And at the end,,I'm going to share what you should really focus on for weight loss.,So what's so bad about bread?,Bread is very easy to overeat and you're going to put on weight,if you consume excess calories. And bread also goes very well,with quite calorie dense things like butter,,(which is about a hundred calories per tablespoon) or olive oil,,(which is about 120 calories per tablespoon). And you know,,when you're dipping that bread and olive oil,,you're probably getting quite a lot on there.,But bread isn't inherently bad. Carbs in general are not inherently bad. And you,don't need to give them up in order to lose,weight. Bread is just one component,of your diet and you could have a single slice of bread or even two every,single day and still meet your calorie and macro targets.,Bread can be part of a healthy weight loss diet.,It's basically a matter of quantity and often quality as well because,the amount of fiber in the bread is going to impact how your body absorbs it.,You can also find bread that is fairly high in protein as well,,which can be useful for weight loss. So let's have a look at a specific example.,This is Dempster's whole grain,,and two slices have 190 calories, which is no big deal really.,It's got four grams of fiber, which is great.,And it's also got eight grams of protein. So four grams of protein per slice.,If you have a chicken breast sandwich or a turkey breast sandwich,,then this could be a great choice.,You've got two slices that are providing fiber and providing some additional,protein. Why would you want to give up bread,if it's one of your favourite foods?,That's not a system I believe in and it's possible to lose weight while eating,bread.,So why would you want to go without? Carbs in general are not the enemy. Carbs can,provide energy.,They provide you with fiber, in many cases, and they can fill you up.,And as I said, they can also be very pleasurable.,It's really important for you to enjoy your food,,to enjoy the diet that you've put yourself on so that it's healthy and,sustainable for you. Now,,I have a personal example of when bread can go really wrong. ,Back in my twenties,,when I was binge-eating and my weight was up and down, and I was constantly,on and off a diet, bread was one of my favourite things to eat. In fact,,I used to love the really thick, crusty whole grain soda bread,,but it's actually very calorie dense because it's very heavy bread.,And I used to love to dip it in tons of olive oil.,And I could eat an entire loaf of this soda bread, just in one sitting. I mean,,we're talking about a day's worth of calories in a very short time.,Then I convinced myself that because it was whole grain bread,,it was healthy and I was dipping it in olive oil. Then that's also healthy,,right? But at the end of the day,,what matters for weight loss is the calories that you consume and then the,macros that they're made up of.,So you want to make sure that you produce a calorie deficit,and burn off more calories than you take in. Now,,there are a lot of ways of doing this and you can obviously increase your,activity levels either through weight training or cardio exercise,,general movement.,But the easiest way to produce a caloric deficit is to manage your diet.,So making a change to your nutrition plan,,that allows you to reduce your calories.,And for some people who are over consuming bread,,if they're having it all the time and perhaps with a lot of calorie,dense oils or fats on top,,then eliminating bread automatically eliminate a lot of calories.,And that's why people who give up bread find that they lose a lot of weight,sometimes, if they were eating a lot of bread before.,But that doesn't mean that having one or two slices a day,,even with some olive oil or some butter wou

the same while making rotis.,Third: salt.,And fourth: yeast.,You'd ask about the purpose of putting salt in breads.,There are three main reasons.,First, salt is a natural antioxidant.,It works as a natural preservative,that enables us to store the bread longer.,Second, the taste of the bread improves with salt.,Third, and most importantly, the gluten strands strengthen with salt.,The first stage of the process is kneading the dough.,When you do this, the gluten in the flour,,come together so that the bread or the roti,,remain in one piece.,Putting salt in the dough strengthens the gluten strands.,Then comes our fourth ingredient.,Yeast.,Friends, yeast is a single-celled microorganism,included in the fungi group.,In Hindi, it is known as Khameer.,When these microorganisms react with the carbohydrates in the flour,,two components are released.,Ethanol and Carbon Dioxide.,As you already know from school, this process is known as fermentation.,The carbon dioxide bubbles that are released in this reaction,,get trapped in the gluten strands.,This is why bread expands.,As you'd notice in the photo,,there are numerous round and oval bubbles in the bread,,But in this reaction, ethanol is also released.,As you know, ethanol is actually alcohol.,What happens to the alcohol?,When we put the fermented dough in the oven,,and start baking it,,the ethanol evaporates.,The evaporating ethanol helps the bread expand more.,An interesting fact here,,the entire alcohol doesn't evaporate, a part of it remains trapped.,The American Chemical Society ran some experiments in the 1920s,,and found that the alcohol content in breads may be between 0.04% to 1.9%.,No need to be wary of this.,This tiny amount of alcohol will not harm you.,In fact, those scientists observed that,this remaining alcohol enhances the flavour of the bread.,The bread tastes better due to this.,Friends, this is the traditional way of making bread.,Humans have been using this method for centuries, all across the globe,,to make breads.,In 1857, Louis Pasteur gave a scientific understanding of the fermentation process.,After this, we came to know what is fermentation process actually.,Before this, people were using this process without knowing what was happening.,Our roti and bread,differ in only two ways.,While making rotis, we do not use yeast or salt.,That's why the rotis do not expand like the breads.,And this is also why we cannot preserve the rotis for long.,If you keep the rotis in room temperature,,it wouldn't be edible a day later.,Since the rotis do not expand,,we categorise it as a flatbread.,Flatbreads like roti are popular all over the world.,You'd find Mexican tortillas in Mexico,,they resemble rotis a lot.,Often tortillas are made of corn,,while days and i just wanted to,give my opinion on it what i think,uh i do use both i eat both there is,like like i always say there is a time,and place for everything,so a general perception is that,rice somehow is better than white bread,because white bread everybody knows this,guy is very processed,naturally the grains obviously are not,like that so the husk,is removed a lot of the micronutrients,are removed which is true in white bread,so you end up basically with a pure high,glycemic,source of carbs and in general and this,is also very true,this is not really advisable for most,people because most,people are overweight and not,underweight,underweight people they can definitely,increase the carb,carb consumption the release of insulin,in the body,which is a storage hormone you will,store some energy,you will gain weight but most people are,not into the game to gain weight most,people are here,to actually lose weight and so that's,why most people,like white bread i can't eat white bread,but at the same time i see many of the,same people,eat white rice and if you ask them why,are you eating the white rice,they say well it's it's better it's,better than white bread isn't it,white bread is mostly perceived to be,for children you put jam on it or peanut,butter,and rice you know culturally speaking,especially in asia but now all over the,world,is something that people have been,eating for hundreds if not,thousands of years so it must be better,than the processed thing,but if you if you actually look at,contents of both,you will see that rice is not only not,better,in most cases it is actually inferior,meaning,less good how so well first of all,white rice that me and you and most,people are eating with our lunch and,dinner,it is highly processed form of rice this,is not brown rice,the husk has been removed all of the,fiber has been removed,all of the micronutrients have been,removed so rice,is kind of the water down pure,carbohydrate source,it doesn't have any micronutrients it,doesn't have barely,any fiber it is just carbohydrates,right so and if we compare it to white,bread white bread actually has,more fiber in it more micronutrients,and a little bit more probiotics which,are better for the gut,so even though the comparison seems kind,of,easy towards rice being the winner in,this,if you actually look at the content,white bread,comes out better it has more fiber and,fiber is always,better in most cases because it dampens,the the rise of insulin it doesn't let,your blood sugars come,sky high fiber slows down the release,and your blood sugars are not going to,be that sky high which is for most,people,looking to lose weight lowering the,insulin keeping it stable,not having the ups and downs in that,case if we are comparing,two foods white bread would actually be,better because,because it has more fiber in it it also,has more,micronutrients now let's let's not get,carried away,rice and white bread have very very,little micronutrients,but if i'm just comparing the two then,you will be better eating,bread for the micronutrients but overall,obviously both of them are,pretty much devoid of of any kind of,real micronutrients right we can't,compare it to an avocado,which is full of a lot of micronutrients,so this is kind of a,you know what's worse what's the worst,option,so when would i eat because i do eat,both i'm not a big fan of bread in,general,just because of the taste it doesn't,really give me that much,i do love the fresh bakery breads but,most of the time,white bread doesn't give me anything it,feels like soggy,underwear right it doesn't really mean,anything to me,i do like real proper bread but we are,talking about white bread so i'm really,not into a habit of eating it,but mostly because of the taste not,because it's worse than rice because i,do eat rice,so when would i recommend for you and me,to eat each if you want a highly,digestible source of carbohydrate,then you will be better eating the rice,like i said it is pretty much devoid of,anything,it doesn't have fiber it's not going to,slow it down so it will absorb and,digest,super easy that's why probably uh half,of world's population is surviving on,rice,from africa to south america to asia,maybe even more than half,people are literally surviving on rice,and it is and most of those people have,no issues with digestion,it really is broken down easy into the,dextrose in the glucose,and your body absorbs it and you get the,energy that's what it's for,white bread on the other hand like i,said the advantage the advantage is,it has a little bit more micronutrients,a little bit more fiber,but the digestion definitely takes a,little bit of a hit,so not everybody digests white bread as,easily as they would millions of us start the day with,a slice of toast,and most lunches in the us and uk are,wrapped in a slice of bread or a burger,bun,as a cheap flexible and delicious energy,source this is no surprise,but bread is not what it once was,modern industrial processes designed to,reduce the time and cost of baking,mean that today's bread would be,unrecognizable to our ancestors,these processes were invented with the,best of intentions,as growing populations meant more mouths,to feed,without this progress countless lives,might have been lost,but this technological progress has a,cost,today's saying,avoid gluten without the full facts and,i can look like the mad pigeon lady in,the park sort of yelling at,at,the screen because it frustrates me,immensely,that the amount of misinformation about,bread that is out there,well why don't we start with why bread,matters,and tim why is bread,important it's been demonized as sort of,the ultimate evil carb,what's the truth about how it affects,our health,what's important about bread is how much,a part of our,staple diet it is so it's,its importance is in,the percentage it makes up of all our,energy and all our meals,80 percent of british people have a,sandwich,for their lunch and that has only,happened since the 1980s,so,just that mere fact alone means that the,choice of bread has a crucial impact on,large parts of a diet which perhaps it,didn't quite have,50 years ago,so i think that's that's the importance,and it's for many people it it can be,the only source of fiber,uh,it's,crucial therefore that we we understand,bread and,we try to work out that haven't seen,good breads and bad breads and realize,that there's huge range and so your,choice of not only when to eat bread but,also what type of bread to eat are,absolutely crucial to our health,and i think a lot of our listeners asked,whether bread was basically empty,calories,they feel that it makes them put on,weight you know i think they're coming,out this was an assumption that um,the bread is not a very good part of our,diet and there's many better things that,we could be eating where are you on that,well i think i think if you at
