling,even though the times were tough.,Obviously it was a different, different Britain,to what it is now, but it was,the Britain that my dad held fondly.,Harry: In 1982, Austin's father, Terry,,opened what is now known as Terry's Café.,Using his extensive knowledge and skills learned,while he had worked in London's Smithfield Meat Market,,Terry produced home-cooked food alongside his son, Austin.,Some of these dishes include apple pie,,steak and kidney puddings,,and a signature English breakfast, The Works.,So what is it, and what comes,on this absolutely massive plate of food?,- So The Works as consists of all,the traditional ingredients of a cooked breakfast.,So you've got sausage, Cumberland sausage we use.,Egg, free-range.,Bacon.,Bubble and squeak.,Black pudding, tomatoes, beans, and mushrooms.,I know the emphasis I put on the buying.,The buying's bought fresh from the market twice weekly,,you know, so I know that it's good.,Course I only buy the best produce,,and I take great care in maintaining the presentation,and the quality and the standard of the food.,Some people don't get it, but most people, most people do.,Yeah, I could fancy it up if I wanted to,,but that's not the point.,Harry: In a previous "Best of the Best" video,,we voted Terry's as our favorite fry-up in London.,Here's what we thought about the food,when we visited the south London café.,- On this absolutely massive plate of food,,we've got a couple of quite new ingredients.,So the first one is bubble and squeak.,It's just this kind of mashed-potato-looking thing,over here, and what it actually is is potato and,quite traditionally like cabbage or sprouts,,all kind of griddled into one.,- So what we've also got here,is our first black pudding of the day.,What it is is usually pig's blood mixed with oats,and some animal fat and then put inside a casing,and kind of cooked like a sausage.,Yeah, I'm liking that.,You get the kind of caramelization on the outside,where it browns.,So a little bit of sweetness.,The inside, I'm mostly getting the potato,,but then kind of mixed in with that,you get that kind of, the cabbage,and whatever else is in there.,It's good.,Ju: It's like a really oaty consistency.,Like, it's really like a porridge.,- If you tried that without knowing what it was,,would you think "blood"?,- No. I mean,,it tastes a little bit like sausage.,It's like oaty sausage.,So really, really nice fried egg here.,You can see that it's cooked extremely well,,and it's got this really nice sheen to it.,- Not much crisp on the bottom.,Ju: Yeah.,Harry: I really want to try this sausage.,Just, just get a look at the size of these.,- This is an entire meal,in just one, like in one forkful.,This is, this is like a hot-dog sausage,,but it's just, it's got this amazing glisten to it.,You can see it's just perfectly cooked.,Really, really, really tasty-looking.,Like, I literally can't wait to eat this.,- Mm-hm.,Mmm.,Ju: It's so super, super sweet.,It's not as herby as other sausages that we've tried today.,Ju: It's just like a very nice, sweet pork.,Harry: And now we'll try some of this bacon under here.,It's kind of almost towards that gammon-ham,sort of texture that you're more used to,but with the sort of saltiness and a little bit of crisp,from the bacon. Really good.
