for this test we're going to pit the,good against the bad the noble against,the nasty the healthy sprouted grain,Ezekiel bread against the lowly sad,pathetic doughy miserable white bread,will there really be that much of a,difference when it comes to the blood,sugar spike,most people who are into eating healthy,are familiar with Ezekiel bread this,bread loosely based on a passage in the,Biblical Book of Ezekiel is considered,by most to be one of the healthiest,breads you can eat far more healthy than,nasty old colon clogging white bread and,I've had quite a few requests to test,Ezekiel bread so today I'm going to do,it,or I should say we're going to do it,since my wife Benedicta will be joining,me the other day I went to my local,Trader Joe's grocery store and picked up,this loaf of Ezekiel bread at least this,is one of the versions of it there are,many this one is made by the Food for,Life company and looking at the wrapper,I have to say I've never seen so many,impressive boasts about a bread product,on a single bread wrapping it's organic,it's low glycemic it's biblical and they,do something on this bread wrapper that,I've never seen on any other bread,wrapper they tell you the glycemic index,number which is a low 36,now that is impressive since white bread,has a very high glycemic index number of,around 75 and even whole wheat bread has,a glycemic index of 71 or more so for,this bread to have a glycemic index,number of 36 is quite a boost from the,wrapper we read these words different,from most breads today,this unique bread is made from freshly,sprouted live grains and contains,absolutely no flour we believe in,sprouting the grains we use in our,breads because sprouting is the best way,to release all of the vital nutrients,stored in the whole grains foods for,life breads are the substance of a meal,not just something that holds a sandwich,together see the difference fresh,sprouts really make well after all that,it makes you almost feel like forget,meat forget salads forget eggs and,cheese and steaks and olive oil just,give me bread bread and more of this,sprouted bread but if you know me you,probably know what I'm about to say,grains raise blood Sourdough bread. Does sourdough bread raise blood sugar? What,is the impact on blood sugar within the first two hours of,eating sourdough bread? And is the blood sugar spike from,eating sourdough bread any different from eating other,types of breads. What is the GI or glycemic index of sourdough,bread? These are some of the questions that I'm going to,tackle in this episode of KNOW WHAT YOU EAT. Welcome to the,Habits Pharmacy where Habits become Medicine. I'm,Dr Chan, your host. I always review very thoroughly the,eating habits of all my patients, including those with,diabetes. And sometimes I will see some of them having,obviously excessive amounts of bread. And I would point it out,to them and some of them would tell me, "Doctor, these are not,normal breads. They are sourdough breads. They do not,cause blood sugar spikes. Or "Doctor, I was told by my friends,that because of the special way that Sourdough breads are made,,they are different from other breads. So people with diabetes,can take sourdough breads freely." So, let's examine this,statement. "Sourdough breads do not raise blood sugar and,people with diabetes can take it freely in any amounts,without any concerns about having any unhealthy blood,sugar spikes from eating sourdough breads." True or,false? What do you think? Let's have a mini quiz, a multiple,choice question quiz with regards to sourdough breads.,Which of these statements do you think is true? Is it A,,sourdough bread does not raise blood sugar. People with,diabetes can take it freely. Or is it B, sourdough bread raises,blood sugar as much as any other breads. People with,diabetes should still be mindful of that. Or is it C,,sourdough bread will still raise blood sugar albeit to a,lesser degree than most other breads. People with diabetes,should still be mindful of the fact. Which of these,statements do you think more accurately reflect how,sourdough breads might affect blood sugar? Is it A, B or C?,Why don't you write down your answer in the comment section,below? One way of looking at the impact of any food on blood,sugar within the first two hours of ingestion is by,looking at the GI or glycemic index of that food from,databases of GI tests done on that food. And my go to for GI,information is this website maintained by the University of,Sydney, which has one of the largest databases of GI test,results. Go to glycemicindex.com. Then click on GI,search. Type in sourdough and click search. And you will get,a listing of all the records of GI testing done on different,types of sourdough breads in the database. As you can see,the GI of sourdough breads are in the fifties range When one,say that the GI test result of a particular brand or recipe of,sourdough bread is say 54. What does it actually mean? To put,it very simply, almost at the risk of over-simplification. We,can take it to mean that after eating that particular,sourdough bread, the resulting blood sugar spike is about 54%,of the blood sugar spike from eating the equivalent amount of,glucose in the two hours after ingestion. So, with a GI in the,50s range, the GI of sourdough bread is in the low to medium,GI categories. Similar to wholemeal bread. albeit generally a,little lower. This is how the range of GI for sourdough,breads compare with other common staples such as oats,,rice, quinoa and barley. Although the glycemic index,rating of sourdough bread is in the 50s. The actual blood sugar,spikes or the glycemic response for any individual,after eating a meal containing sourdough bread is determined,by more than just the GI of the sourdough bread. It also,depends on a few factors, including that individual's,glucose tolerance, the amounts of sourdough bread eaten, as,well as what other foods were eaten together with the,sourdough bread in that particular meal. At this point,,I want to highlight that the focus of this video is on,discussing the blood sugar impact of sourdough bread. I am,not comparing sourdough bread with other breads in terms of,nutrition, phytates or gluten levels in this video. So, let's go,back to the mini quiz I challenged you with at the,beginning of the video. The answer is not A, it is not,correct to say that sourdough breast does not raise blood,sugar and that people with diabetes can take sourdough,breast freely in any amounts without any concerns about,blood sugar spice. But at the same time, it is also not quite,true to say that sourdough breads raises blood sugar as,much as any other types of breads. The correct answer,should be C, that sourdough bread will still raise blood,sugar albeit usually to a lesser degree than most other breads.,Therefore although sourdough bread has a lower glycemic,index than many other breads, people with diabetes should,still be mindful that sourdough bread with a glycemic index of,about 55 will still raise blood sugar albeit to a lesser degree,than the higher GI breads and should therefore still be mindful,of the other factors that I have highlighted earlier in the,vi

hey there it's steve from serious keto,and in this video we are going to test,the blood glucose impact of sprouted,grain bread,and whether or not it's all right to eat,on a low carb lifestyle have done a,number of reviews of breads that either,claim to be keto,or low carb or keto friendly and i'll,link to that playlist right up here,but in each of those videos i got one or,more comments,asking me what would be my blood glucose,response,to a sprouted grain bread i've had,ezekiel bread before and i can't say,that i'm a super big fan but the last,time i was at costco,i saw this angelica bakehouse bread it's,a seven grain,sprouted grain wheat bread looking at,the macros we have,12 grams of total carbohydrates three,grams of fiber,for a net nine grams per slice,so for non-keto people that would,probably be considered,fairly low carb for keto people not so,much,in terms of ingredients we have sprouted,whole grains wheat berries quinoa millet,oat groats i've never heard of a groat,before oat groats,barley rye berries amaranth water whole,wheat flour wheat gluten,agave syrup yeast oat fiber and two,percent or less of salt,prune juice concentrate molasses and,natural flavor,so this is certainly not keto i'm not,claiming that it's keto,and they're not claiming that it's keto,my interest here is purely to see,does sprouting the grains change the,blood glucose impact,of consuming a bread so to keep this,equivalent with my other bread tests,i am going to eat two slices of this,bread one slice will be untoasted,the other will be toasted so i can give,you my feel on texture and taste,i will not be adding any fat or anything,else to these i'm not going to be making,a sandwich in this part of the video,because if you've seen my video on,resistant starch,you know that fat has a significant,blunting effect on blood glucose,so i want to test this just straight up,i will be testing this with both the,levels continuous glucose monitor system,as well as the keto mojo i took my blood,glucose and ketone readings with the,keto mojo this morning,and blood glucose was 80 ketones were,1.3,for what it's worth i have done a number,of different snapshots i do,a sample about once a week where i take,a blood glucose reading with the keto,mojo,and then i take a reading with my,continuous glucose monitor and with the,exception of situations where my blood,glucose is rapidly changing,you know like with the dawn effect,they're always within five points of,each other,so pretty consistent results there i,will be testing my blood glucose over a,two hour period with the level system,now i'm in a completely fasted state and,i wanted to make sure that i was past,the dawn effect,so i waited until my blood glucose was,stable,for at least an hour and i've been right,around 88,to 90 for the better part of the last,three hours,so i think we're good to go i've got a,slice already in the toaster,as i eat this plain bread here,first off i really enjoy the texture on,this back in my pre-keto days when i,would eat a wheat bread i wanted it,really really hearty,something that would stand up to a,chunky peanut butter and strawberry,preserves i just made myself suddenly,salivate when i said that,and this is like that this is a this is,a hearty bread,and the flavor i really enjoy as well,this is the sort of bread,that i miss on keto now i'm not going to,make you watch,me eat this whole thing but just trust,that i'm eating the whole thing,and now we have our toasted piece,again this is really good it does have,me,really really wanting butter rather,badly also i think,based on the texture of that first bite,if i were to make a sandwich out of this,you know a thicker sandwich,i really think that my gums right behind,my bottom teeth,would probably take a beating from this,it's uh,once toasted this texture does get a,little bit gritty,on the surface,so having just finished two slices of,that bread,i can tell you i enjoyed the first bite,a lot more,than the last bite it's one of those,things where you bite into it you're,like oh,i remember what bread tastes like now,this was great and by the time you get,finished you realize give up red and they just can't,do it so if you're gonna eat bread I,want to make sure you guys are eating,bread that's nutritious made with real,and good ingredients and it's not gonna,spike your blood sugar and make you,hungry 30 minutes later I want it to be,really really satiating bread,so before we break down all these breads,hook me up you guys subscribe to our,channel because every stuff,the white bread and the grains like this,will spike your blood sugar and make you,hungry 30 minutes later and has no,nutrition in fact they strip them all,away and if you read the ingredients,that put some of them back in man made,which is really really bad and the,reason why you want to buy whole grains,is cause it's a complete green it has,the bran the germ and the endosperm when,you have the enriched you'll get rid of,all the good stuff except the endosperm,which is why they add that nutrients,here because it took all the good stuff,away then you have stuff here like,partially hydrogenated vegetable oils,tons of chemicals and bad ingredients,and generally the bread is super light,and you can squish its into a ball like,that it's typically a bad thing so this,is a no-no that I think you guys all,knew that,then I brought this with me to any fob,bred from pet root pepperidge farm is,gonna be a know this is probably one of,their life or premier lines the,farmhouse oatmeal bread and it feels,kind of heavy and dense and you might,think it's good but this is where you,have to read the ingredients on the back,number one it's within rich wheat flour,so not whole grains at strike one,it's got soybean oil does it say it's,non-gmo No,so they're using a highly processed,highly refined soybean oil that has a,chemical called hexane to extract all,the oil so that's really bad but a lot,of breads will use something like,monoglycerides it's another word for,Ingo conditioner it's a chemical they,put into the bread so it bakes quicker,why do you want to bake bread quicker,because they're a factory right they,want to churn and burn these out as,quickly as possible good bread is worth,waiting for us so anything that has a,little conditioner and I'll put the list,of all the names for that you want to,avoid so this is a no and anything from,pepperidge farm as and no let's go to,something really really good sprouted,breads these are the Bobby approved top,choice for bread because nutrition and,ingredients is amazing this brand is,silver hills it's a really good quality,bread now why do you want sprouted,grains because it's a grain soaked in,water until a little tail forms and it's,ground into a paste and made into bread,sprouted breads are very easy for their,body to digest plus when you sprout a,grain there's a ton more nutrients your,body derives out of it so it's a double,whammy which is why you want to buy this,one and then look at the ingredients,this one's my favorite the Big Reds,bread organic sprouted wheat the grains,seeds nuts you don't see any chemicals,you don't see any dough conditioners,this stuff is really good if you want a,lighter texture the little big bread,it's a little softer and chewier great,for sandwiches and then right above it,is brown berry which I want you to avoid,because marketing gimmicks right natural,weeds and other titles like cracked,wheat multigrain seven grain all-natural,doesn't mean anything all you have to do,is turn it over and read the ingredients,the first one is cracked wheat cracked,wheat is another word for unbleached,enriched white flour,not work there's soybean oil in here,once again is it non-gmo no it's not so,this is just as bad as white bread bu
