came from,tahiti,the mauritius islands and samoa,they,paddled out here on their canoes in 400,a.d and they brought,bananas with them among other things,the bananas flourished in hawaii they,tend to flourish in tropical climates,hawaii now has a whole bunch of,different varieties of bananas and this,one is one of my favorites it's the,apple banana which is kind of tangy and,soft they've taken these and they've,made banana bread with them lately and,the people on maui make banana bread,from the bananas that grow wild and,there are all kinds of different,varieties of bananas that grow wild here,and they put it into the banana breads,and it gives the banana breads here a,flavor that you don't get anywhere else,in the world in fact maui is known to,have some of the best banana bread in,the entire world,tourists come here and they go on banana,bread hunts and part of the reason that,banana bread is so famous here it's that,they come here they taste it they,associate the flavor of the banana bread,with the beauty of maui the island the,mountains the water and the road to hana,they love to travel the road to hana and,so they come back and every time they,think of banana bread they think of maui,well,there are certain banana breads that are,considered to be the best on the island,and we are going in this video to show,you,which banana breads,are,considered the best and because this is grandma's coffee,house grandma's coffee house is known,for having some of the best breakfasts,and cula and really really good banana,bread so,we're on our banana bread quest and we,decided let's come here,in up country and have some really great,banana bread at grandma's house,country maui because it's part of,the wilder area of the island it's where,the branches are the cowboys that tend,to hang here there's a lot of,fruit and vegetable farms and stuff like,that,and here,at grandma's or his grandmother's coffee,house they basically have,they're known for a lot of different,things but one of the things they're,really known for is their banana bread,they also are known for their banana,chocolate chip muffins so we got one of,each we're going to try them,have ourselves a nice little breakfast,here let's see what it tastes like,you gotta love good hawaiian bananas,this is so good it does,oh it smells great,that is soft it's moist it's sweet,perfect for coffee,the girl at the counter said they're,also famous for their chocolate chip,banana muffins it has a streusel topping,it's got chocolate chips inside let's,give it a taste,that is really decadent it's very sweet,much sweeter than the bread was,it's much moister than the bread wash,but it's really good the structural,topping adds a lot too,really tasty,banana bread mm-hmm ever had,also i will admit their coffee is,excellent as is the latte,they serve more than banana bread here,they have standard breakfast you can get,a local moco here you can get any kind,of breakfast you want but we've heard,about the banana bread so we had to come,for the banana bread,and it's definitely worth the trip just,for the banana bread,after our banana bread odyssey,i've come to some conclusions it's not,the same conclusions as young young,disagrees with me on some of this,my second favorite is actually young's,favorite,my second favorite was grandmas grandmas,up in haiku grandma's coffee house their,banana bread was darker it was rich it,was moist it it had,just this texture it felt like a really,good hearty banana bread it was perfect,and filling on a cold haiku morning and,i just i love that i would say that is,my second favorite that was your,favorite right that's my favorite very,pens yes and lots of banana in it tons,of bananas,it smells really good yeah smells like,what you want a banana bread to smell,like yeah and and that was just just,amazing i would go back to haiku for,that bread that was good,we are halfway to hana at,this little stand called,halfway to hana they are aloha and welcome to this very maui,edition of what's cooking with beth,i've done this one before but i felt,like i needed to do a redo of hawaiian,banana bread,and i've actually changed up the recipe,a little bit typically i'm making it,with coconut oil and i'm actually gonna,make it with butter today,this is how warm it kind of is just at,room temperature right now so this i set,out yesterday morning just to get soft,this is naturally how the butter melted,down for me at room temperature so i'm,ready to go,this particular recipe called for a half,a cup of butter one banana in this,entire recipe i doubled it i'm like any,recipe for banana bread that's calling,for one banana is just not going to be,enough,and if oh if it only has one stick of,butter it's not going to be enough for,me so we're doubling the recipe,we're starting with two sticks of butter,and i'm gonna add two cups,of organic raw,sugar,i've said it before this is the kind of,raw sugar they used to grow on maui,the sugar cane industry is gone,but i was still able to find this at,costco,so,a little story about me,i like to bring a lot of fun stuff when,i travel,so,my suitcase can tend to be a little,overweight and heavy luckily,i had a lot of baking things at my,friend's house already from my last,visit,and i didn't even remember realizing but,it was funny but she texted me to remind,me,that i had a bag of toiletries and,she specifically listed out the pantry,items that i had here,sugar flour,chocolate chips nuts,i mean it was a lot and i'm like oh my,word it sounds like i've moved in,already but oh it's just that costco and,i couldn't stand not to buy,this organic sugar in the raw it's a six,pound bag,i mean i could leave it here or i could,take it with me which is what i really,want to do but again we're overweight in,my suitcase so this is getting a little,out of hand but,it is what it is i mean,i only brought one suitcase this time so,i'm just going to have to go buy a,second one so i can pack all of my,baked goods that i want to take back to,the mainland with me,so i've got two cups of raw sugar two,sticks of butter i'm just gonna kind of,get mixed together,and then i'm gonna put in four eggs,so,this is not just a regular hawaiian,bread,or a banana bread it's a hawaiian banana,bread,made by request so,we were greeted,with this beautiful bowl of,local fruits when we got here so we have,dragon fruit papaya,some star fruit,there's some fresh guavas in here,tangerines and my favorite,little apple bananas they're just so,full of flavor,this is from ono organic so these got,delivered for us as a little care,package,i was very blessed by that,but now i have a lot of these bananas,that i'm ready to bake with,we also got a pineapple,so i have a friend traveling with me,this time that's never been to hawaii,and she would like to have hawaiian,banana bread,and i figure,what better place to make hawaiian,banana bread than hawaii,so here we are we're going to get it,together,whip these eggs in to sugar in the,butter this particular recipe does not,call for vanilla extract,but i like it so,i always like to,add a little bit of extra flavor with,the vanilla extract,if you have like a coconut extract or a,macadamia extract those would also be,delicious in the bread just to give it a,little bit of extra flavor,the one thing that we're going to be,doing with this is adding,fresh chopped,pineapple and shaved coconut so in the,total for this we're going to have,bananas pineapple and coconut and of,course i had to go hyper local i,couldn't find the whole pineapples i,typically like to cut my own but i,had to get the maui gold,so since i couldn't find the whole maui,gold i went ahead and spot the,pre-chopped up kind for myself,but i'm telling you the maui gold,pineapple,versus any other kind of pineapple,it's totally different,so i'm going to go ahead it says two,cups of the pineapple chopped,got a lot of juice going in it did not,want me to drain the juice,which is also different from what i,typically do,so i'm gonna have two full cups of the,maui pineapple,the maui gold,and i'm just gonna rough chop it if i,had um,my food processor here which i have been,known to travel with,but since i was traveling um,with checked bags this time instead of,driving i did not bring the food,processor,um,i'm just gonna hand chop it instead of,food processing but,i am someone who travels with a lot of,cooking tools because i like to cook,right wherever i am,so that's why we call this what's,cooking with beth we don't know where i,am what i'm doing,but i could be anywhere,cooking basically anything,today i just so happen to be in maui,making hawaiian banana bread,with a maui gold pineapple,and some local apple bananas,which i am crazy excited about,so i get this pineapple rough chopped,like i said we're not gonna drain the,juice this time,typically um on the other one i will do,like a crushed pineapple,and i put it through a strainer and kind,of pushed the juice out because i don'

mahalo no,hey everyone it's anna and i'm back with,another vintage cookbook this time i'm,reviewing,the del monte kitchen's cookbook this,book was requested a long time ago in,the comments i'm sorry i don't remember,who requested it but if you're still,watching here we are on that note if,there are books that you see back here,in my collection that you would like me,to cover please let me know in the,comments down below i would be happy to,do that here i'll give you a view if you,can see any of these please let me know,if you want me to cover them this book,was a gift from my dear friend lindsay,she is my neighbor in ohio she is a,great friend and she loves cooking and,baking as much as i do she's kind of an,expert she's my go-to gal when i have,questions about just about anything,baking related the first thing i noticed,about this cookbook it's like a binder,and i love a binder when it's in a,cookbook it just lends this like air of,importance to it like this this is,serious business this is where all my,secret recipes are it has these tabs,right here so each tab is a section but,then when you open up the tab if you,like go to appetizers and beverages for,example it's got your kind of like table,of contents here but there's a little,folder so each of these tabs is a folder,and you can tuck in your own clippings,recipes notes right into them i just,love that del monte kitchens it's not a,company i really think of as much as say,like pillsbury or betty crocker or,something like that in comparison to say,the betty crocker picture cookbook even,the better homes and gardens new,cookbook this feels a little bit like,less comprehensive i think it might be,because the product range offered by del,monte it's not quite as wide as what is,offered by betty crocker or pillsbury,when you think del monte nowadays at,least i tend to think like canned goods,so canned fruits and vegetables when,this book came out i didn't actually say,when it came out so this book came out,in 1972 and at that time they did have a,little bit of a wider selection of,products i think a lot of canned goods,they also had some some jarred items,fried fruits they may still have dried,fruits i just don't really notice them,in the stores another thing that came up,in this book a lot of the recipes,contain del monte tuna,so del monte tuna i you know i'm not,finding that in the stores nowadays and,i tried to do a little bit of research,on when was that product available how,did that work it's just like a web of,confusion so corporations in general to,me a web of confusion when you look at,their past because like they buy each,other up and they absorb sections of,each company and things like that and,that's kind of what happened here i,think at some point starkist tuna was,involved in del monte maybe del monte,tuna became starkist tuna i don't know i,was just really surprised to see that,there was del monte tuna at one time,getting into some of the recipes in here,this whole little area here these are,all recipes that involve dried prunes,honey lemon prunes mandarin prunes,spiced prunes apricot saucers yeah,that's got prunes in it too stuffed,prunes hawaiian prunes oriental prunes,clearly del monte offered prunes at one,time i like prunes i like those little,like individually wrapped prunes just to,sort of like have as a snack,i'm a senior citizen i guess thinking,about going to someone's house maybe,they have a few snacks out before a meal,or something and there's just a big tray,of stuffed prunes i'd still eat them,heck maybe i'll have a party with dried,prunes my friends have that to look,forward to sauces sauces serve so many,foods sympathetically that a good cook,has several up her culinary sleeve her,come on he has some up his sleeve too,and the good cooks in del monte kitchens,are no exceptions to this creative rule,this is such a weird sentence sometimes,i just like to highlight weird sentences,in these books you can see like nice,illustrations we have this whole sort of,like red orange theme going on a lot of,these and we do have some photographs,too i mean look at that beautiful,souffle,i think that's like a meatloaf like a,frosted oh i think this is like a,meatloaf of beef wellington because,there's puff pastry on the outside we,have another weird sentence in the,salads and dressing section almost by,definition salads are undefinable i want,to talk to the person who wrote the copy,for this cookbook it's no wonder that so,many of us are salad enthusiasts i,really enjoyed the title of this recipe,salad by choice place pineapple bacon,celery and olives in individual lettuce,cups on a large serving platter keep,lettuce wedges on the same platter so,guests can select their own salad treats,it's like a build your own salad,hot lunar salad,salads hot why not oh heck don't want,tea tuna crunchy celery and peanuts and,a topping of cheese and chips baked,together to make a quick luncheon or,supper salad main dish oh okay yeah i've,seen stuff like this

as the latest arrival on these shores,i'm dying to add to the melting pot,and sheldon tells me i'll get a golden,opportunity i've set up this feast that,we're gonna feed the locals here and,you're gonna cook for them wow,so a,a big,feast at the end of the week for these,families yeah and uh you bring a little,bit of your history to it sounds,fascinating thank you,i'm about to start this incredible,journey but if this is what the,beginning is like,can you imagine what kind of treat i'm,in for by the time we get to the end of,the week if i'm gonna add a pinch of my,scottish heritage to this hawaiian,banquet i've got to come up with,something better than haggis on a,pineapple ring,i've definitely got my work cut out,so i'm hitting the island's coast road,for inspiration but i've got to be,careful this road hits back one of the,most dangerous drives anywhere in the,world,really tight,windy roads,add the rain to that and you're in hot,water,apparently in the sunshine the views are,breathtaking but maui is one of the,rainiest places on earth so i think i'll,be doing more hydroplaning than,sightseeing this week,flooding everywhere and look a bit some,trees floating down the road,the roads are,so slippy,all this heavy rain makes me think of,two words british summertime i need a,pit stop,now they say that the,huli huli chicken shack is one of the,most sought-after sort of,roadside,dishes to pick up on route,so,this is it,and i'm dying,to see what all fuss is about,with its source created by a portuguese,american local using his mother's recipe,holy holy chicken is a typically,cross-cultural dish the main man here is,a local legend known as uncle russell,they look incredible now everybody's,talking about this chicken,what is so special about it well you,know the huli is a hawaiian word for,turn watch this,did you see that i i missed it that's,our holy that's a huli wait you do it,again what do you get,yeah huli holy chicken is a barbecue,chicken hawaiian style the color there,already is it brined did you marinate it,what we do we marinate it with a,hawaiian salt and uh we let it sit,overnight and then we put our secret,sauce on there,around the smell yes but there's a,secret combination there you're not,going to share with me are you no of,course not,plenty hell that smells that's intense,this is beautiful nice i love the way,you're caramelizing that,i'll just say i mean the power of this,grill is extraordinary you look like a,natural here you don't want to stay and,help me cook the rest of this chicken,i'd love to but i've got a long journey,what is that window cleaner,no we put our sauce in there and uh we,is it how cold is that no but it should,be,and these birds are ready to come off,i really appreciate the free labor i,don't mind helping but i got a busy day,ahead of me,what's the secret behind this chicken,the secret is to go slow go slow just,take your time,i know you're in a rush guardian but you,just need to slow down because in hawaii,we go on hawaiian time you want to try,some of my chicken i'd love to yes,please,keep up the good work thank you and when,you're hiring yeah,i'll be back okay,wow,talk about dinner with a view,you don't need a knife and fork for this,the color of those wings,delicious,i've seen chefs that have spent thousand,dollars on the most expensive,rotisseries that have got nowhere near,the flavor in the chicken that i just,experienced tasting the tradewinds come,to life in this portuguese inspired,hawaiian dish has really got me thinking,about how i might put my spin on the,feast at the end of the week,you

hi everyone this is sandy and today I'm,making banana nut bread from my favorite,recipe and it's found in the Junior,League cookbook for caught Savannah,style and here it is let me to show you,real quick okay so this is the banana,nut bread recipe that I I love this one,I've tried others but not this one works,out really good for me okay to start off,the banana nut bread that I'm gonna make,calls for two cups of flour one teaspoon,of soda and a fourth to a half a,teaspoon of salt now I'm using the,gluten free baking flour it's one one by,Red Mill I really like this one it's,already mixed up everything in it and,it's an easy substitution in any recipe,and so so you have it in foam right now,and you can see my my salt soda and,flour that's it,mix that together just set that aside,and get that other ready,be right back okay next we're going to,cream our butter and sugar and we need,let's see we need one cup of sugar which,I have already measured out over there,and we need 1/2 a cup of butter which is,a stick of butter I usually you know,leave it out soften it up you can throw,it in microwave if you want to,it gave added the sugar to the,okay so I creamed the butter and sugar,and next I'm going to add in two eggs,and vanilla so a teaspoon of vanilla,okay I've added the 2x and the 1,teaspoon of vanilla and I'm gonna,in pure vanilla extract and stay,ok when I make this recipe I'll either,use fresh ripe bananas or sometimes when,I have bananas that have gone bad I go,ahead and peel them and stick them in my,freezer for the next time that I make,banana bread so this time we're going to,use the fresh ripe bananas okay this,recipe calls for 3 ripe bananas smashed,and so I put them in this bowl and I,just smash them up using my fork so,maybe the lighting has been so you know,it's pretty easy ok so that's the 3,bananas mashed up in now you can see,chunks still in there it doesn't have to,be you know smooth or anything the,blender is going to do that when you mix,it in with the other batter next we're,adding our 3 ripe bananas that we've,mashed up and now we're going to just,fold in the dry ingredients so I put in,a little bit there,let mix that up and then keep adding it,until it's all been,we keep this from Arroyo setting just,now that the flower is it mixtures all,in with the bananas here is we're going,to put in an Cup on nuts and I'm using,the chopped walnuts it's a little bit,more expensive than regular walnuts,because they already chopped it for you,but it saves me a lot of time now this,is optional this recipe is really good,even if you don't have nuts in it,okay after you got all the ingredients,stirred together you're going to pour it,into a greased loaf pan and you know,some people agrees and then they put the,flour in it sift it around,I used to use Pam baking spray but since,I've gone good gluten free I can't do,that so right now I just have coconut,oil sitting inside there and you know,take a paper towel and rub it around and,then you pour your batter in on top of,it now this is going to cook in the oven,at 350 degrees and it's gonna be takes,about 55 minutes I'd start checking on,it at 50 minutes because if for each,time I bake it it's a little different,so it also depends on your outside,temperatures and you know where you're,at in the world huh what's your altitude,all right everybody how you ended up and,made two loaves and I'm gonna stick them,I have them in the oven ovens 350,degrees and they're gonna bake here for,probably about 55 minutes here is the,finished product,I actually made two of them if you enjoy,this bananas bread just as much as I do,thank you so much for watching,you
