we have about three cups of roasted,pumpkin so whether you want to roast,your own pumpkin or butternut squash and,if you bought that cheese pumpkin,chances are you had enough for both,right so you could do cheese pumpkin,soup and you know pumpkin puree for this,for our bread pudding so we have three,cups of that if you don't want to do,that go ahead and use three cups of,pumpkin pie filling right you know that,works just as well so I have four eggs,I have cinnamon so we have a heaping,teaspoon all right are you or just I he,put your hands of cinnamon we have a,quarter of a teaspoon of allspice I'm,here why don't you sure a quarter of a,teaspoon of nutmeg so I have a quarter,of a cup of brown sugar I have a,teaspoon and a half of vanilla extract 1,cup of maple syrup and two cups of heavy,cream so this is sort of the custard,base for our challah bread so then we're,gonna soak these guys here we get so we,have 1/2 a cup of dried cranberries and,walnuts,there is over get it all in there,yes there we go mmm right we just get,this all mixed up and we're gonna throw,this into a buttered baking dish we're,gonna let it sit for at least 45 minutes,this is one of those things that it's,like at least 45 minutes or it could be,you could do this yesterday so we made,our head right you fully absorbed so you,really want because you really want all,of that challah to really soak up the,deliciousness that we've just dressed it,with oh yes beauty I'll in there and,then we throw this guy in the oven at,350 degrees for Thank You doll sure for,about 50 to 55 minutes or until the,custard is really nice and set we got,one working in the top there we go so,this one goes in there thank you see you,in about 55 minutes,all right my peen action yeah,he is far Jo like a kiss inside of it,smells like dessert or broken man it,works for both oh it smells fabulous yes,you

hi josh allen companion bread guy,miller's five grain we've been making,miller's five grain since 1993 one of,our most popular breads in the grocery,store uh organic whole grain whole wheat,whole rye,beautiful grains and also some sunflower,seeds beautiful toast great table bread,also the great basis of a savory bread,pudding so today we're going to make,butternut squash and apple bread pudding,beautiful side dish with any kind of,roasted meats chicken pork anything like,that also actually as a vegetarian,entree with a nice little salad next to,it makes a great dish so we're gonna do,it very easy i happen to know the baker,and he was happy to slice below for me,you can certainly ask your favorite,baker to slice your loaf or your,favorite bakery manager inside of a,grocery store and usually they'll do it,so i've got a 9x13 casserole dish i'm,just going to hit it with a little bit,of oil and i'm going to use the first,piece of bread here,to kind of map that around and just get,our sides nice and nice and moist so,this whole dish doesn't stick i'm not,going to break these up into little,cubes we're actually going to leave it,whole,and we're just going to layer this dish,all throughout this whole thing so if,you have to tear a loaf a little tear,apiece to make it fit that's what we're,going to do so we're going to layer the,bread,and we're going to layer some granny,smith apple any kind of fall apple,variety will work really well this is,really very very simple we're just going,to do ends up being usually about three,layers to fill this casserole dish,no rhyme or reason doesn't have to be,done perfect,so we've got the last of our apples here,going on top,we've got a whole one and a half one and,a half pound loaf of miller's five grain,if you don't happen to like multi-grain,breads any one one and a half pounds of,your favorite bread sliced will work,brilliantly ciabatta our pan bouquet,works really nice you can even do rye if,you want something a little bit heartier,but we're just going to layer it and,layer it with the apples we're going to,set that aside that was the that was the,easy part,and now we're going to go to our custard,so the custard is just the filling made,with a little bit of eggs milk cream,and we're going to start in the,processor so i roasted a butternut,squash split it in half olive oil salt,and pepper cut side down on a sheet pan,for about 50 minutes 45-50 minutes at,350 degrees and it just gets nice and,soft and we're going to just scoop out,the center of our butternut squash,right into our food processor,the sake of keeping this process moving,i will not perfectly clean the inside,but once it's roasted it's really easy,to get it all out,set that aside and into this particular,mix we're going to add four eggs,we're going to add a little bit of,italian parsley sage and thyme,i've got some rough chopped garlic so a,couple cloves of garlic just chopped,roughly just to kind of start the,process but obviously it's going to,blend nicely in here as well,i've got uh pepper,and i've got salt,and then i've got greener cheese i've,got a cup of gruyere cheese we're,actually going to keep half of it to put,on top and we're going to put half of it,inside of our custard,so i've got that in there and then we're,going to quickly process this,so we've got a nice consistency on all,of these ingredients,we're going to add those to a bowl i,will tell you that i tried to add my,milk and my cream to my processor when i,did a little test batch on this and it,went all over the place so this recipe,is just a hair more than the whole thing,can handle which is why i'm going to,blend them separately so i've got these,all these ingredients out of the,processor into a bowl,i'm going to add a pint of heavy cream,and i'm going to add three cups of milk,once you've got everything together this,is really,quite simple and really easy to do,take a whisk,we're going to blend all this together,should be nice and wet and nice and,loose because that bread is going to,really absorb all of this moisture over,time the recipe says you can let it sit,for 20 or 30 minutes i actually like to,do it and let it sit overnight really,does a much better job of setting up but,at a minimum you want to make sure you,get 20 or 30 minutes it should not going,into the oven,loose and spilling all over the place so,once you get a nice blend on that we're,actually just going to pour it over our,casserole you kind of want to pour it in,the center,pour it slowly,i have tested this to tell you that it,will fit into a 9x13 pan,it'll all kind of rise up a little bit,get the last of your seasonings out,now the fun part you're going to have to,get a little bit dirty we need to we,need to soak it down and make sure that,we get,all that moisture in all those slices of,bread,so we're going to want to make sure that,we press it,make sure it runs over the top,kind of press it all in so you can see,how wet it is this is again not how it's,going to go in the oven i

Hello and welcome!,I'm Viviane with foodandstyle.com,To prepare the butternut squash, cut both ends off and then peel the squash with a vegetable,hand-peeler.,Once that's done, cut the squash in half lengthwise and scoop out the seeds.,Place the squash cut-side-down and cut it lengthwise in about 1"-wide slices.,Cut each slice again so that they measure about 1 inch wide, then crosswise in 1-inch,pieces.,I really recommend you use a non-stick baking dish for the squash.,Otherwise, the pieces will absolutely stick to the bottom of the pan.,Also, make sure the pan is big enough to hold them in a single layer.,Now sprinkle the squash pieces with salt and black pepper.,Drizzle with the sherry and the olive oil.,Now toss well with your hands.,Oh my, the sherry smells so good!,It's going to add such a wonderful sweetness to our dish.,Now place the pieces in one layer again and bake the squash at 475 for 20 minutes, uncovered.,Here we are!,Now toss the cubes, making sure to turn them over.,Spread them again so they're in one layer.,The butternut squash is done!,As you see, our butternut squash pieces have got a lovely golden-brown color, so now you,can just let them cool in the pan until you're ready to use them.,Butter the mold with a little soft butter and then dust each ramequin with a little,flour.,This is a job I like to do above the sink, because it's a lot easier to clean up.,Here we go.,This featherweight and buttery brioche is the perfect bread for this dish.,It's going to make our bread pudding incredibly light and moist.,I like to cut the brioche in small cubes, about 3/4 of an inch.,This way, it makes for a better presentation and it is easier to fit them in the individual,molds.,Place the eggs in a large bowl.,Add the egg yolk, the salt, the pepper.,And whisk until well blended.,Add the milk, the heavy cream.,And whisk again until well blended.,Now add the bread cubes.,Stir until you see that the bread is nice and wet, and then let it sit for 5 minutes,so that the bread absorbs most of the liquids.,All right, the bread has absorbed most of the liquid, so now we add the cheese and the,butternut squash pieces.,Now stir until just incorporated.,Don't overdo it; otherwise, you will break both the bread and the squash pieces.,Then spoon in the prepared molds.,Look at these gorgeous bread puddings!,Make sure to cool them for 5 to 10 minutes before un-molding them.,Now that the bread puddings have cooled, you can actually touch the mold.,It is warm to the touch but not hot anymore.,Shake the bread puddings to loosen them from the side of the mold.,You'll hear them jiggling in there.,Then place a small plate on top of the mold and flip.,Lift the mold gently, and now turn the bread pudding topside-up.,Bon apetit!

today I fancied some kind of a bread,butter pudding and but there the butter,so this I baked the bottom of the,ballpark butternut squash and I let it,go cold and just peel the outside off,there's a little n bit there not nor the,flesh is in there Minnie processor with,a chunk of ginger because I absolutely,love fresh ginger two sachets of butter,nut butter buds and heaped teaspoon of,cinnamon,I want to blitz that and that's going to,be a lot of butter alternative that,whizzing okay so that's smooth enough,for me I'm going to transfer that into a,dish and let it cool so it kind of goes,a bit thicker when I'm ready to start,spreading out my bread so go to public,dish name by the way I've just tasted it,and it tastes really quite sweet and,there's no sweet in there so that's,quite interesting so okay and I put a,slice of banana in between each one and,just one more to go,this one's broken it's not bad,and then the other slice goes it like,say okay so I'm going to whisk up an egg,and about 200 mils of skim milk again,FLE Brits no no sweetener okay just,going to pour it all over like so then,I'm going to leave leave the bread to,soak up the egg and milk mix theme I'm,going to sleep after about an hour and,then I'll pop it into the oven but I'm,not my gun and bake it for about 45,minutes okay I thought this pudding,really color so I find a few fresh and,red coats I'll sprinkle them on top,they look interesting I really love the,look about so it's good in the oven and,hopefully in just over half an hour it's,been rescore malicious fresh at the oven,and it smells amazing oh my word look at,that sort of a mock bread and butter,pudding,it looks awesome beautiful crusty top,there and all moist sends an eighth I'm,gonna cut that up and serve I'm a plate,any second think of my heart custard,with it a real Sunday afternoon treat so,I've just cut it in half I just wanted,you to see the layers had fun does that,look he just imagine you did that,chocolate and banana in the side or,mango and chocolate or mango banana,there she is spread the custard I'm in,for one lovely Sunday afternoon truce,I'm gonna eat that now watching end of,the film I'm watching The Lady Vanishes,the old black-and-white version,there's a proper Sunday afternoon beat,upon the sofa with an old movie and a,really screaming PUD

i'm going to get started on the veggies,for my bread pudding it's a sweet and,savory bread pudding,and,i'm going to use two things that i like,a lot butternut squash and parsnips so,what i want to do is just add the,butternut squash right in there now,during thanksgiving time you can find,peeled and cut butternut squash and i,think it's the best thing in the whole,world so i don't have to worry about it,and again it makes making thanksgiving,meal a lot easier,it's a little salt little pepper,and i'd like to get a head start on it,because it needs about five minutes or,so to sort of start to soften because,it's not going to cook all the way,through in the oven if you don't start,cooking it a little bit ahead of time,and,to the butternut squash i'm gonna add,some parsnips and so they're kind of,like potatoes in the starch department,but they look and sort of have the same,taste as carrots i really like them,we'll add the parsnips,everything should be about the same size,so it all cooks at the same time,so i take all the parsnips and they,smell really good,sweet,and,a little salt and a little more pepper,just to flavor them,so we'll cook these down for about five,minutes so my butternut squash and,parsnip have been cooking for five,minutes so they're nice and soft just,turn off the heat and let it cool well i,start on my challah bread,for this bread pudding it's going to be,so good and i love using chala because,it's so rich and buttery so it really,adds a lot of flavor and texture and,that yumminess to the bread pudding,and i know someone in my family,my brother igor who's gonna be very,excited about this i don't make it every,year so i kind of switch it up you know,make different things every year but i,know he loves this so he's gonna be very,excited about it,i'm just going to cut it in about one,inch cubes,and if you can't find hollow bread you,can always use brioche or sourdough,bread or even just white sliced white,bread no biggie,all right so time for the custard,we need eight eggs to make this nice and,rich,all right last egg,alrighty so now i'm just gonna,break up my egg yolks give it a quick,little whisk,so now time for a little cream,grab my measuring cup we're going to,need three cups of heavy cream now you,can't cut quarters with this it's got to,be the rich cream,it just gives the bread pudding a whole,different flavor,three cups of heavy cream,and it's thanksgiving so you gotta go,all out you just do,a little bit of brandy about three,quarters of a cup of brandy,and i want each dish to kind of stand,out on its own,and the brandy makes it special and,makes it very festive and very,holiday-like,and a quarter cup,of vegetable oil,and you need a little vegetable oil just,to kind of keep everything,um nice and moist,so we're done with that now,just give it a quick little mix,and,we're gonna add some brown sugar,three tablespoons of brown sugar,you want that nice sweetness of the,brown sugar right in there two,and,three,we're done with that,get rid of those,give it a quick little whisk,and,now to really make it holiday flavored,and wonderful aroma to everything some,ground cinnamon two tablespoons of,ground cinnamon and i love cinnamon it's,very thanksgiving-ish,and i know it sounds like a lot but,really and truly it goes so well with,the butternut squash and the parsnip,it's super yummy,so we're just gonna give this a quick,little mix i love the smell of cinnamon,just mix that all together,and a little bit of thyme just a few,leaves of time it's really just for a,little bit of color and some fresh,flavor and it's nice and hearty so i,think it's very much part of the,thanksgiving flavors,it smells nice and lemony and a little,bit goes a long way with the thyme so,just need a little bit all right,so now,take the bread,and just pour the custard,right over the bread,nice get it all in there,there we go,and then i just kind of toss it all,together,grab the spoons and the bread slowly,absorbs the custard,and you want to be really gentle because,i want to have it nice and chunky i mean,that's what to me bread pudding is all,about the nice big chunks of bread,and,i want to add,the parsnip and the butternut squash,that's cooled,and again give it a quick little toss,just to make sure that all the veggies,get mixed into the custard,oh my goodness they're all gonna love,this it's gonna be so good,so now,i grab my baking dish and i've already,buttered the dish,and put that in there and pour the whole,mixture into the baking pan there we go,and i put the baking pan on top of a,baking sheet,that way if anything drips in the oven,while it's baking,this catches it and my oven is nice and,clean,spread it out we're going to bake this,at 400 degrees for 40 to 45 minutes,until the top is nice and golden brown

hey what's up everyone and welcome back,to my channel hopefully you've been,enjoying some of the new content,recently but it's good to be back in my,home base kitchen to share with you a,beautiful butternut squash gratin recipe,that's topped with a crunchy buttery,hazelnut sage topping that just sets,this thing off right all right let me,stop talking and start up the recipe,first things first you want to prepare,the butternut squash basically you want,to peel the outermost layer with a,simple potato peeler then you are going,to slice it in half lengthwise very,carefully it can be a little tricky,especially if you have a dull knife so,keep that in mind then you're gonna,scoop out the pulp and the seeds and,then you're gonna slice the squash,fairly thin all the way across,once all the squash is sliced up you're,gonna add a splash of cream and milk to,your baking container sprinkle in a,little bit of salt some cracked black,pepper and nutmeg to it as well then,you're gonna begin to layer the squash,basically however we'd like just make,sure to add another layer of cream milk,and seasoning every layer you put down,when the butternut-squash Croatan is,almost assembled and the final layer of,cream milk and seasoning goes down,you're gonna top it with a generous,helping of Grana Padano cheese and bake,this at 400 degrees Fahrenheit for 25 to,30 minutes on the top rack just look for,the golden-brown bubbly action before,you pull it out,while that's baking away in oven I'm,going to make a crispy topping of course,to finish the glue tan by roughly dicing,up some toasted bread then doing the,same with a handful of roasted hazelnuts,then I'm going to add a few spoons of,butter to a hot pan and basically just,toast them together for a few minutes,just so they get all nice and crispy and,crunchy then I'm gonna add a few pieces,of torn sage in at the end and this will,be ready to top the grate an as soon as,it comes out of the oven,all right so once the gratin is,golden-brown bubbling and uber tender,you gonna pull it out of the oven and of,course top it with the crispy hazelnut,topping and this butternut squash queer,tan is ready to be devoured all right,what's up guys okay so the butternut,squash rattan looks beautiful it's,finished,and I'm very pleased with how it turned,out I love the the crispy texture on the,top with the bread crumbs and the,toasted hazelnuts the fresh sage is a,nice little touch as well and adds kind,of just just enough green to kind of you,know chop up the overly brown nests of,this dish so anyways I'm gonna dive into,this and let you guys know how I did,it's probably lava hot the first thing,you get is like that toasted cheese,flavor and then after that it's like,sage a little bit of nutmeg and that,sweet butternut squash like super tender,mmm,super crispy bread crumbs obviously,really what's kind of pronounced as well,as the black pepper especially if you do,big large cracked chunks,he almost could do like a savory bread,pudding in Reverse with this if you did,larger chunks of bread you can maybe put,a little bit of honey in there like it'd,still be savory maybe like an addition,of some caramelized onions some other,flavors could be really good but such a,cool dish I love kind of playing with,the idea of a groat I'm definitely like,playing with butternut squash during,this time of year but hopefully you guys,enjoyed the video if you did make sure,you give it a huge thumbs up comment,down below for future video requests,things you want to see on my channel,subscribe to my channel if you guys like,what I'm doing here check out the,description box for equipment list,ingredient lists and lots of other info,regarding my channel and my other social,platforms are all down there too so,check that out as well and I will see,you guys next time with another video,later guys

so we're making we're making eggnog,bread pudding and before you go it's,gonna be gross it's gonna be it's gonna,be fabulous oh no people are gonna lose,weight so for jus just wondering do you,guys is eggnog like the drink for,Christmas I mean everybody just gets,lost on eggnog I know I know booze in it,unless you put rum oh but it came no no,it's just like a it's like a sweet milk,kind of thing got it okay so here's what,I do to make life easy I start with a,loaf of raisin bread because some people,like and me I like raisins in this I,love it,i buy the loaf already done so I don't,have to do that I don't really like the,ends and then it's just a matter of,simply doing this with the cutting it up,ready serrated knife thank you which you,want to use because serrated knife is,perfect for stuff like this you know,maybe we should go over those three,knives that everybody needs next and I,just did say okay never mind don't worry,about that right now but see all you're,doing is cutting these guys it's are,just little biteable cubes right I think,it's gonna take about a half an hour in,the oven so we'll just get in the oven,right now we're gonna be fine and what's,the official name of this recipe this is,we're calling this eggnog bread pudding,it's sort of like the bread pudding,recipes on my website except we're,making it with eggnog and not milk not a,combo of milk and half-and-half have we,made bread pudding on the show before no,no we have not so look it you've got the,you've got I've got three eggs in here,just beat these guys hey just in case,anybody was wondering you can go to,facebook.com slash Sam the cooking guy,and interact with the whole crew one of,the reasons that's what we do and we're,also gonna be giving away two more we,all gift baskets now though,you better be paying attention because,last night we basically just gave it to,the people who asked us on Facebook so,get those fingers ready because that,might be the same thing happening to,know we have to come up something else,okay so three cups of eggnog,three eggs I'm gonna use about a half a,cup of sugar that I'm gonna totally just,guest,it does seem like a lot every time you,do that I know it looks crazy doesn't it,but I knew how much was in this thing,approximately that's that I'm gonna mix,this this goes together pretty fast,okay this now the bread will go in,mm-hmm bread goes in the other thing,that I'd like to add is I like to add,some pecans pecans are very very,Christmastime so these are just a bunch,of pecan pieces and then there's always,the question of whether you put,chocolate in it or not and I'm not a,huge chocolate fan but I know people,like it so I throw some semi-sweet in,there and now this just gets mixed you,want all of the bread to get covered in,this egg eggnog mixture Wow I can tell,you this it smells great where do you,see where how we're gonna finish it that,said have any smell coming from the,eggnog no well that's the eggnog but I,think it's nutmeg I don't think it's oh,god yeah cinnamon exactly and nutmeg and,cinnamon are similar right mmm no,they're you know what they're used,together very often okay so this is a,buttered cat-eyed buttered 9 by 11,whatever you call these things I,probably could have used this smaller,one but I think it's gonna be okay,thank God Lynne doesn't have to take a,picture of that know if that looks like,ass that's terrible wasn't this a snotty,leave okay so here's this I have a 350,oven I can't remember what the recipe is,so I'm gonna check when I sit down or,maybe somebody can tell me really good,yes look at that and look that's the,there's the consistency you want right,it's kind of soft inside let me think of,what I want to serve this on,no I'll use one of these guys so check,out what we're gonna do I'm gonna take,some of this just enough chocolate - oh,look oh my god that's how it's supposed,to be so pudding is a bit of a misnomer,because pudding is sort of a like a,super creamy soft thing and it's not,exactly that because because it's got,the bread in it it's kind of like set up,a little bit,but I'm going to only add two things to,it let me do this right here by you maxi,oh you're gonna add to it,these I'm gonna add I'm gonna add a,little caramel to it yeah because I,think that's gonna make it extra really,luscious and a little bit of powdered,sugar,there he goes yep he may have to have,those amputated now but he won't need,those fingers tomorrow when the where,you go look at that if this doesn't say,Christmas cuz it certainly doesn't say,Hanukkah I'll tell you that much holy,smokes and it's gonna be hot too man,I do this for all of us Wow holy,okay please please will you make this oh,my god I think this is better than,regular bread pudding that little bit of,extra whatever the hell is an eggnog and,I don't know what the nog part is I know,there's eggs in there milk but mmhmm,mmhmm what you could add booze to it if,you wanted you know you could take a,little a little thimble of urban and,dr
