as long as I can remember I have loved,the waffle house I'm southern after all,so I had this great idea for a story,what if I went down and worked it shift,as a cook,at the Waffle House I went to Adam,Rapoport the editor-in-chief of the,magazine and he said that is a horrible,idea what's a great idea he said is if,you work 24 hours straight so next thing,I know I'm on a plane down to my,hometown of Atlanta Georgia to make,waffles and hash browns,this is gonna be my home starting,tomorrow at 7:00 a.m. for the next 24,hours it is probably the most nervous,I've ever been doing a story something,like this so am I gonna sleep it's I,feel like it's the night before the SATs,the things I do for the Waffle House,all right,how the ball class material,commander I'm sure nice to meet you man,send me your trouble she needs place,order over light we can try we all the,great because all right yell at me if I,get you,it's a time,don't get too cocky so me 7:30,now it's not good you know that there,was a little bit of a rush there and,like breakfast and then I'd say like,11:00 11:30 and I got my hands dirty a,little bit of it I made I got the,waffles down I think toast got down I,got I got kind of a little bit rebuked,for the way I put butter on the toast,Donna said I'm gonna give everyone a,cardiac arrest with how much butter I,was putting on I was like well it is the,Waffle House after all my omelet was bad,I can do better than that well it's,three things in my opinion make the,restroom good food service and we got,all three of them and the other thing is,if you see a Waffle House ghetto 12:45,right now I just took my lunch break I,mean I could use a probably a cot in the,back right now for a few hours I just,got to manage the lows okay I gotta get,I gotta wash dishes you know I got to,clean the grill this is when you're,alone for the Waffle House is really,tested,I don't know ask you okay now I mean but,it's only halfway,it's nice out of my family time and,being able to cook for them julep and,signa like the waffles what do you think,I think they're kind of making me do all,the stuff they don't want to do though,that's what's going on I think shorty I,thought he was my friend but he's,definitely pickup Texas toast heavy,pickup Texas toast pickup Texas Joe's,pickup Texas toast,howdy no plates got it covered Saturday,hashbrowns Oh chocolate chip waffle yeah,but I'm sure doing this everyday respect,so right now it's 12 hours away we're 12,hours away I don't know talk to me in,five hours,shorty Yarmuth outta here,you're gonna miss me,so you know what shorty Tommy do you,think cracking egg with one hit back in,the back though but he saw that that was,a moment we had I'm gonna call that this,shorty special when I crack the eggs,with one hand he taught me how to do,that it's not even listed Galerius,enough up until about two,and then all of a sudden - that's like,when a lot of the bars start letting out,in Atlanta so then that's the time that,you get Waffle House like where most,people their first time to the Waffle,House is usually after midnight you can,imagine they haven't been at home and,they just decided to go to Waffle House,they've been out here very very late but,if I came here but two or three or four,I would see something where you're an in,classic thing you had a kind of argument,over Miami versus Florida State football,which devolved into like name-calling no,punches were thrown,you know,what we beat you guys an amazing thing,is all being all the associates here all,the employees the taking described like,they've heard it a million times before,I mean the whole thing is this like it's,the minute like there's a lag that's,when you lose it,so women is busy and there's people,coming in they make it fun and,interesting if me it's all about this,the people work here like they're so,patient what it is 3 o'clock right now,3:15 so we have 4 more hours,how many waffles a time like today I,would say probably 60,all the familiar faces are back again,no concept of time two cycles orbits,passing,in space,what time is it 704 we've made it I,can't even put it into words I'm so,tired right now I mean I had a love for,the Waffle House before this and now,have a complete appreciation and,admiration for the whole process like,every single person we met here was the,nicest person we're awesome thank you,they love their job and I don't think,many companies can say that you know and,they care about the food they're putting,out I'm gonna go home we're gonna take a,shower then maybe I'll come back to the,Waffle House and have dinner tonight,you

We Put 11 Cameras In NYC's Busiest Brunch Restaurant | Bon Appétit

did they get their food yet hi i'm neil,kleinberg chef and co-owner of clinton,street baking company and restaurant in,new york city you're looking at a real,breakfast rush inside the restaurant on,a tuesday morning in june which is as,insane as any other busy morning we'll,get like pops of 50 people at a time,with a line out the door and you can,easily serve 500 guests just for,breakfast not including takeout and,delivery i'm going to show you how my,kitchen keeps up with the rush every,single day,so let me tell you a little bit about,each spot and then show you how some,dishes move through that,let me tell you about the line kitchen,basically it's like a classic old french,line kitchen where each person is,responsible for composing part of a dish,and then it moves down a line,this is our pancake griddle the pancake,riddle is like the foundation of our,restaurant because of how many orders of,pancakes we sell we probably make,between two to three hundred orders a,day probably fifteen hundred to two,thousand orders a week,blueberry pancakes are the top seller by,far,we've taken a lot of time to buy the,best possible equipment with a very,thick steel grill plate and that helps,with the heat recovery so even when it's,loaded with the pancakes it maintains a,constant temperature that allows us to,do very high volume and they can all be,consistent across the board the griddle,is also used for french toast made from,our house-made brioche and biscuits for,some of our biscuit sandwiches,right next to that is the deep fryer in,the grill station one of our best,sellers over the years has been our,fried chicken and waffles and we can't,do fried chicken without the deep fryer,so we marinate the chicken for a day or,two in buttermilk base with lots of,great seasonings and spices like onion,powder garlic powder cracked black,pepper a little bit of cayenne and then,we dredge it in a mix of cornmeal and,all-purpose flour before dropping it in,the fryer that's the key to giving the,chicken that really great crispiness,we'd never be able to do big batches,like this or get the level of crispiness,without fully immersing the chicken in,oil with a deep fryer so next to the,fryers we have a charcoal grill with our,briquettes on the bottom this gives a,nice char grilled flavor to things like,burgers grilled chicken sandwich we're,grilling off some ham right now for the,eggs benedict and for some of our,omelets and then we also use part of the,grill for keeping a bain-marie for,keeping some of our sauces and,condiments hot the bain-marie is,basically a hot water bath another,french term so the sauces don't burn and,it's in a central location for all sorts,of different dishes that grill is really,hot i mean i would say 450 to 500,degrees,and it melted the camera it wasn't my,idea to put a camera above a 500 degree,grill this area is our waffle station if,you look at the kitchen and the way it's,set up across the waffle station is the,fry station so it makes sense that the,waffles are made on one side the fried,chicken on the other and when it comes,to putting out a final dish of fried,chicken and waffles they work hand in,hand so when you're doing the fried,chicken and waffles you have a,bain-marie of waffle batter you have,your waffle iron grills across you have,your fried chicken and batches cooked,and then you're making waffles all day,long i think what makes our waffles,great is they have the addition of some,of our sourdough starter in it as well,as a little bit of cornmeal in the,waffle batter for crunch the sourdough,starter is what gives it a little bit of,stretchiness it crisps up the waffle,really nice and you get that little,something where someone says wow these,waffles are really good moving down the,line we have our mizon plus station or a,cold station this has fixings for,omelets cheeses,veggies we only use whole fresh eggs all,of our finishing touches and other,ingredients for assembly go here as well,at this point i just want to mention how,we have a massive delivery and takeout,operation basically another satellite,kitchen right next to our main kitchen,we have a separate griddle we have a six,burner range with all of our to-go,containers at our fingertips with all of,our mise-en-place separate from the,kitchen line so we basically have two,separate kitchen crews working in tandem,working together there's a crossover,here so when it's less busy i might have,one person doing all the eggs for to-go,orders and delivery and i have another,person doing you know benedict's or,omelets for the restaurant since the,pandemic our delivery volume has just,enormously increased i see people on,houston street on a bench eating our,pancakes in a taco container so back in,our main kitchen we have a full range,with a lot more burners carlos sarala,one of our chefs who's been with us 20,years i started in the kitchen carlos,was my right hand man he was washing,dishes people cared about cheapest,breakfast but okay but yes it has been,two years since i created that video so,i kind of want to give you an updated,version plus that video is going to have,a whole bunch of old prices and then,also i feel like it was very cringy in,that video not just that when a lot of,my beginner videos like i feel like my,acting was super horrible watch in,another two years i'm gonna think that,this video is cringy and then also i do,want to show you as many breakfasts that,i can find for under 10,okay but yes let's go ahead and get,started,so for this first part we are going to,start at planet hollywood which is,already known for all this cheap eat,we're gonna go ahead and get started,here at la,falsa once again we are here at the,salsa cantina inside of the planet,hollywood uh so for their breakfast,special it's only from 8 a.m to noon and,for them they have a 5.99 two eggs any,style now before i do start on the food,i do want to show you guys something,that doesn't really exist anymore but,they do have 99 bloody marys it is a,little small but i mean it's okay it'll,do the job especially if you're kind of,just craving a bloody mary,now if you don't want to do the bloody,mary they do have other breakfast,cocktails just for 4.95 that's cheaper,than your breakfast,i went ahead and i chose the exact same,thing that i got basically two years ago,so for mine i got the scrambled eggs of,course the southwest potatoes a choice,of bacon and then the flour tortillas,because i kind of want to make breakfast,tacos out of these,i'm going to do the same thing as last,time and put cholula on it that was good,but i do want more cholula now i do have,to point out something so if you did,watch my old cheapest breakfast video,you'll know that this was 4.79,the price did go up to 5.99,the audacity i'm just kidding things,have gone up so obviously things like,cheap breakfast has gone up as well,however though their bloody mary's have,remained 99 cents after all these years,so i'll forgive you this type of salsa,i am so full i should probably go walk,this off good thing i have my besties,currently it's the beginning of summer,which for vegas that means it's about to,be our rainy season and we get showers,at the randomest time so you always have,to be prepared not only are vestiges 100,waterproof and snow proof but they're,super cute and i think that they go with,all my outfits,they are made from dimetex which is a,dual climate knit material that keeps,you cool in the summer and warm in the,winter and you all know the type of,weather we get here so i'm more than,happy to wear them,they're sustainably made and vegan which,means less material ways less waterways,and no animal byproducts i've said it,over and like a heart,oh I love cream in my buns,I love a thick bun with cream I love,that,oh my God that's like cake an auspicious,start to this day I'm loving it let's,get this show on the road Annie are
