so it seems like everywhere you turn,around these days you're gonna find,another,keto friendly or low carb bread and it's,great to see this stuff coming out there,it's great to see people,putting their best foot forward when it,comes down to living a lower,carbohydrate lifestyle,but let's be real just because it's keto,doesn't mean that it's healthy or that,it's clean,or that it's truly even keto friendly,okay a lot of people can easily jump on,a marketing bandwagon and,slap a keto label with no real,regulation nothing's really,defining if it's keto or not so i'm,seeing a lot of these keto breads and,this started a while ago i did a video,when i went to costco,and i found that they had keto bread and,i uncovered,keto bread there and i took one look at,it and i was like whoa is this what's,out on the market right now,so i figured i'd put together a little,shopping guide to help you understand,what you should be looking for on a,label,if you're shopping for true low carb,bread for is net carbs this,sounds very elementary to someone that,is an avid keto person right but it's,important to note because i've seen a,couple of particular brands i'm not,going to name names,that claim high fiber and therefore,implying it's automatically low carb,net carbs are what matters not the fiber,content if the net carbs are still going,to be,5 6 7 10 grams of carbohydrates even if,the fiber is exponentially higher,that does not mean that it's keto,friendly so disregard fiber at the end,of the day,and look at the net carbohydrate number,that being said there's a curve ball so,if that net carbohydrate number,is factoring in sugar alcohols it throws,a pretty big wrench in things,because as far as what the fda requires,on a label,sugar alcohols can technically be,subtracted from the net carbohydrates,so that means you could have a bunch of,sugar alcohols in something,and it's going to tell you that it's low,carb even though those sugar alcohols,may contribute to your overall,carbohydrate load,not necessarily blood sugar but still,carbohydrates okay,so these are not necessarily always bad,but there's something you want to be,cognizant of okay,xylitol maltitol mannitol,isomalt even glycerin in bread you have,to be careful of,because there's a study that was,published in the canadian journal of,diabetes it looked at xylitol,and they found that about 50 of xylitol,is actually absorbed,meaning 50 of the carbohydrates from,xylitol were actually affecting,the person as way of carbohydrates so a,general rule of thumb,is to not follow what the net carbs say,when it comes to sugar alcohols,take the sugar alcohols divide it by two,and that is the true carbohydrate effect,so,simple math here if you have 10 grams of,sugar alcohol,in something you're gonna count five,of those carbohydrates you're gonna,count half of those because it's safe to,assume that 50,will get absorbed so in other words be,very cautious,with sugar alcohols a lot of times i'll,load them into a product to add flavor,to something that might be a little bit,bland,another thing is the types of fiber okay,chicory root is commonly used,in keto breads or low carb breads small,amounts of chicory root is fine but the,amount that is needed in bread to really,give it the volume,and the texture that they're after is,quite a bit and there's quite a few,studies that,demonstrate that chicory root can cause,some pretty severe,gastric upset another thing you might,see is inulin which is going to be an,even more concentrated form,again inulin can be used as a prebiotic,fiber and not always bad,but if you're consuming two slices of,bread you're gonna have a lot of inulin,which is probably gonna make you feel,fairly uncomfortable but when it's,combined with NO Carb Cloud Bread! 3 Ingredient Takeover - Mind Over Munch

Hi there and welcome to Mind Over Munch,two ingredient takeover where I make delicious recipes out of just two,simple ingredients. Today I'm making my delicious,no carb cloud bread. Say What?! Thumbs up for no carb bread.,the two ingredients are,Eggs,and cream cheese. However this is technically going to be a three,ingredient take over because they're the one extra element that's necessary,and that its baking powder. But that's a pantry item so that doesn't really count.,You're gonna start by separating your eggs. Your yolks in one bowl,and you're white in another. You can do it the fancy way where you toss the egg back,and forth between the egg shell,or you can do it the way I do it which is using my hand as a yolk filter.,Viola, separated yolks and whites. To our egg yolks we are going to add our,softened cream cheese.,Completely room temperature softened and today I am using a little bit of,sweetener and salt just to bring out all the flavors of the bread,but they're absolutely optional. Whip it up to combine.,Try to get out any lumps. It is important that the cream cheese,is full fat for this recipe but don't worry it is only a fewtablespoons.,I've also seen people make this with cottage cheese but again you wanna make sure,it is full fat if you choose to do that. I personally think cream cheese yields,a nicer final product texture wise. Generally if a recipe is lower in one,macro-nutrient it has to be higher in one of the others to compensate.,So since this recipe has no carbs at all it's gotta have some fat and protein.,Now to our bowl with the egg whites. Here is where I am going to add in my,baking powder. Grab your hand mixer and whip it on up until,your egg whites are nice and fluffy and you've got those stiff peaks.,You don't wanna over whip them just enough so that when you pull the mixer,away a stiff peak remains and is able to hold form without collapsing.,Now it's time to integrate your egg yolk mixture into your egg white mixture and,you just wanna,fold it in very gently. Again you don;t want to over mix it,just enough until a light yellow mixture is cohesive throughout.,Now while I was making my bread dough mixture I had a few baking sheet lined,with parchment paper,preheating in my oven, preheated at 300 degrees Fahrenheit,So you want the pans to be hot before you put the mixture on.,This is going to help them cook evenly throughout. Spray them down,then lightly spoon on your mixture into a little circulars slices or rounds.,Bake them in the oven preheated at 300 degrees Fahrenheit,for 15 to 20 minutes until light golden brown. A quick note,Every oven is different. My oven tends to get a little bit hotter than it says,I actually had to be these at 275 to 280.,You know your oven best, try it out at 300 but if they bake too quickly or brown too fast,next time try to turn the oven temperature down. The end product is,so nice and fluffy and you're gonna wanna eat them right then. But wait.,These are best after they've had some time to sit.,Once these have cooled slightly you're gonna place them into a plastic bag and let them,sit for a few hours,,or if you can overnight. i tried making sandwiches out of,something other than keto bread and let,me tell you some were amazing some,actually shocked me and others were just,simply downright ridiculous,if you like to scroll social media,you've probably come across some really,cool looking keto hacks and i've seen a,lot of creative ways to make keto,sandwiches other than using bread or,truffles so i figured i'd try some of,these popular ones so i can give my,honest review now let's get to tasting,so i can show you which ones you should,make,first i think it's important that we all,know the proper way to make a lettuce,wrap sandwich there's nothing worse than,biting into a lettuce wrap sandwich and,it just falls apart so i'm going to,attempt to make an unwitch the jimmy,john style according to a couple of,videos i watch the key is to use two,sheets of parchment paper,you want to cut the iceberg lettuce in,half and then core it out,and once after you've washed your,lettuce and let it dry completely we're,going to layer down around five to eight,pieces of the lettuce in a small,rectangle,then we add our favorite sandwich,fixings lots of mayo i'm doing turkey,bacon mustard,and then the rolling of the sandwich is,the key you want to start with one,corner and tuck it over the sandwich,tuck it tightly so because we're gonna,roll this super tight and then start,rolling and tucking at the same time,then we'll fold in those edges and,complete the roll,cut in half and wow look at this beauty,so now let's see how this holds up,i think the key too is to leave the,parchment paper on that's what jimmy,john's does,that's so good,okay so i know most of us have already,had a lettuce wrap sandwich before so,let's try something else other than,lettuce let's use a cucumber,i've seen some videos where they slice,the cucumber in half lengthwise and then,dig out the middle and then just use the,two halves as bread but we're going to,try something a little bit different,this is going to be inspired off of a,video i saw on tick tock instead we're,going to make a wrap we're going to,layer down slices of cucumber and then,we'll roll it up,i'm using a mandolin so that i can get,even slices but a potato peeler will,also work you need around three or four,slices of cucumber,and now we spread on some cream cheese,except it doesn't want to spread because,it has so much moisture on it so make,sure you pat it dry first with a paper,towel and then spread on your cream,cheese,then sprinkle a little bit of italian,seasoning and i'm going to add pepperoni,and pepperoncinis,and then we roll it from the bottom,and this does not want to roll very well,so i looked up on the video again and,saw that she had made a clean cut on the,very edge of her cucumber slices to get,rid of that green hard part and then it,was easier to roll kind of,and she secured it with a toothpick and,it looks like i'm gonna have to do that,too and i gotta tell you any sandwich,that i have to secure with a toothpick,in order to hold it together just lost,points in my book not only that but it's,super slippery from all the moisture,from the cucumber okay let's give it a,whirl,oh man it needs to be blotted off again,so much moisture,messy,it's good though wow really good that,cucumber sandwich is a mess to eat but,it is really good so i actually,recommend it,instead of cucumber let's try another,popular replacement for tortilla which,is cheese slices i took these,instructions off of gamgam's kitchen on,tick tock and you know if a grandma made,it it probably has to be good i loved,everything my grandma made layer down,four slices of pepper jack cheese or,whatever cheese you want to use on a,sheet of parchment paper or splat mat,i'm going to cook mine in the airfryer,at 340 degrees for around seven to eight,minutes but you could also bake it in,the oven at 350 degrees for around 8 to,10 minutes you just want to cook it,until the edges start to get golden and,crispy then we're going to let it cool,for a few minutes but not too much or,else it might get too hard to roll,spread on mayo deli meat any of your,favorite fixings and then you roll,oh yuck look at that mayo seeping,through it looks like pus,okay let's try this it certainly is,greasy from that cheese,i like it this is similar to having,those folio wraps i think they're called,folio wraps where it's just a cheese,wrap,but a lot cheaper to make and easier to,make on your own too i like these,because you can hold on to them it does,leave my fingers a little bit greasy but,it's something that i could definitely,pack in my lunch,up next we're going to be using the,incredible edible egg and this is a,hard-boiled egg i don't know if you guys,have seen people make mini little,sliders out of eggs hard-boiled eggs but,that's what we're going to be making,they're so cute but i just have a hunch,that they're going to be really,impractical and kind of a pain if you,wanted to make up a bunch slice hey guys I'm here with my lovely wife Karen and we are going to make the most,incredible recipe for bread you've been waiting for this this is the ultimate,bread and there's no flour no gluten no bad stuff so how do you do this Karen,it's so easy you're gonna love it so it's 1 cup of almond flour in my Santa,cup measuring cups it is one cup of arrowroot flour you use a little,arrowroot here arrowroot is a low glycemic flour it's made from a root so,it's its small amounts it's okay arrowroot that's why they call it root,that weren't exactly this doesn't come out as quickly and then 1/3 cup of,coconut flour and these combined give it a really neat texture most of the,natural breads out there kind of tastes terrible like they're calm and it's like,a sponge cake like bark yeah then we're going to just do 1 teaspoon of salt and,that's it for the dry ingredients mix it up,very very so smells really good already and then you go on to beast which is,also very simple so now we're going to do the yeast portion we're going to pour,in wanted a quarter cup of warm water between 105 and 110 degrees and the,temperature really is important if it's too cold or too hot the yeast will not,do its thing we're going to add two teaspoons of what sort of maple syrup,that's for the that's the food for the yeast so it's not going to be a plug,because they're yeast of anything though and produce carbon dioxide now we're,going to take two teaspoons of instant dry yeast and this equals one packet one,packets usually two teaspoons if you're using the smaller packages now is this,delicate I mean like is it could you actually mess this up you can mess it up,and I have messed it up I used water that was way too hot and what's supposed,to happen now is the yeast is going to eat this the maple syrup what any of the,true is the water well like I said 105 210 okay and then the yeast is going to,eat the maple syrup and it's gonna push out a little gases but that's gonna foam,up and that's actually what's going to make your so you basically keep it there,and then you're waiting ten minutes okay alright I just don't want to give you,any opinions because you have the opinion wasn't in the rest your opinion,wasn't in the recipe right is that a subtle hint it's subtle is it subtle is,it subtle enough right okay for ten minutes there okay this is wait okay,really if you stand and look at it you'll see little bubbles coming up it's,like little yeast fireworks it is alive that's the really cool thing it is,totally alive and they're so what's happening is the yeast,is eating the maple syrup and literally pushing out little excreting little,gases and that's what helps your bread rise yeah that's amazing mm-hmm and this,is exactly what's supposed to happen so that's what's good,uh-huh we're doing good the key is the temperature oh yeah but also your yeast,if your yeast isn't any good anymore you can have the perfect temperature water,and it won't do that okay so after about 10 minutes your yeast is going to be,beautiful and foamy it's done it's eating of all that maple syrup isn't it,yeah so now what we're going to do is we're going to add two tablespoons of,psyllium and one-and-a-half tablespoons of ground chia psyllium is kind of like,a fiber yeah and you know we get whole Chia and then we have one little coffee,grinder that we use just for spices and seeds and stuff like that so you're,going to let it sit in there for two or three minutes and it's going to get,really gelatinous and thick and then you're going to whisk it so now you're,going to cut this because we have to wait all right so this has been sitting,for just two or three minutes in it it got gelatinous lucious so now we're just,going to stir it all in make sure it's all whisked in quisque,alright good now just going to put this in our dry ingredients,and mix it up and you are going to see this become it's amazing you know this,is one of those things that people been trying to figure this out for yours,you can't really find a good bread recipe without the wheat so we found I,was so surprised how well this turned out I did find this online I'm not sure,what we've changed but I appreciate people who have done all the research to,figure out especially the chant and the psyllium because that's amazing now it's,going to look gloopy like this and you're literally going to need it just,for one minute yeah I think what happens is that you have them you don't have the,gluten so gluten is like glue and so you have that I think probably combination,chia seed some of the fiber tends to act like glue which is perfect because we,can do that all day long yep now you can take this out of the,bowl I'm just leaving it in the bowl can you make a pizza crust with that like 2 MINUTE Keto Bread | How To Make Low Carb Bread For Keto | 1 NET CARB

so a couple of weeks ago i showed you,guys how to make a whole loaf of,low-carb keto white bread and while that,recipe is absolutely delicious it does,require quite a bit of work so i wanted,to show you a super easy and quick way,to make keto bread like two minute quick,way to make bread just in case you don't,have enough time or you don't want to go,through the whole hassle of making a,whole loaf of bread so with that being,said let's get started and i'll show you,my two minute keto bread recipe all,right so first things first you'll want,to get out your food scale because we're,going to be weighing these ingredients,out to the gram and you're also going to,want to get out a medium sized bowl so,when you've got both of those out the,next thing is just getting out the,ingredients and the base of our keto,bread recipe today is blanched almond,flour i've recently switched to using,kirkland's blanched almond flour because,it has the lowest neck carbs i've ever,seen for almond flour for 30 grams it,only has two net carbs which is way less,than the bob's red mill and also this,kirkland's almond flour is much cheaper,than the bob's red mill as well anyways,for today's keto bread recipe you'll,want to add 4 tablespoons or 56 grams of,that blanched almond flour to your bowl,and then once you've added the almond,flour the next thing you'll want to add,is some unflavored whey protein powder,today i'm using the unflavored whey from,i superior i really like this stuff,because it bakes extremely well and it,has zero carbs a lot of times you can,replace a little bit of the flour of a,recipe with unflavored whey and it,reduces the carb count of a recipe so,with that being said for today's keto,bread recipe i'm gonna add a half a,scoop or 15 grams of that to the bowl,i'm also going to sweeten the keto bread,up just a little bit without adding any,carbs by using a half a teaspoon of,confectioner's urethral we also want the,bread to rise a little bit so we're,gonna add a heaping half teaspoon of,baking powder as well as a quarter,teaspoon of example gum and then last,but not least we're going to add 70,grams of water to the mix so now at this,point you want to mix all those,ingredients until a thick batter starts,to form in the bowl once that batter,does form and all the ingredients,dissolve into one another that's when,you want to get out a three cup,tupperware container because it kind of,looks like a slice of bread when you,think about it the base of the container,anyways and then at this point you want,to generously coat it with baking spray,add the batter to the container and then,evenly spread it out with a spatula so,now at this point our keto bread is,ready to go in the microwave and all,microwaves have different power levels,my microwave is a 700 watt microwave,which is really weak so in my microwave,the keto bread takes two minutes to cook,but your microwave is probably more,powerful than mine and will most likely,take less time to cook anyways once the,bread is done cooking it's going to end,up looking something like this and at,this point you want to take it out of,the container transfer it to a cutting,board and use a bread knife to cut it in,half by the way this is what the inside,of the two minute bread looks like it's,absolutely spot-on white bread,consistency i also like to cut these,halves in half just to make four slices,of keto bread this way each slice only,has one neck carb also this keto bread,toasts incredibly well so that's what i,usually do with it and then check this,out this is what the toast ends up,looking like how good does that look so,good right i hope you guys enjoy the,bread if you want more information about,it there's more info in the video,description below enjoy guys,you
